Fresh homemade baked strawberries muffins are the best. Not only it is tasty, but also healthier.

1/2 cup Butter ((1 stick) melted or soften)
3/4 cup Sugar
2 Eggs
2 teaspoons Baking powder
1 teaspoon Vanilla extract
1/2 teaspoon Salt
2 cups All purpose flour
1/2 cup and 2 tablespoons Milk
2 cups Fresh strawberries chopped
1/4 cup Butter (half stick melted)
1/3 cup Brown sugar
1/3 cup White sugar
1 teaspoon Cinnamon
1/2 cup All purpose flour

Steps:

  • Melt butter ( I put in microwave 10-20 second) and put in mixing bowl
  • Add sugar, eggs, vanilla, baking powder, salt and milk then mix it well. Add flour little by little and mix it
  • Add Strawberries and mix it
  • In a small mixing bowl, combine crumb for topping ingredients butter 1/2 cup melted, brown sugar 1/3 cup, white sugar 1/3 cup, cinnamon 1 teaspoon and flour 1/2 cup
  • Use a fork to mix it well
  • pour the batter into muffin tins
  • Sprinkle the crumb over the top of the muffin batter
  • Bake them for 16-18 minutes at 375 F
  • Let it cool off little bit

2 1/4 cups all-purpose flour
2/3 cup white chocolate chips
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 (12 ounce) package frozen strawberries, thawed
2/3 cup sugar
1 large egg, at room temperature
1/2 cup yogurt (regular, low-fat, or nonfat)
1 teaspoon grated lemon, zest of
1 teaspoon vanilla extract

Steps:

  • Add the flour, white chocolate chips, baking soda, baking powder, and salt to a mixing bowl; whisk to combine; set aside.
  • Add the strawberries with their juice, and the sugar to a food processor or electric blender.
  • Process for 30 seconds, until the mixture is smooth.
  • Scrape down the sides of the bowl, then add in the egg, yogurt, lemon zest, and vanilla.
  • Pulse the blender/food processor for about 5 times or until the mixture is blended and uniform.
  • Pour the strawberry mixture over the flour mixture.
  • Stir with a wooden spoon just until the dry ingredients are incorporated (do not overmix).
  • Pour mixture into muffin cups (that have been sprayed with nonstick cooking spray) until three-quarters full.
  • Bake in a 400° oven for 22 minutes OR until the tops are browned and slightly rounded and pick comes out with a crumb or two attached.
  • Place the pan on a wire rack to cool for 10 minutes. Remove muffins from pan and cool for 5 more minutes or wire rack.
  • Cool completely before storing in an airtight container or freezing.

1 cup frozen strawberries, roughly chopped
2 tablespoons all-purpose flour
2 cups all-purpose flour
1 cup white sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
¼ teaspoon salt
⅔ cup buttermilk
½ cup vegetable oil
1 large egg
2 ½ tablespoons plain yogurt
1 teaspoon vanilla extract
¾ cup chocolate chips

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease or line a 12-cup muffin tin with paper liners.
  • Mix strawberries and 2 tablespoons flour together in a bowl and set aside.
  • Combine 2 cups flour, sugar, baking powder, cinnamon, and salt in a separate bowl.
  • Combine buttermilk, oil, egg, yogurt, and vanilla extract in a large bowl. Pour in dry ingredients and mix until just incorporated. Fold in strawberries and chocolate chips.
  • Spoon batter into the prepared muffin cups, filling each 2/3 to 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 20 minutes.

2/3 cup vegetable oil
1 1/3 cups sugar
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup white chocolate chips
2 cups strawberries
5 tablespoons melted butter
4 tablespoons white sugar
3 tablespoons brown sugar
2/3 cup flour

Steps:

  • Heat oven to 425°F.
  • Line muffin cups or spray your pans.
  • Slightly smash strawberries or chop lightly if food processor.
  • Mix in sugar, oil and eggs until mixed.
  • Mix in flour, baking soda, salt.
  • Stir in strawberries and white chocolate chips.
  • Spoon batter into muffin cups.
  • In side bowl combine streusel topping ingredients. May need to add more flour till it becomes crumbly around the size of a pea.
  • Top with streusel topping, about a tsp each.
  • Bake 14 to 17 minutes or until light golden brown or toothpick poked in center comes out clean.
  • Makes around 2 1/2 dozen muffins. They freeze great! I make this batch and then individually wrap them in foil so I can pop them in the toaster oven in the morning. Or you can microwave for 20 seconds.

100g unsalted butter, softened
65g caster sugar
65g light brown sugar
2 large eggs, room temperature
125g Greek yogurt
1 tsp vanilla paste
5 tbsp milk
250g self-raising flour
1 tsp baking powder
200g raspberries (fresh or frozen)
75g white chocolate chips

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line a 12-hole muffin tin with paper cases.
  • Beat the butter and sugar together for 5 mins until pale and fluffy. Add the eggs gradually and beat in until combined. Stir in the yogurt, vanilla and milk. Fold in the flour, baking powder and a pinch of fine salt until you have a smooth batter. Finally, fold in 150g raspberries and white chocolate chips and fill the muffin cases three-quarters full.
  • Push 2 raspberries into the top of each muffin so they're sticking out slightly. Bake for 8 mins, then reduce the oven to 180C/160C fan/gas 4 and bake for 20-25 mins more until risen and golden, and a cocktail stick inserted into the centre comes out clean.
