SKILLET SHEPHERD'S PIE
This is the best shepherd's pie recipe I've ever tasted. It's very quick to make, and I usually have most-if not all-of the ingredients already on hand. -Tirzah Sandt, San Diego, California

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the corn, peas, ketchup, Worcestershire sauce and garlic. Reduce heat to medium-low; cover and cook for 5 minutes., Combine the cornstarch, bouillon and water until well blended; stir into beef mixture. Bring to a boil over medium heat; cook and stir until thickened, 2 minutes. Stir in sour cream and heat through (do not boil)., Spread mashed potatoes over the top; sprinkle with cheese. Cover and cook until potatoes are heated through and cheese is melted. Freeze option: Prepare beef mixture as directed but do not add sour cream. Freeze cooled meat mixture in a freezer container. To use, partially thaw in refrigerator overnight. Heat through in a large skillet, stirring occasionally and adding a little water if necessary. Stir in sour cream and proceed as directed.

Fun Fact: The difference between "cottage pie" and "shepherd's pie", is in the meat. Shepherd's pie is named as such if it contains lamb, and "cottage" usually applies to one made with beef.

Steps:
- 1. In a large skillet, brown ground beef and onion over medium heat; drain.
- 2. Stir in the thawed mixed veggies. Reduce heat to medium-low; cover and cook for 5 minutes.
- 3. Stir together cream of mushroom soup, milk, garlic poswer and beef boullion granules until well blended; stir into ground beef mixture. Cook over medium heat; stirring frequently for until well combined.
- 4. Spread mashed potatoes over the top; sprinkle with cheese. Cover and cook just until potatoes are heated through and cheese is melted.

- Heat oil in a large skillet over medium high heat. Add onion and garlic, cook for 1 minute. Then add carrots and celery. Cook for 3 minutes or until softened and sweet.
- Add flour and mix in. Add tomato paste, broth, red wine, bouillon cube, Worcestershire sauce, thyme, bay leaves, salt and pepper.
- Bring to simmer, then turn down heat so it is simmering rapidly - I have it on medium high. Cook for 30 minutes, stirring occasionally, until it reduces down to a gravy consistency (Note 1) (see video). Taste then add more salt if desired.
