STOVETOP FRIES
I've tried many recipes to oven bake french fries. Most of have been good.......but to me there's just something special about fries that are actually fried. This is a simple and basic way to fry them on the stove top.

Steps:
- Cut the potato into 1/2-inch slices. (You can peel it or not. I don't usually peel mine). Cut each slice lengthwise into 1/2-inch strips.
- Heat the oil in a large frying pan on medium-high heat. After 1 minute, carefully put 1 potato strip in the pan. If it immediately begins to sizzle, add the rest of the potatoes. If it doesn't sizzle, wait another 30 seconds and try a second strip. If the oil isn't hot enough, the potatoes will stick to the bottom of the pan.
- Fry for 1 minute and turn them over with a spatula. Continue turning them every minute or so until they have become golden brown. If they start to burn, turn the heat down to medium.
- Drain the fries on paper towels, sprinkle on some salt and serve.

BEST BAKED FRENCH FRIES
The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

I jazz up these baked french fries with paprika and garlic powder. Something about the combination of spices packs a punch. The leftovers are even good cold! -Heather Byers, Pittsburgh, Pennsylvania

- Heat a large skillet (see note) over low-medium heat. (Note: on my electric range which heats from 1-10, I set the heat at 4 for these potatoes.)
- Cook potatoes, covered, without stirring them, for 10 minutes (resist the urge to lift the lid and check on them - keeping the lid closed helps them to steam and get started cooking).
