SIMPLE FRESH BERRY WITH GRAND MARNIER SAUCE



Simple Fresh Berry With Grand Marnier Sauce image

In this dessert sauce recipe, fresh blueberries, strawberries, and raspberries are combined with orange liqueur for a truly delicious treat.

2 pints mixed berries (blueberries, strawberries, and/or raspberries, rinsed and air dried and stemmed if using strawberries) ( divided )
4 to 6 tablespoons sugar
2 tablespoons orange liqueur (Cointreau, Triple Sec , or Grand Marnier)*

Steps:

  • Gather the ingredients.
  • Put 1 pint of the mixed berries in a medium bowl. Using a pastry cutter , fork, or potato masher, coarsely mash berries.
  • Purée remaining berries with 4 tablespoons sugar in a food processor fitted with a steel blade.
  • Mix puréed berries with mashed berries along with orange liqueur.
  • Taste and adjust flavor, adding more sugar if necessary.
  • Let the berry sauce stand at room temperature to allow the flavors to blend for at least 30 minutes. The sauce can also be prepared ahead, covered, and refrigerated for up to 4 hours before serving.

1 cup milk
1 cup heavy cram
1 ts. vanilla extract
4 egg yolks
1/2 cup sugar
1/4 cup grand marnier
1 quart strawberries

Steps:

  • 1. Heat milk, cream and vanilla in double boiler over simmering water until hot but not boiling.
  • 2. Whisk egg yolks and sugar in a bowl. Stir a small amount of the hot milk mixture into egg yolks; stir the egg yolks into the hot milk mixture gradually. Cook for 10 minutes or until sauce coats back of spoon. Do not allow to boil or the sauce will curdle. Remove from heat and then stir in liqueur.
  • 3. The sauce will continue to thicken as it cools. Cut strawberries into halves or slices. Spoon strawberries evenly into four wine goblets, martini glasses or dessert bowls. Drizzle sauce over strawberries. The sauce may be served warm or chilled. Serves 4

  • It may be necessary to add sugar if the strawberries are not sweet enough.
  • Let the strawberries sit at room temperature for several hours.
  • Stir periodically.

Steps:

  • 1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  • 2. Select Variable 1.
  • 3. Turn machine on and slowly increase speed to Variable 10, then to High.
  • 4. Use the tamper to press ingredients into the blades.
  • 5. In about 30-60 seconds, the sound of the motor will change and four mounds should form.
  • 6. Stop machine. Do not over mix or melting will occur. Serve immediately.

Juice of half a lemon
1/2 cup sugar
2 tablespoons kirschwasser or Grand Marnier

Steps:

  • Rinse and drain the strawberries. Pluck off and discard the stems. Put the strawberries into a food processor or blender and process thoroughly. Add the lemon juice and sugar. Blend.
  • Pour in the kirschwasser or Grand Marnier and blend. Serve over ice cream.

1/2 cup sugar
1 cup water
2 tablespoons lemon juice
1/4 cup Grand Marnier
1 lb strawberry, hulled and halved

Steps:

  • Combine sugar, water and lemon juice in a saucepan.
  • Stir over medium heat until sugar is dissolved.
  • Bring to a boil, reduce heat to low and simmer, uncovered, for about 5 minutes or until mixture becomes slightly syrupy.
  • Remove from heat, stir in Grand Marnier and strawberries.
  • Serve warm.
  • My favorite is with pound cake and vanilla ice cream.
