Baked Ziti is an easy, saucy, and cheesy pasta casserole. It has all of the great flavors of Lasagna but is simple to prepare and serve as a pasta bake.

1 lb ziti pasta (or penne pasta)
1 lb ground beef (85% lean)
1 onion (chopped)
2 garlic cloves (minced)
1 tsp salt
1/2 tsp black pepper
5 cups marinara sauce
15 oz fresh ricotta
10 fresh basil leaves
12 oz mozzarella cheese (shredded, divided)
1 cup grated parmesan cheese (divided)

Steps:

  • Cook pasta in salted water according to package instructions until just aldente them drain (so not overcook since they will continue to cook in the oven).
  • In a deep pan or dutch oven, over medium-high heat, cook ground beef and onion, breaking up the beef with a spatula, until beef is fully cooked through and onions are softened (5-7 minutes). Add minced garlic, 1 tsp salt, 1/2 tsp pepper and sautee another minute. Add 5 cups marinara, bring to a simmer and continue cooking 5 minutes then turn off the heat.
  • Spread a ladle of meat sauce over the bottom of a 9x13 casserole dish.
  • Into the remaining sauce, add chopped basil and spoon in ricotta. Add cooked pasta and stir just until noodles are coated (you want to keep that ricotta texture)
  • Transfer half of the pasta to the casserole dish. Top with 1/2 of shredded mozzarella and 1/2 grated parmesan. Add remaining pasta and top with remaining mozzarella and parmesan.
  • Clear the edges of the pan so the cheese doesn't burn onto the dish. Bake at 350˚F for 25 minutes. Broil 1-2 minutes to brown the cheese. Let cool 5 minutes then garnish with basil if desired and serve.

2 1/2 cups elbow macaroni
2 tablespoons butter or 2 tablespoons margarine
2 cups chopped onions
1 teaspoon minced garlic
1/2 lb mushroom, sliced
2 cups shredded green cabbage
1 teaspoon salt
1/4 teaspoon caraway seed
1 bunch fresh spinach or 1 (10 ounce) bag fresh spinach, coarsely chopped and tough stems removed
1 (16 ounce) container cottage cheese
2 tablespoons chopped fresh dill or 2 teaspoons dried dill
1/2 teaspoon fresh ground pepper
1 1/3 cups shredded cheddar cheese, divided

Steps:

  • Heat oven to 350 degrees.
  • Grease a 13x9-inch baking dish.
  • Cook macaroni according to package directions until barely tender.
  • Rinse under cold water; drain and transfer to large bowl.
  • Mel butter in large skillet over medium-high heat.
  • Add onions and cook stirring occasionally for 5 minutes.
  • Stir in garlic, mushrooms, cabbage, salt and caraway seeds.
  • Reduce heat to medium, cover and cook until cabbage is tender about 7-10 minutes.
  • Combine vegetable mixture and spinach with cooked pasta in bowl.
  • Stir in cottage cheese, dill, pepper and 1 cup Cheddar cheese.
  • Spread evenly in prepared baking dish and sprinkle with remaining 1/3-cup Cheddar cheese.
  • Bake 20-25 minutes, until heated through.

1/2 pound macaroni or other small pasta (I used whole-wheat Penne)
2 Tbs butter
2 cups chopped onion
2 cloves garlic, minced
1/2 lb sliced mushrooms
4 cups shredded cabbage
1 tsp salt
1 tsp caraway seeds
1 10 oz bag fresh baby spinach
2 cups cottage cheese
1/2 cup buttermilk
2 Tbs fresh dill, finely minced
2 cups packed, grated cheddar
Handful of sunflower seeds

Steps:

  • Preheat oven to 350 and grease a 9x13 baking pan. Cook the pasta until tender and drain. Melt butter in a deep skillet (this is going to need to be deeper than you think it is. AT LEAST 2 or 3 inches deep), and saute onions for 5 minutes. Add garlic, mushrooms, cabbage, salt, and caraway seeds. Cover and cook 10 minutes, or until cabbage is tender. Stir in spinach, remove from heat, and add to pasta. Mix in cottage cheese, buttermilk, dill, black pepper and half the cheddar. Spread in prepared pan, sprinkle with remaining cheddar and sunflower seeds. Bake uncovered for 20-30 minutes.

4 tablespoons vegetable oil, divided
7 cups quartered button mushrooms
1 cup sour cream
1 onion, chopped

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Heat 2 tablespoons oil in a skillet over medium heat. Increase heat to high and add mushrooms. Cook and stir until golden brown, 6 to 8 minutes. Do not cook so long so that they begin to release a lot of liquid. Add sour cream, mix well, and transfer mixture to a casserole dish.
