24 ounces tofu, chilled & mashed
4 1/2 tablespoons honey
2 teaspoons vanilla extract
15 strawberries, fresh,cut vertically into halves
1/4 cup hazelnuts, sliced

Steps:

  • In a large serving bowl combine the tofu, honey, and vanilla blending well with a fork.
  • Once well blended place strawberries on top and sprinkle with the nuts.

For my mother's birthday, I made this strawberry pie recipe instead of a cake. Since it was mid-May in Oklahoma, the berries were absolutely perfect. It was a memorable occasion for the whole family. -Josh Carter, Birmingham, Alabama

1 sheet refrigerated pie crust
3/4 cup sugar
2 tablespoons cornstarch
1 cup water
1 package (3 ounces) strawberry gelatin
4 cups sliced fresh strawberries
Whipped cream, optional

Steps:

  • Preheat oven to 450°. Unroll crust into a 9-in. pie plate. Trim edge. Line unpricked crust with a double thickness of heavy-duty foil or parchment. Bake 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack., In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in gelatin until dissolved. Refrigerate until slightly cooled, 15-20 minutes., Meanwhile, arrange strawberries in the crust. Pour gelatin mixture over berries. Refrigerate until set. If desired, serve with whipped cream.

I adapted this from a traditional chicken pot pie recipe since my husband and I are vegetarian, and I will never buy a frozen pot pie again! This is great comfort food on a cold winter day.

⅓ cup butter
½ cup thinly sliced onion
1 stalk celery, thinly sliced
2 cloves garlic, minced
⅓ (12 ounce) package extra-firm tofu, cubed
¼ cup cubed red potatoes
½ teaspoon oregano
salt and ground black pepper to taste
⅓ cup all-purpose flour
⅔ cup milk
1 ½ cups vegetable broth
1 cup frozen mixed vegetables
1 pastry for double-crust pie

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat butter in a large skillet over medium heat; cook and stir onion, celery, garlic, and tofu until onion is tender and translucent, 10 to 15 minutes. Season with oregano, salt, and black pepper. Stir flour into vegetable mixture; toss to coat.
  • Slowly stir milk into vegetable mixture until thickened; about 5 minutes. Stir in vegetable broth; cook and stir until filling is thickened, about 5 minutes. Stir in frozen vegetables. Fit one pie crust into a 9-inch pie pan.
  • Pour filling into prepared pie crust. Top with second pie crust; crimp edges together to seal. Poke holes into top crust for ventilation during baking.
  • Bake pie in the preheated oven until crust is golden brown and filling is bubbling, 30 to 35 minutes. Let cool for 10 to 15 minutes before serving.

  • Before You Begin: Place the cashews in a small bowl and add water to cover them by about 1 inch. Set aside to soak for at least 2 hours or in the refrigerator overnight.
  • Crust: Place the 8 chopped dates into a food processor fitted with a metal blade. Add the oats and process until crumbly. With the machine running, add 2 tablespoons of apple juice. Continue to process until mixture begins to adhere together. If necessary, add more juice a teaspoon at a time, but be careful not to add too much. You want it to be sticky but not wet. Press into the bottom of an 8-inch pie pan and up the sides about 1 inch. Set aside.
  • Filling: Drain the cashews and place them in the blender (a Vitamix or other high-speed blender works best, but others should be able to do a good job). Add the tofu, 2 dates, lemon juice, chia seeds, and lemon rind. Split the vanilla bean lengthwise and use a spoon to scrape out the seeds inside; add them to the blender. Blend on high speed until completely smooth, stopping to scrape down the sides to make sure all ingredients are incorporated.
  • Taste the filling mixture and add sweetener to taste. (I increased the lemon flavor by using lemon-flavored stevia.) Leave the mixture in the blender as you continue with the next step.
