20 Minute Garlic Beef and Broccoli Lo Mein has melt in your mouth tender beef with broccoli, carrots, and noodles. The sauce adds such amazing flavor to this incredibly easy meal!

Steps:
- In a large pot with boiling water, cook the noodles according to package directions. Add the broccoli the last 5 minutes of cooking and let them cook until tender. Drain the noodles and broccoli.
- Cut the flank steak across the grain in 1/4 inch strips.
- While the pasta is cooking, add olive oil to a medium sized skillet. Cook the steak until no longer pink.
- Add the garlic, and carrots and cook for a minute more.
- In a small bowl whisk together the brown sugar soy sauce, hoisin sauce, sesame oil, ginger, red pepper and pepper.
- Add the spaghetti to the skillet and pour the sauce on top and toss until incorporated.

- Prepare the beef:
- In a small bowl stir together the soy sauce, the sugar, and the salt, add the beef, and let it marinate for 20 minutes.
- Make the sauce while the beef is marinating:
- In a small bowl dissolve the cornstarch in the soy sauce and stir in the Sherry, the broth, the sugar, and the sesame oil.
- Heat a wok or large heavy skillet over high heat until it is hot, add 2 tablespoons of the vegetable oil, and heat it until it just begins to smoke. Stir-fry the beef in the oil in batches for 1 minute, or until it is no longer pink, and transfer it as it is cooked with a slotted spoon to a plate. Add the remaining 1 tablespoon vegetable oil to the wok, heat it until it is hot but not smoking, and in the oil stir-fry the gingerroot, the garlic, and the chili for 30 seconds, or until the mixture is fragrant. Add the broccoli and stir-fry the mixture for 1 minute. Add 1/3 cup water and steam the broccoli, covered, for 1 1/2 to 2 minutes, or until it is crisp-tender. Stir the sauce, add it to the wok with the beef and any juices that have accumulated on the plate, and cook the mixture, stirring, for 2 minutes, or until the sauce is thickened and the beef is heated through. Transfer the mixture to a heated platter and serve it with the rice.

- Slice the steak very thinly, the easiest way to do this is to have it half frozen when you slice it.
- Put sliced steak in a bowl with the sherry, soy sauce and the cornstarch, and a little salt, let it rest for 20 minutes.
- Put 2 tbsp oil in a skillet.
- Add garlic, stir fry for 1-2 minutes.
- add mushrooms stir fry 2 minutes.
- Remove and keep warm.
- put 2 tbsp of oil in the skillet and stir fry the beef until nicely browned, remove and keep warm.
- Add 1 tbsp oil and stir fry the green onions for 1 min, remove and keep warm.
- Pour in the chicken stock, heat to bubbling add Broccoli cover and steam for 3- 4 minutes.
- remove lid and put all the ingredient together.
- Heat through but do not over cook.
- Serve over rice or noodles.
THE BEST EASY BEEF AND BROCCOLI STIR-FRY
I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

- In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
- Add beef and toss.
- In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
- Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.
- Combine soy sauce, brown sugar, ginger and remaining 1 tablespoon cornstarch and 1/2 cup water until smooth; add to the pan.
- Cook and stir for 2 minutes.
- Serve over rice and garnish with toasted sesame seeds (optional).

This Asian-flavored recipe is adapted from a mailing I got from The Splendid Table, a recipe program on National Public Radio. The original used walnuts rather than pecans and dry sherry rather than mirin. I actually marinated the beef in the soy sauce-mirin mixture a couple hours before cooking. Be sure to use TOASTED sesame oil--it is used for its taste and regular sesame oil is just not the same.

- Combine the garlic sauce ingredients in a jar; set aside.
- Toss the beef with the soy sauce and mirin in a medium bowl.
- Combine the garlic through red pepper flakes and 1½ tsp oil in a small bowl.
- Toast the pecans over medium-high heat 2-3 minutes until aromatic; transfer to a bowl and set aside.
- Heat 2 tsps oil in a skillet or wok; add beef w/ soy sauce marinade & sauté, stirring, 2-3 minutes until well browned; remove beef from the skillet.
- Heat 1½ tsps more oil in the skillet, add the broccoli with ½ cup water, cover and cook 1-2 minutes until broccoli turns bright green.
- Uncover and stir-fry 2-4 minutes until the liquid evaporates and broccoli is crisp-tender.
- Push aside the broccoli, add the garlic and ginger to the pan and cook 45 seconds, mashing with back of spoon to release fragrance.
- Stir together the broccoli and garlic, add the beef and toss to combine.
- Shake garlic sauce in its jar and add to the skillet.
- Remove the pan from the heat and toss to coat the beef and broccoli.
- Sprinkle with toasted pecans.
- Serve hot over rice.

- Heat broiler. Brush a rimmed baking sheet with oil and arrange slices in a single layer; brush 1 teaspoon oil over tops. Broil 4 inches from heat, without turning, until golden and browning in spots, 20 to 25 minutes.
- Meanwhile, season steak with salt. In a large skillet, heat oil over high and swirl to coat. In batches, cook steak, undisturbed, until brown on one side, 2 minutes (do not crowd pan). Flip and cook until cooked just cooked through, 1 minute. Transfer to a plate.
- Add broccoli and 1/3 cup water to skillet and cook until broccoli is bright green and water almost evaporates, about 2 minutes. Add garlic and rosemary and cook, stirring, until fragrant, 15 seconds. Add vinegar and bring to a boil. Remove from heat, return steak to skillet and toss to coat. Add butter and swirl until melted. This is my go-to recipe when I want Chinese food without having to go out. Very easy and delicious. Substituting chicken for the beef works great too. Serve over rice.

- Whisk together the oyster sauce, sesame oil, sherry, soy sauce, sugar, and cornstarch in a bowl, and stir until the sugar has dissolved. Place the steak pieces into a shallow bowl, pour the oyster sauce mixture over the meat, stir to coat well, and marinate for at least 30 minutes in refrigerator.
- Heat vegetable oil in a wok or large skillet over medium-high heat, and stir in the ginger and garlic. Let them sizzle in the hot oil for about 1 minute to flavor the oil, then remove and discard. Stir in the broccoli, and toss and stir in the hot oil until bright green and almost tender, 5 to 7 minutes. Remove the broccoli from the wok, and set aside.
- Pour a little more oil into the wok, if needed, and stir and toss the beef with the marinade until the sauce forms a glaze on the beef, and the meat is no longer pink, about 5 minutes. Return the cooked broccoli to the wok, and stir until the meat and broccoli are heated through, about 3 minutes.

- With a sharp knife, cut beef across the grain into slices about 3 inches long and 1/4 inch thick. In a bowl, combine the beef, soy sauce, 1 tbls. oil, 1 teaspoons cornstarch, and 1/2 teaspoons sugar; set aside to marinate 15 minutes.
- Meanwhile, with paring knife, cut a thin slice off the bottom of each broccoli stalk and discard the dried end. Remove any leaves and, from cut end, pull thick, fibrous skin upward toward flowerets to remove. Cut broccoli flowerets off stalks into 2 1/2 inch lengths. Split broccoli flowerets lengthwise into thinner pieces if stalks are thicker than 1/2 inch. Cut remaining peeled stalks diagonally into thin slcies.Cut mushroom caps into 1/4 inch thick slices. Cut onions into 1 inch lengths; set vegetables aside.
- In cup, combiine 1/2 cup water, the remaining 1 tbls. cornstarch and 1 teaspoons sugar, the sherry, fish sauce, sesame oil, and salt; set aside.
- Just before serving, heat wok or large skillet over high heat until hot. Add 1 tbls. oil and swirl it around to coat bottom of the wok. Add ginger and, with slotted spoon, stir fry 15 seconds. Add slices of broccoli stalks and stir fry 2 minutes. Add remaining 1/2 cup water and place broccoli flowerets on top of stalks. Cover and reduce heat to simmer broccoli until crisp tender-about 3 minutes. Transfer broccoli and ginger with any remaining water to medium size bowl.
- Reheat wok over high heat. Add remaining 1 tbls. oil and half of the marinated beef. Stir fry beef until lightly browned on all sides. Remove beef to bowl with broccoli. Add remaining beef and stir fry until browned. Remove to bowl. Set aside. Add mushrooms to wok and stir fry until juices are released and mushrooms are just tender. Remove to bowl.
- Add garlic and green onions to wok; restir cornstarch mixture and pour into wok. Cook until thickened and bubbly. Return beef and broccoli mixture to wok; stir fry until coated with sauce. Transfer to serving dish and serve immediately. Enjoy!
