STILTON-STUFFED DATES
Steps:
- Preheat oven to 375 degrees F.
- Make a lengthwise cut in each date and gently remove the pit, forming a pocket. Fill each date with 1/2 teaspoon cheese. Cut each piece of bacon in half by width. Take a strip of bacon and wrap it around each date, forming a slight overlap on the bottom (cut side up), and place on a rack within a sheet pan. Bake until bacon is crisp and cheese melts, about 25 minutes. Remove from oven and place on a paper towel-lined plate. Allow to cool slightly and serve.
BLUE CHEESE SAUCE RECIPE
This blue cheese sauce is a bold, creamy, tangy sauce with a hint of garlic that's easy to whip up while your steak is resting.

Steps:
- Melt the butter in a large frying pan over a medium heat.
- Add the chopped shallot and fry for 3-4 minutes, until softened.
- Add the minced garlic and cook for a further 1 minute.
- Add cream and Stilton, and heat over a low heat, stirring often until the Stilton melts and the sauce thickens slightly. This should take about 5 minutes. You can help the Stilton to melt down easier by crushing it with the back of your spoon when stirring.
- Stir in the Worcestershire sauce and pepper.
- You can serve right away, it let it continue to cook over a low heat (stirring often) for a few more minutes if you would like the sauce to thicken up further.

STILTON DATE DIP
From a newsletter I get regularly from grandparents.com, this recipe was described as "A little bite of cheese, a little bite of sweetness, a little bite of crispy & a whole lot of delicious". Just when you think dips have about used up all their originality, along comes a recipe like this to convince you otherwise. (Time includes 5 min to crisp the bacon while you prepare the dates) *Enjoy* !

Steps:
- Using an electric mixer (blender or hand-held blender), combine both cheeses w/salt & pepper.
- When blended, add cream until dip reaches desired consistency.
- Fold in dates & bacon. Serve w/dippers and/or crackers of choice.
- NOTE: Altho the recipe did not suggest this, I feel a chill time to allow the flavor to develop would be ideal . & . I think this would be best if allowed to approach room temp b4 being served. My thoughts, but your choices. :-).
