½ cup white sugar
1 tablespoon cornstarch
1 cup water
3 cups strawberries, hulled
2 tablespoons butter, diced
1 cup all-purpose flour
1 tablespoon white sugar
1 ½ teaspoons baking powder
½ teaspoon salt
3 tablespoons butter
½ cup heavy whipping cream

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Butter a 2-quart baking dish.
  • Combine sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until thick and hot. Stir in strawberries, and remove from heat. Pour mixture into the baking dish, and dot with 2 tablespoons butter.
  • Sift together the flour, sugar, baking powder, and salt. Cut in 3 tablespoons butter. Stir in cream. Mixture should be fairly soft. Spoon on top of berries.
  • Bake for 25 minutes in the preheated oven, or until biscuit is golden brown and filling is bubbly.

2 1/2 cups blueberries
2 1/2 cups raspberries
1 1/2 cups blackberries
1 1/2 cups strawberries (, sliced)
1/2 cup granulated sugar
2 1/2 tablespoons cornstarch
zest of half a lemon
1 teaspoon lemon juice (, fresh squeezed)
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/4 cup granulated sugar
2 tablespoons light brown sugar (, packed)
zest of half a lemon
1 1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon fine sea salt
6 tablespoons unsalted butter (, cold)
1/3 cup , plus 1 tablespoon buttermilk (, divided)
1 tablespoon decorators sugar or turbinado sugar (, optional)

Steps:

  • Preheat the oven to 350°F. Spray a 9x13 baking dish with cooking spray, set aside.
  • In a large mixing bowl, add the blueberries, raspberries, blackberries, sliced strawberries, sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Toss to coat. Spread the berries into the prepared baking dish.
  • In a large mixing bowl, stir together the flour, sugar, brown sugar, lemon zest, baking powder, baking soda, and salt until it is a sandy mix with no large clumps.
  • Add the cold butter, and combine with a pastry cutter or a fork, blending until it is no longer dry and powdery.
  • Add ⅓ cup of the buttermilk and stir it together until combined, this will be a sticky, wet dough.
  • Take a few tablespoons of the dough and flatten it out to about 1/4 inch thick. Lay the pieces of dough on top of the berries. I like to leave some of the berries exposed for a pretty presentation.
  • Brush the dough topping with the remaining buttermilk using a pastry brush. Sprinkle the decorators sugar on top.
  • Bake for 45-50 minutes until the topping is golden brown and it's bubbly along the edges.
  • Allow to cool for at least 10 minutes before serving.

3 Tbs butter
2 cups strawberries, quartered
2 cups blackberries
1 cup flour
1 tsp baking powder
1/2 cup sugar
pinch of salt
3/4 tsp vanilla
1 cup milk

Steps:

  • Put the butter in a cold baking dish (~9x9"). Put baking dish in oven and pre-heat to 350. Prepare fruit and set aside. Mix dry ingredients, whisking after adding baking powder and after salt until homogenous mixture. Add vanilla to measured milk and add mixture to dry mixture. Mix well. When oven has reached 350 and butter is melted and probably foaming, put the baking dish on a heatproof surface. Pour the batter into the dish, and then add fruit on top of the batter. Do not stir. Bake for 55 minutes. When finished, top will be browned and batter will be baked completely. Dish will remain warm for an hour stored at room temperature.

1/4 cup cornstarch
1/4 cup granulated sugar
1 tablespoon fresh lemon juice
2 pounds strawberries, hulled and quartered
1 3/4 cups all-purpose flour (see Cook's Note)
1/4 cup plus 2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon fine salt
6 tablespoons cold unsalted butter, diced
3/4 cup plus 2 tablespoons cold heavy cream
1 teaspoon vanilla extract
Vanilla ice cream for serving

Steps:

  • For the filling: Position a rack in the center of the oven and preheat to 375 degrees F. Whisk together the jam, cornstarch, sugar, lemon juice and 2 tablespoons water in a large bowl until well combined. Add the strawberries and toss gently to coat evenly. Transfer the mixture to a 2-quart baking or gratin dish, using a spatula or the back of a large spoon to gently pack the fruit into an even layer. Set aside.
  • For the topping: Pulse together the flour, 1/4 cup of the sugar, baking powder, and salt in a food processor. Add the butter and pulse until the mixture resembles coarse meal. Add 3/4 cup of the cream and the vanilla and pulse until the dough just starts to come together. Do not over mix.
  • Spread the dough evenly over the strawberries, drizzle with the remaining 2 tablespoons cream and sprinkle with the remaining 2 tablespoons sugar.
  • Place the cobbler on a baking sheet and bake until the topping is lightly browned and the fruit is bubbling, about 1 hour. Let the cobbler cool completely before serving, 2 to 3 hours. Serve with vanilla ice cream.

1 kg strawberries, large ones halved
1 vanilla pod, split open
1 lemon, zested and juiced
40g light brown soft sugar
80ml elderflower cordial
1½ tbsp cornflour
clotted cream or vanilla ice cream, to serve
150g self-raising flour
50g golden caster sugar
100g unsalted cold butter, cut into cubes
80-100ml buttermilk
30g demerara sugar

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Toss the strawberries in an oval, roughly 25cm, ovenproof dish with the vanilla, lemon, sugar and cordial. Roast in the oven for 10 mins, or until the strawberries are jammy but holding their shape. Remove the vanilla pod and discard. Mix a little of the strawberry juices into the cornflour, then add the cornflour mixture to the strawberries, combining well.
  • For the cobbler topping, toss the flour with the sugar and a pinch of salt. Rub the butter into the flour mixture using your fingertips, then swiftly stir in 80ml buttermilk. If it looks dry, stir in the remaining 20ml. Spoon the cobbler mix over the strawberry base (about eight large spoonfuls), sprinkle over the demerara sugar and bake for 25-30 mins, or until the topping is lightly golden brown. Leave to rest for 10 mins, then serve with clotted cream or ice cream.Twist itSummer berries: Use a mixture of summer berries and up the sugar to 60g. Frozen summer berries work well - just leave out the cooking time for the fruit in step 1, toss the berries with the vanilla, lemon, sugar and cordial, then follow the method from step 2.Peach melba: Slice 3 ripe peaches and toss them with 400g raspberries in step 1 for a peach melba twist. Remove the elderflower cordial if doing this twist, and top the cobbler with flaked almonds before baking.Gooseberries: Simply use the same quantity of gooseberries and cordial, but increase the amount of sugar to 80g.
