Strawberry-Basil Salad With Balsamic Vinaigrette image

This recipe is from Cooking Light magazine, June 2009. Very similar to one of their previous Strawberry Basil salads, however this one does not have cucumber or sugar. They've also added Vidalia onion!

3 tablespoons olive oil
3 tablespoons balsamic vinegar
1/2 teaspoon salt
1/8 teaspoon black pepper
8 cups torn romaine lettuce
2 cups sliced strawberries (1 pound)
1/2 cup cut sliced vidalia onion
1/4 cup torn fresh basil

Steps:

  • Combine olive oil, balsamic vinegar, salt and pepper in a large bowl; stir well with a whisk.
  • Add romaine lettuce, strawberries, onion and basil.
  • Toss to coat.

This salad lends itself to many variations- try using spinach, or adding almonds or candied walnuts, maybe even a little goat cheese. A Rachael Ray recipe.

2 teaspoons strawberry jam
1 tablespoon balsamic vinegar
3 tablespoons extra virgin olive oil, eyeball it
salt and pepper, to taste
1 pint strawberry, sliced
4 -5 cups chopped romaine lettuce or 4 -5 cups mixed greens, of any kind

Steps:

  • Place jam in a medium bowl and whisk in vinegar then extra-virgin olive oil. Season the dressing with salt and pepper. Add the strawberries and greens to bowl and toss to coat evenly in dressing.

Strawberry Feta Salad with Balsamic-Basil Grilled Chicken (or Not) image

This refreshing salad combines sweet strawberries, crunchy toasted almonds, and salty feta with a delicious honey-balsamic vinaigrette. For the carnivores, optional basil-balsamic grilled chicken tops it off.

Chicken
Balsamic-Basil Grilled Chicken (skip down to Strawberry Feta Salad if not including chicken)
1 pound boneless (skinless chicken breasts)
1/4 cup olive oil
1/4 cup balsamic vinegar
2 cloves garlic (minced)
20 fresh basil leaves (chopped)
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
Strawberry Feta Salad
1/3 cup sliced almonds
3 cups mixed greens
3 cups baby spinach
1 cup strawberries (hulled and sliced)
1/2 small red onion (halved and sliced)
1/3 cup crumbled feta cheese
Dressing
1/4 cup olive oil
3 tablespoons balsamic vinegar
2 tablespoons honey
1 clove garlic (minced)
Pinch salt

Steps:

  • If including chicken, pound the chicken breasts to approximately 1/2 inch thick. Add to a gallon-sized Ziploc bag (I actually pound it right in the bag then add the marinade. I'm a little worried about causing holes, but it hasn't happened yet). Whisk together the olive oil, balsamic vinegar, garlic, basil, salt, and black pepper. Pour over the chicken in the bag. Refrigerate for at least an hour, up to 12 hours.
  • Grill for about three minutes on each side until cooked through. Set aside.
  • Make the salad dressing. Whisk together all the ingredients - olive oil, balsamic vinegar, honey, garlic, and salt. Refrigerate for at least an hour, if possible, so the flavors meld.
  • Toast almonds in a saute pan on medium high for about 4-5 minutes, stirring frequently, until you can smell them/they look toasted. Set aside and let cool.
  • In a large salad bowl, toss together the mixed greens, spinach, strawberries, onion, feta cheese, and cooled sliced almonds.
  • Just before serving, pour the salad dressing over the salad and gently toss again.
  • Cut the chicken into slices, if using, and place it atop individual servings as desired.

  • In a small saucepan, bring the balsamic vinegar to a high simmer over medium heat. Stir, then reduce the heat to low and simmer until the vinegar has thickened and reduced by half, about 8 to 10 minutes. Set aside to cool.
  • Place the strawberries, cherry tomatoes, mozzarella, avocado, pecans and basil in a shallow bowl or platter. Drizzle with olive oil, and season generously with salt and pepper. Gently toss. Drizzle with the reduced balsamic.
