STRAWBERRY WEDDING BELL COOKIES
To ring in a joyous occasion like a bridal shower or wedding, I'm often asked to make these festive cookies. You can use different flavors of jam to suit your tastes. --Laurie Messer, Bonifay, Florida

Steps:
- In a large mixing bowl, cream butter, cream cheese and sugar until light and fluffy. Beat in vanilla. Combine flour and salt; gradually add to the creamed mixture. Divide dough into fourths. Cover and refrigerate for 2 hours or until easy to handle.
- On a lightly floured surface, roll out each piece of dough to 1/8-in. thickness. Cut with floured 2-in. round cookie cutters. Place 1 in. apart on ungreased baking sheets. Spoon 1/4 teaspoon jam in the center and spread to within 1/4 in. of edge.
- Shape into a bell by folding edges of dough to meet over filling. Bake at 375 degrees F for 8-10 minutes or until lightly browned. Remove to wire racks to cool. Dust with confectioners' sugar.

Shape each into a disk; cover. Refrigerate until firm enough to roll, about 2 hours., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/8-in. thickness. Cut with a floured 2-1/2-in. bell-shaped cookie cutter. Place 1 in. apart on greased baking sheets. Bake until edges begin to brown, 12-15 minutes. Remove from pans to wire racks to cool completely., In a microwave, melt chips and shortening; stir until smooth. If desired, tint with food coloring. Spread over cookies. - Preheat oven to 375°. In a large bowl, cream butter and confectioners' sugar until blended. Beat in egg and vanilla. In another bowl, whisk flour, gelatin, baking soda and cream of tartar; gradually beat into creamed mixture. , Divide dough into four portions. Shape each into a disk; wrap in plastic. Refrigerate 30 minutes or until firm enough to roll., Preheat oven to 375°. For filling, in a small bowl, beat jelly and confectioners' sugar. On a lightly floured surface, roll one portion of dough to 1/8-in. thickness. Cut with a floured 2-in. round cookie cutter. Place about 1/2 teaspoon filling in center of half of the cookies. Cover with remaining cookies. Press edges with a fork to seal. Place 2 in. apart on ungreased baking sheets. Repeat with remaining dough and filling., Bake 10-12 minutes or until edges are light brown. Cool on pans 2 minutes. Remove to wire racks to cool completely., In a small bowl, mix confectioners' sugar and milk until smooth. Drizzle over cookies; let stand until set. Store in an airtight container in the refrigerator., Freeze option: Transfer wrapped disks to a resealable plastic freezer bag; freeze. To use, thaw dough in refrigerator until soft enough to roll. Prepare filling and cookies. Bake and decorate as directed.
