NEW YORK STRIP STEAK WITH GARLIC BUTTER
This New York strip steak is seared steak that's cooked to golden brown, then topped with a garlic and herb butter. An easy dinner recipe that tastes like it came from a steakhouse, but can be made in the comfort of your own home.

- Let the steaks sit at room temperature for 20 minutes.
- Preheat the oven to 450 degrees F. Season the steaks on both sides with salt and pepper to taste.
- Heat a heavy pan such as a cast iron skillet over high heat.
- Add the oil to the pan. Place the strip steaks in the pan in a single layer.
- Cook for 3-4 minutes per side or until deep golden brown.
- Add the butter to the pan. After the butter has melted, add the garlic cloves and thyme sprigs to the pan. Stir to combine.
- Spoon the butter mixture over the steaks. Insert a probe thermometer into the thickest part of one of the steaks.
- Place the meat in the oven and bake for 5-7 minutes or until the thermometer registers 140 degrees F for a medium steak.
- Remove the pan from the oven. Let the steak rest for 5 minutes. Spoon the pan drippings over the steak, then slice and serve immediately.

- Place the potatoes, garlic and 1 teaspoon salt in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until potatoes are tender., Meanwhile, in a small saucepan, heat butter and milk until butter is melted. Drain potato mixture; add the butter mixture, sour cream, dried rosemary, pepper and remaining salt. Beat until mashed. Transfer to a large bowl. Garnish with fresh rosemary.

- Remove steaks from the fridge at least 30 minutes before cooking.
- Rinse potatoes and place in a bowl. Cover and microwave* for 5-7 minutes or until potatoes are tender (If you don't have a microwave, potatoes can be boiled in salted water until tender).
- While potatoes are cooking, dab steaks dry with a paper towel and generously season with steak spice.
- Preheat 1 tablespoon oil in a large skillet over medium high heat until it is very hot.
- Add steaks and cook 4 minutes without disturbing. Flip steak over and cook an additional 4-7 minutes or until steaks reach desired doneness (below).
- Remove from the skillet and place on a plate, loosely tented with foil.
- While steaks are resting, season potatoes with rosemary, garlic, salt, & pepper.
- Add oil, remaining butter, and potatoes to the pan. Allow potatoes to crisp on one side without moving, for about 4-5 minutes. Once crisp, remove potatoes and add to the plate with the steak.

- Prepare the beef: Dry the steaks with a paper towel and let them sit in room temperature for 20 minutes before crackling a generous amount of both salt and pepper on all sides. Rub the seasonings into the meat.
- Add corn oil or other high temperature oil to a cast iron skillet on high heat. Let this be really hot before the next step.
- Cook the steaks for about 6-8 minutes for medium-rare. Flip them every minute to get an even cook. The last 3 minutes, add in the butter, garlic and rosemary. If really thick steaks, you should also flip to the sides.
- Usin a spoon, baste (pour the butter over) the beef with the butter oil and rub the garlic on top of the steaks. Let them rest for 10 minutes before serving.

- Combine Italian seasoning and next 4 ingredients in a small bowl. Stir in remaining 1 tsp. lemon rind. Rub mixture over steaks. Cover and chill 1 hour.
- Grill steaks, covered with grill lid, over medium-high heat (350° to 400°) 3 to 4 minutes on each side or to desired degree of doneness. Serve with butter.
