CREAMY LEMON GRUYERE PASTA



Creamy Lemon Gruyere Pasta image

This creamy lemon Gruyère pasta is so full of flavour that you'll find yourself craving it time and again. It's also extremely easy to make, so you can have a restaurant-quality vegetarian meal on your table in 20 minutes.

250 g (8.8 oz) pasta
1 tablespoon olive oil
20 g (1 tbsp) unsalted butter
4 garlic cloves, crushed
Zest and juice of 1 lemon
2 tablespoon plain flour
400 ml (13.5 fl oz) vegetable stock
100 g (3.5 oz) baby spinach
125 g (4.4 oz) Gruyere cheese
Freshly ground black pepper

Steps:

  • Cook the pasta in salted water according to the instructions on the package and reserve a cup of water before draining.
  • In a large pan, heat the olive oil, then add the butter and allow it to melt. When the butter is foaming, add the garlic and cook for 30 seconds on medium heat until fragrant.
  • Next, add the lemon zest and cook for another 30 seconds, stirring often. Pour the lemon juice and continue to cook, stirring, until half evaporated.
  • Add the flour and stir to combine. Stir continuously (or use a whisk) until you obtain a thick paste.
  • Start adding the stock. Do it gradually, stirring or whisking continuously until you have a thick sauce. Add the spinach and continue to cook for 1 minute.
  • Add half of the cheese and stir to combine. When the cheese has melted, add the rest and stir to combine. Transfer the cooked pasta to the pan and toss it well to combine. Stir in the parsley, season to taste and serve immediately, with some extra lemon zest on top if you like.

400g penne pasta
25g butter
1 onion , thinly sliced
1 garlic clove , crushed
1 tbsp fresh chopped sage , or 1 tsp dried
100g stilton , cubed
handful toasted walnuts , chopped

Steps:

  • Boil the pasta according to pack instructions. In a saucepan, melt the butter, then gently fry the onion until golden. Add the garlic and sage, fry for a further 2 mins, then remove the pan from the heat. Drain the pasta and reserve some cooking water. Stir through the buttery onions, stilton and 2 tbsp cooking water, then sprinkle with the toasted walnuts to serve.

Two steaks feed four in this seasonal pasta dish that is guaranteed to make you feel all warm and cosy

400g penne
2 tbsp olive oil
4 shallots , sliced
2 rump or stirloin steaks , about 200g each
175g stilton , crumbled
100g bag watercress

Steps:

  • Boil the pasta. Meanwhile, heat the oil, add the shallots and gently fry until they are softened and lightly coloured. Remove from the frying pan with a slotted spoon.
  • Increase the heat under the frying pan, season the steaks and fry on each side for 3-4 mins, depending on their thickness and how you like them cooked. Remove from the heat, transfer to a board and leave to rest for a few mins.
  • Drain the pasta, return it to the pan with the shallots and stilton, then heat gently until the cheese starts to melt. Take the pan off the heat. Slice the steak and add to the pan with the watercress. Toss everything together and serve.

Yield Makes 1 large ramekin

200g stilton , rind removed, crumbled
140g butter , softened
2 tsp dry sherry
few green peppercorns in brine

Steps:

  • Put the stilton, 100g of the butter and sherry in a bowl. Season with a few grinds of black pepper, then mash together well with a fork until smooth. Spoon the mixture into a large, sterilised ramekin or ceramic pot.
  • Melt the remaining butter in a small pan. Spoon over the cheese mixture, making sure it's completely sealed. Top with a few green peppercorns and chill for a minimum of 2 hrs, or for up to 2 months.

1 (16 ounce) package penne pasta
2 tablespoons butter
2 tablespoons olive oil
4 skinless, boneless chicken breast halves - cut into thin strips
2 cloves garlic, minced
salt and pepper to taste
1 ¼ cups heavy cream
¼ cup pesto
3 tablespoons grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat butter and olive oil in a large skillet over medium heat. Saute chicken and garlic until chicken is almost cooked. Reduce heat and stir in salt, pepper, cream, pesto and Parmesan cheese. Cook until chicken is no longer pink inside. Stir in cooked pasta.
