This recipe uses plain yogurt not heavy cream so it's lower in fat and calories but it is still just as good. It is a very simple and refreshing soup.

- In a large saucepan, combine 3/4 cup water, apple juice, sugar, cinnamon and cloves. Bring to a boil, stirring occasionally. Remove from the heat., Place strawberries and remaining water in a blender; cover and process until smooth. Pour into apple juice mixture. Stir in yogurt and food coloring if desired. Cover and refrigerate for at least 2 hours or until chilled. , Ladle soup into bowls. Combine sour cream and milk; spoon about 2-1/2 teaspoons into the center of each bowl. Using a toothpick, pull mixture out, forming a flower or design of your choice.

- nonreactive saucepan, and add sugar and water. Cover and bring to a simmer. When the strawberries begin to release their juices, add the red wine dissolved with cornstarch and simmer for 10 minutes in all.
- Puree the berries through a food mill or processor and chill for dessert. Before serving, taste; add more wine and sugar if necessary. Slice the reserved berries into fan like shapes. This was one of those "orphan" recipes ... I "claimed" it, and have tweaked it just a bit with the extracts and garnish, to 'fancy' it up and make a nice presentation out of it, according to the way I have eaten fruit soups. I will post a photo as soon as strawberries are in season!

- 1. Slice strawberries and mix with sour cream.
- 2. Process briefly with food processor or blender.
- 3. Add vanilla & almond extracts, and confectioners' sugar; process until smooth.
- 4. Pour into bowl and add half and half, stirring until well blended. Chill thoroughly.
- 5. To make croutons while soup is chilling: Cut pound cake into small, thin cubes. Toast in the oven under the broiler until lightly brown. Watch them closely, so they don't burn! Cool completely.
- 6. Also while soup is chilling, dip milk wafers into melted semi-sweet chocolate, covering only 1/2 the wafer. You will have to use a spoon or a spreader to get the chocolate half-way up the wafer, since you are only melting a half-cup, and it won't be very deep in your double boiler. After applying, let them 'set' on waxed paper.
- 7. Using your 6 reserved small strawberries, make a strawberry "fan" for a garnish for each bowl: slice strawberry into several very thin slices, but don't cut all the way thru the leaves (a good egg slicer is great for this, just don't push the strawberry all the way thru the wires). Leave the leaves and the hull of the strawberry intact.
- 8. Distribute soup evenly between six small bowls. Sprinkle croutons on top of soup, and lay a strawberry fan on top of croutons. Serve chocolate-covered milk wafers on the side. This makes a lovely summer "light" dessert soup.

We tried this wonderful chilled soup at the Grand Floridian resort in Disney World. My daughter absolutely loved it! I came across this recipe on a site that lists recipes from Disney.
