From Farmer John's Cookbook, The Real Dirt on Vegetables. This cookbook is a really great guide to eating seasonal vegetables. We have been getting a lot of strawberry daikon in our csa box and I needed a great way to use it up. This recipe is quite tasty. I add tofu to it and serve over brown rice. I leave out the oil and instead use a quick spray of oil on the wok. I add sake if the vegetables start to stick. Although I change the recipe to fit my diet, I'm posting as written.

2 tablespoons peanut oil
1/4 cup sliced scallion
1 medium daikon radish, thinly sliced (about 3 cups)
10 -12 red radishes, thinly sliced
2 tablespoons water
2 tablespoons soy sauce
1 teaspoon sugar
1/4 teaspoon hot chili oil, to taste (or more) (optional)

Steps:

  • Heat the peanut oil in a wok over high heat. Add the scallions; stir-fry for 30 seconds. Add the daikon and red radishes; stir fry for 1 minute. Add the water and continue stir-frying until all the water has evaporated.
  • Add the soy sauce, sugar, and chili oil, mixing everything together viorously and cooking for 30 seconds more.
  • Immediately transfer to aserving platter. Serve hot.

3 tablespoons chicken broth
2 tablespoons Chinese rice wine or medium-dry Sherry
1 teaspoon sugar
1 teaspoon cornstarch
1 teaspoon salt
1/4 pound fresh shiitake mushrooms, stems discarded
2 tablespoons vegetable oil
1/2 pound carrots (about 3 medium), cut into julienne strips
1/2 pound daikon (an Asian radish), cut into julienne strips (about 2 cups)
1/2 pound Napa cabbage, sliced thin (about 4 cups)
2 large garlic cloves, minced
2 teaspoons minced peeled fresh gingerroot

Steps:

  • In a bowl stir together broth, rice wine or Sherry, sugar, cornstarch, and salt until combined well. Cut mushroom caps into 1/8-inch-thick slices.
  • Heat a wok over high heat until hot. Add oil and heat until it just begins to smoke. Stir-fry carrots 3 minutes. Add daikon and stir-fry vegetables 2 minutes. Add mushrooms, cabbage, garlic, and gingerroot and stir-fry 2 minutes, or until carrots are crisp-tender. Stir broth mixture and add to vegetables. Stir-fry vegetables 1 minute.

If you like spiciness and the bitter taste of radish, you'll love this recipe. If not, give it a try anyway, dipped in ketchup, sour cream, miso mayo, jam, or whatever floats your boat.

1 ½ cups grated daikon radish
2 teaspoons salt
1 clove garlic, minced
½ red onion, chopped
1 egg, beaten
½ cup Italian seasoned bread crumbs
½ teaspoon ground black pepper
½ teaspoon paprika
½ teaspoon chile-garlic sauce (such as Sriracha®)
1 ½ cups vegetable oil for frying

Steps:

  • Place the daikon in a large bowl and sprinkle with the salt. Refrigerate for 30 minutes.
  • Drain daikon. Stir in the garlic, onion, egg, bread crumbs, pepper, paprika, and chili garlic sauce. Mix well. Form into 8, small round patties.
  • Pour oil into a large skillet. Heat over medium heat. Fry patties in the hot oil until firm and nicely brown, about 3 minutes per side. Drain on paper towels.

  • Add the Shaoxing wine (if using), oyster sauce, white pepper, sesame oil, salt, water, and the white parts of the scallions. Stir to combine, cover, and turn down the heat to medium. Simmer for 5-8 minutes until tender.
  • Uncover, add in the rest of the scallions, and mix everything well. When the daikon is translucent and tender, the dish is done.
