Hull and quarter 1 quart strawberries. Toss with 1 teaspoon sugar in a large bowl. Sprinkle a layer of gingersnap crumbs or graham cracker crumbs in the bottom of parfait glasses. Top with the berries. Mix 1 cup nonfat Greek yogurt with 2 tablespoons honey and 1/2 teaspoon cinnamon, then spoon over the berries.

2 cups boiling water

Steps:

Spoon ice cream into a large bowl. Dissolve gelatin in water; pour over the ice cream and blend well. Pour into parfait glasses. Refrigerate until set, about 1-1/2 hours.

5 tablespoons sugar
12 scoops ice cream
8 ounces crushed pineapple
whipped cream

Steps:

Reserve 6 berries for top of parfaits.
Slice remaining berries and mix with sugar.
Let stand 10 minutes.
Spoon half the berries 6 parfait glasses.
Add 1 scoop ice-cream to each.
Add half the pineapple.
Repeat the layers.
Top with whipped cream and reserved berries.

12 scoops vanilla ice cream
1 (8 ounce) can crushed pineapple
Cool Whip

Steps:

Reserve 6 strawberries for garnish.
Slice the remaining strawberries and toss with sugar; let stand for 10 minutes.
Spoon half of the sliced berries into 6 parfait glasses.
Top with half of the ice cream and half of the pineapple.
Repeat layers.

1 tablespoon Grape-nuts cereal

Steps:

Layer in a parfait glass pineapple then yogurt then strawberries.
Top with the Grape Nuts.

Steps:

Prepare and dice 1/4 small pineapple, to yield 3/4 cup.
In a glass, layer a third of pineapple with 1/4 cup whipped cottage cheese (or regular cottage cheese, blended) and 2 teaspoons honey.
Make another layer of pineapple, cottage cheese, and honey; top with remaining pineapple. Garnish with 1 teaspoon toasted sweetened shredded coconut, if desired.
