3-1/2 cups cold 2% milk
2 packages (3.4 ounces each) instant lemon pudding mix
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
1/2 cup confectioners' sugar
1 carton (12 ounces) frozen whipped topping, thawed, divided
1 package (12 to 14 ounces) lemon cream-filled sandwich cookies, crushed

Steps:

  • In a large bowl, whisk milk and pudding mixes for 2 minutes. Let stand for 2 minutes or until soft-set., In another bowl, beat the cream cheese, butter and confectioners' sugar until smooth. Gradually stir in pudding until blended., Set aside 1/4 cup each of whipped topping and crushed cookies for garnish. Fold remaining whipped topping into pudding mixture. , Place half of the remaining cookies in a 3-qt. glass bowl; top with half of the pudding mixture. Repeat layers. Garnish with reserved whipped topping and crushed cookies. Refrigerate until serving.

Tiramisu is formed into a trifle dish made with Zabaglione. Ladyfingers are brushed with a cognac/espresso mixture and layered with Zabaglione and freshly grated chocolate. This Zabaglione has a slight flavor of marsala and is so delicious that it can be eaten by itself as a dessert with fresh fruit.

5 egg yolks
1/4 cup sugar
1/2 marsala, divided
1/4 cup dry white wine
2/3 cup heavy cream, chilled
4 tablespoons sugar, divided
1 lb mascarpone cheese
1/3 cup freshly brewed espresso or 1/3 cup very strong coffee
1/4 cup cognac
1 tablespoon vanilla extract
6 ounces ladyfingers, split
3 ounces semisweet chocolate
1 tablespoon cocoa powder

Steps:

  • Prepare Zabaglione by placing egg yolks in top of a double boiler.
  • Add sugar and beat with portable mixer or rotary beater at medium speed until mixture is pale yellow and creamy.
  • Place water in bottom of double boiler and bring to a boil over high heat.
  • Reduce heat to lower and place top of double boiler over simmering water.
  • Gradually beat 1/4 cup marsala into egg yolk mixture.
  • Beat 1 minute.
  • Gradually beat in remaining marsala and 1/4 cup white wine.
  • Continue cooking custard over the simmering water approximately 4 to 8 minutes or until mixture is fluffy and soft peaks form from beaters.
  • Beat constantly, scraping sides and bottom of pan frequently.
  • DONOT over cook custard!
  • Immediately remove from heat and whisk custard briefly.
  • Cover and refrigerate Zabaglione until well chilled.
  • Beat cream with 2 TB sugar in large bowl until soft peaks form.
  • Gently fold in mascarpone cheese, then Zabaglione.
  • Refrigerate at least 3 hours or until well chilled.
  • Combine espresso, cognac and remaining 2 TB sugar and vanilla extract.
  • Layer 1/4 of ladyfingers in a flower-petal design in a trifle dish.
  • Generously brush ladyfingers with the espresso mixture.
  • Spoon 1/4 of cheese mixture over ladyfingers to within 1 inch of sides of dish.
  • Sprinkle with 1/4 of grated chocolate.
  • Repeat these layers 3 more times.
  • Sprinkle remaining 1/4 of chocolate around perimeter of cheese mixture and sift cocoa powder over the top of the cheese mixture.
  • Cover and refrigerate at least 30 minutes.

2 cups fresh boiling water
honey or sugar, optional to taste

Steps:

  • Pour boiling water over fresh herbs (or use a tea ball) in a tea pot that's been rinsed out with warm water.
  • Let steep for about five minutes.
  • Strain into warmed tea cups and enjoy your tea - tisane - infusion sweetened to your taste with honey or sugar. May be served hot, or cold over ice. Enjoy!

Store-bought pound cake works well in this recipe. Or take the trifle to the next level with our Almond Sponge Cake. This recipe is equally delicious with peaches, nectarines, or plums.

1/2 cup plus 2 tablespoons sugar
4 large egg yolks
1/4 cup dry white wine, such as Sauvignon Blanc
2 teaspoons finely grated lemon zest, plus 1/4 cup fresh lemon juice (from 2 lemons)
Salt
6 tablespoons unsalted butter, room temperature, cut into small pieces
3 1/2 pounds stone fruit, such as peaches or nectarines (about 8), halved, pitted, and cut into 1/2-inch wedges
1 1/2 cups heavy cream
1 loaf homemade or store-bought pound or sponge cake, sliced 1/2 inch thick
Garnish: lemon zest matchsticks

Steps:

  • Whisk together 1/4 cup plus 2 tablespoons sugar, the yolks, wine, lemon juice, and 1/4 teaspoon salt in a medium saucepan over medium-high heat. Simmer, stirring, until thick, 3 to 5 minutes.
  • Strain through a fine sieve into a bowl. Stir in grated zest. Gradually whisk in butter until smooth. Press plastic wrap directly onto surface of curd. Refrigerate until set, about 1 hour or up to 2 days.
  • Preheat oven to 425 degrees. Toss fruit with remaining 1/4 cup sugar. Roast fruit on 2 rimmed baking sheets, rotating their positions halfway through, until caramelized and juicy, 15 to 17 minutes. Transfer to a bowl, with juices. Let cool slightly.
  • Whisk cream until soft peaks form. Whisk curd to loosen. Working in 3 additions, fold whipped cream into curd.
  • Layer a third of the cake in the bottom of a 12-cup bowl. Cover with a third of the lemon mousse. Spoon a third of the roasted fruit over lemon mousse. Repeat twice with remaining cake, lemon mousse, and fruit. Refrigerate trifle at least 2 hours or up to 1 day. Garnish with lemon zest.

This recipe was conceived from the "ashes of failure." I made Mark H's Coconut Pound Cake, Recipe #17617, but due to my error, I absolutely stuck to the bundt pan and came out in chunks. After I tasted the cake, it was too delicious to even consider trashing, so I came up with this instead. I suppose you could use any tropical fruit, I just used what I had on hand. Amount of fruit and cake you will need will depend on your bowl. I have a very deep trifle bowl (see pic).

1 coconut pound cake (use Coconut Pound Cake for a great one)
2 (3 1/2 ounce) boxes instant vanilla pudding
4 cups milk
1 cup crushed pineapple, well drained
6 bananas, sliced
8 kiwi fruits, sliced
pineapple chunks (optional) or pineapple ring, drained (optional)

Steps:

  • Make cake according to Recipe #17617 directions.
  • Combine dry pudding mix and milk, whisking until completly incorporated, about 2 minutes. Place in refrigerator until set, about 1 hour.
  • Combine well-drained crushed pineapple and pudding, set aside.
  • Crumble about 1/4 of cake into trifle dish or very deep bowl.
  • Top with 1/3 of pudding mixture.
  • Arrange sliced bananas in a layer on top of pudding.
  • Place kiwis on top of bananas.
  • Repeat Cake, pudding, banana, and kiwi layers two more times,with a pudding layer on top.
  • Decorate the top with kiwis and pineapple chunks or rings.

2 tablespoons brown sugar
1/2 teaspoon ground cinnamon

  • Preheat grill to high. You can use an outdoor barbeque but place fruit cut side down.
  • Place fruit in heatproof dish and sprinkle with sugar and cinnamon.

1 (1/4 ounce) envelope gelatin
1/2 cup sherry wine
1 1/2 cups light cream
1/4 cup sugar
1 teaspoon vanilla extract
2/3 cup apricot jam
toasted almond (optional)

Steps:

  • Soften the gelatin in the sherry.
  • Heat the light cream and the sugar together while stirring in the top of a double boiler over simmering water until the sugar has dissolved. Blend in the gelatin-sherry mixture and stir until the gelatin has dissolved. Remove from heat and cool down until the mixture begins to thicken. Add the vanilla extract.
  • Spread half of the apricot jam in the bottom of a glass serving dish. If the jam is very thick thin it out with a little brandy.
  • Spoon in the cream mixture and place in your refrigerator. When this has set, spread the remaining apricot jam over. Sprinkle with toasted almonds, if wished.
