Steps:

  • Cut asparagus at an angle into 1" pieces.
  • Saute asparagus and green onion in oil for 4 minutes.
  • Add mushrooms and cook 1 minute longer.
  • Mix water, corn starch and soy sauce.
  • Stir into asparagus until thick.
  • Add tomatoes and toss.

2 tablespoons shallots, chopped
1 lb fresh asparagus, bottoms snapped, sliced diagonally into 1-inch pieces
2 cups sliced fresh mushrooms
salt & pepper
4 tablespoons coriander, fresh, chopped

Steps:

  • Melt butter/margarine in a wok or heavy skillet. Add mushrooms and sauté, stirring until they are browned evenly.

2 tablespoons oil
1 lb boneless chicken breast, cut into 1/2 inch strips
1 lb asparagus spear, trimmed and cut into 2 inch pieces
1 medium onion, cut into 1/2 inch wedges
3 cloves garlic, minced
3 cups sliced fresh mushrooms
1/4 cup water
1/2 cup purchased stir-fry sauce
1/4 cup oyster sauce

Steps:

  • Cook rice according to package directions.
  • Let 1 tablespoon oil get hot in a large skillet or wok over medium-high heat.
  • Add the chicken and stir-fry for 5-6 minutes or until chicken is not pink.
  • Transfer chicken to a plate.
  • Add the other tablespoon oil to skillet.
  • Stir-fry asparagus, onion, and garlic for 3 minutes.
  • Add mushrooms and stir fry 3 more minutes.
  • Add water, cover and steam 2-3 minutes or until asparagus is tender.
  • In a little bowl, mix together the stir-fry sauce and oyster sauce.
  • Add sauce to skillet and also add the chicken back to the skillet.
  • Stir-fry a minute or so until heated.

1 1/2 pounds pencil-thin asparagus (or substitute small or medium asparagus, split lengthwise)
1 tablespoon vegetable oil
Salt and pepper
3 garlic cloves, minced
1 tablespoon grated ginger
1 serrano or other fresh hot chile, finely chopped
A large handful of basil, mint and cilantro leaves

Steps:

  • Snap off and discard the tough bottoms of each asparagus spear. Cut the asparagus into 2-inch lengths
  • In a wok or cast-iron skillet, heat the oil until nearly smoking. Add the asparagus, season generously with salt and pepper and stir well, making sure the asparagus is coated and glistening with oil. Continue to stir-fry over high heat for about 1 minute, until the asparagus looks bright green and barely cooked. Add the garlic, ginger and chile and stir-fry for 30 seconds more.
  • Transfer to a serving platter and scatter leaves on top. Serve immediately.

(and then make any changes to the recipes once I have tried them) So, I haven't tried this yet, but I will soon! This is a side dish recipe to serve 4 people. It is seasoned with dried thyme, but it says that dill or basil would be great as well! Plus, it can be prepared in 15 minutes!

1/3 cup water
1 teaspoon cornstarch
1/2 teaspoon instant chicken bouillon granules
1/4 teaspoon dried thyme, crushed
1 sun-dried tomato, finely snipped
nonstick cooking spray (Or, you can use cooking oil if you want)
1 lb fresh asparagus, cleaned and cut into 1-inch pieces (approximately 3 cups)
1 1/2 cups fresh mushrooms, sliced (4 ounces)

Steps:

  • In a small bown, stir together the water, cornstarch, chicken bouillon granules, thyme, and snipped dried tomato.
  • Set aside.
  • Spray a large skillet with nonstick cooking spray.
  • (or coat with cooking oil).
  • Preheat over medium heat.
  • Stir-fry asparagus in the hot skillet for 4 minutes.
  • Add the mushrooms; stir-fry for 1 1/2 minutes more.
  • Stir cornstarch mixture; add to the vegetables in the skillet.
  • Cook and stir until thickened and bubbly.
  • Cook and stir for 2 minutes more.
  • Serve immediately.

Hot cooked rice, optional

Steps:

  • In a large skillet or wok, cook beef over medium heat until no longer pink; drain and set aside. In the same pan, stir-fry the asparagus, water chestnuts, mushrooms and garlic in oil for 5 minutes or until crisp-tender. , In a small bowl, combine cornstarch and broth until smooth.
