STRAWBERRY, MELON & GINGER SUNDAES



Strawberry, melon & ginger sundaes image

Let your taste buds tingle with this fruity low-fat pud

Number Of Ingredients 6

½ medium cantaloupe melon (about 350g/12oz), skinned and cut into chunks
250g strawberry , hulled and sliced
4 ginger biscuits, roughly crushed (try Fox's Crinkle Crunch)
2 pieces of stem ginger in syrup (about 25g/1oz), chopped, plus 2 tsp of syrup from the jar
2 x 150g / 5oz pots Greek yogurt
4 tsp light muscovado sugar

Steps:

  • Gently mix the melon and strawberries together in a large bowl with a spoon or your hands, then pile half into four glass tumblers. Sprinkle with half the biscuit crumbs.
  • Stir the chopped ginger and syrup into the yogurt and spoon into the tumblers. Pile the rest of the fruit on top, then scatter with the remaining crumbs.
  • Sprinkle a teaspoon of muscovado sugar on top of each dessert and chill until ready to serve (up to 2 hours ahead) - the sugar will gradually melt to give a yummy toffee flavour.
  • Take out of the fridge about 15 minutes before serving, so they are not too chilled.

1/2 cup (1 stick) unsalted butter, at room temperature, plus more for buttering the pan
1 cup part-skim ricotta, at room temperature
1 cup sugar
3 large eggs, at room temperature
3 teaspoons lemon zest (from 3 lemons) plus 1/4 cup freshly squeezed lemon juice
1/2 teaspoon pure vanilla extract
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1 quart strawberries, hulled and diced
Pinch kosher salt
4 tablespoons sugar
1/2 cup heavy cream, chilled
1/2 teaspoon pure vanilla extract
1 pint vanilla or strawberry ice cream

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Butter a 9-by-5-inch metal loaf pan and line the bottom and sides with a strip of parchment paper.
  • Add the butter, ricotta and sugar to a large bowl. Beat the mixture with a hand-held mixer on medium speed until light and fluffy, about 3 minutes. Reduce the speed to low and add the eggs, lemon zest, lemon juice and vanilla extract and beat to combine. Add the flour, baking powder and salt. Fold the ingredients together with a rubber spatula until just combined. (Do not overmix.) Pour into the prepared pan and bake until a toothpick inserted in the center comes out clean, 1 hour to 1 hour and 10 minutes. Remove to a rack to cool for 1 hour.
  • For the assembly: Meanwhile, combine the berries, salt and 2 tablespoons sugar in a small bowl. Toss well with a fork to combine, mashing the berries slightly with the back of the fork. Allow to sit at room temperature for 10 minutes. Whisk together the heavy cream, vanilla extract and remaining 2 tablespoons sugar in a separate bowl until soft peaks form.
  • Dice 6 slices of lemon loaf, then divide evenly among 6 bowls or glasses. Top each serving with some of the strawberry sauce, followed by a scoop of ice cream and a dollop of whipped cream.

Steps:

  • In a small bowl, combine strawberries and sugar; set aside. In another bowl, beat the cream cheese, confectioners' sugar and milk until smooth., Spoon ice cream into two dessert dishes; layer each with 1/4 cup strawberries. Top with cream cheese mixture and remaining strawberries. Combine cracker crumbs and cinnamon; sprinkle over sundaes.

250 g punnet strawberries, washed, hulled
780 g vanilla yogurt
2 teaspoons milo
40 g milo

Steps:

  • Chop strawberries.
  • Divide 260g (1 cup) vanilla yoghurt among four serving glasses. Divide one-third of the strawberries among the glasses.
  • Sprinkle 2 tsp Milo over the strawberries in each glass.
  • Continue layering with 520g (2 cups) vanilla yoghurt, the remaining strawberries and 40g (1/3 cup) Milo. Serve.

  • Using a small melon baller, scoop the cantaloupe and the honeydew into balls or use a knife to cut melons into cubes. You should have about 4 cups cantaloupe pieces and 2 cups honeydew pieces. Set melon pieces aside.
  • In a small saucepan combine pineapple juice, sugar, and ginger. Bring to boiling, stirring until sugar dissolves; reduce heat. Simmer, uncovered, over medium heat for 5 to 7 minutes or until the mixture is the consistency of a thin syrup. Remove from heat; cool. Transfer syrup to a storage container. Add 2 cups of the cantaloupe pieces and all of the honeydew pieces. Cover and chill overnight.
  • Meanwhile, in a large bowl stir together sour cream and yogurt; set aside. In a blender or food processor, blend or process strawberries until smooth; add to sour cream mixture. Cover and blend or process remaining 2 cups cantaloupe pieces until smooth. Add pureed melon and the milk to strawberry mixture; stir to combine. Cover and chill overnight.
  • To serve, drain melon pieces, reserving syrup. Stir reserved syrup into the chilled soup. Ladle soup into bowls; top with melon pieces. If desired, garnish with mint leaves.
