Deep-Fried Bean Curd With Oyster Sauce image

Provided by Robert Farrar Capon

Categories     dinner, one pot, main course, side dish

Time 25m

Yield 6 servings

Number Of Ingredients 13

Vegetable oil for deep frying
1 pound firm tofu (bean curd), cut into 1-inch cubes
1 tablespoon peanut oil
1 large clove garlic, minced
1 teaspoon Chinese brown bean sauce
2 cups water
4 large ribs bok choy, cut into 1/4-inch slices
1 tablespoon sake or sherry
1/2 teaspoon sugar
2 tablespoons cornstarch mixed with 4 tablespoons cold water
2 tablespoons Chinese oyster sauce
2 scallions, trimmed and cut into 1/4-inch pieces
Fresh coriander leaves

Steps:

  • In a wok, heat the oil for deep frying to 375 degrees, or until a piece of scallion placed in the oil bubbles and sizzles rapidly. Pat the tofu cubes dry with a paper towel. Fry the cubes in the oil for about 5 minutes, or until they are golden brown. Drain on paper towels and set aside. When the cubes are cool, cut each one in half.
  • Pour off the frying oil from the wok. Over high heat, add the peanut oil to the wok, then the garlic and brown bean sauce, and stir-fry for 30 seconds. Add the fried bean curd pieces, the water and the bok choy and bring to a boil. Cover the wok, lower the heat and simmer for 5 minutes. Uncover, raise the heat, add the sake or sherry, the sugar and as much of the cornstarch mixture as is needed to thicken the dish, stirring constantly. Add the oyster sauce and scallions and mix well. Garnish with coriander and serve with plain boiled rice.

MUSHROOM STIR-FRY

Mushroom Stir-Fry image

Who needs meat when you can make this stir-fry using a medley of mushrooms? Shiitake mushrooms have a meaty texture and earthy flavor that is bound to please both vegetarians and carnivores alike! The beech and enoki mushrooms add visual appeal and a mix of textures. The recipe makes just enough sauce to coat the vegetables, but feel free to double the sauce ingredients if you'd like extra to serve over rice or noodles.

STIR-FRIED BEAN CURD WITH FRESH MUSHROOMS

Stir-Fried Bean Curd with Fresh Mushrooms image

Number Of Ingredients 7

4 bean curd, cakes
1 stalk scallion
1/4 pound fresh mushrooms
3 to 4 tablespoons oils
1/4 teaspoon salt
2 tablespoons soy sauce
1/4 teaspoon salt

Steps:

  • 1. Cut each bean curd cake in 6 to 8 pieces or in 1-inch cubes. Cut scallion stalk in 1-inch sections. Slice mushrooms.2. Heat oil. Add salt then scallion, and stir-fry a few times until translucent. Add mushrooms and stir-fry until slightly softened. Then add bean curd stir-fry gently until heated through (2 to 3 minutes). 3. Sprinkle with soy sauce and remaining salt and stir in gently. NOTE: Since bean curd is fragile, vigorous stir-frying will demolish it. Therefore shake or tilt the pan from time to time to baste the bean curd with hot oil or else separately turn the pieces so they can heat through evenly. VARIATIONS: * For the soy sauce, substitute oyster sauce. * Use 4 or 5 whole scallions, cut in 1-inch lengths. * Before serving, sprinkle bean curd with a few drops of sesame oil or garnish with minced raw scallion
