TUNA & ARTICHOKE PASTA SALAD
I have been making this light, tangy pasta salad ever since I was at the University of Wyoming in the late 1980s. Made with pantry ingredients, it's quick and easy. A nice lunch or summertime dinner with fresh fruit or hearty bread. Sometimes I add halved cherry or grape tomatoes for a little sweetness. Leftovers are just as good! (Prep time does not include cooking time for pasta.)

Steps:
- Combine olive oil, lemon juice, garlic and capers in a small jar and shake to mix.
- In a separate bowl, combine tuna, olives, artickokes and parsley.
- Gently stir in cooked pasta, drizzle with dressing and toss.
- Add salt and pepper and chill briefly if desired.
- Divide into 2 bowls and enjoy!

Steps:
- Cook pasta in boiling, salted water until done.
- Drain and rinse under cold water.
- Mix pasta, tuna (drained) and spring onion in bowl.
- Mix olive oil, vinegar, lemon juice, garlic, and sugar in a cup.
- Spoon pasta mixture onto a plate.
- Arrange egg and tomato around the edge.
- Drizzle on the dressing.
- Scatter olives and basil over the top.
- Season.

FARFALLE TUNA SALAD
I used Barilla plus multi-grain pasta that is Omega rich. Loaded the salad with veggies. This can be a side or a complete meal.

- Cook pasta in salted boil water for 9 minutes add peas for 1 minute and drain well.
- Meanwhile place remaining ingredients in a large bowl tossing to blend.
- Add pasta and toss to coat.
- Chill for at least 2 hours. Garnish with parsley sprig.
- Enjoy.

This recipe is a combination of two other recipes with my own ideas incorportated into it to make it a salad that is also a meal in itself. Be sure to refrigerate overnight and serve it cold.

PESTO TUNA PASTA SALAD
I am always looking for recipes that my boyfriend, Bill, can take to work for his lunch. I like to make sure they include both some protein and carbs, since he does heavy physical labor and needs to be appropriately refueled. I came up with this recipe, which met those requirements, and it tastes great, too! It's simple, quick, and travels well.

Steps:
- Cook pasta according to package directions.
- While pasta cooks, mix tuna, pesto, pepper, mayonnaise, cheese, olives, and lemon juice in a large bowl.
- When pasta is cooked, drain and rinse with cold water.
- Add pasta to tuna mixture and mix well.
- Refrigerate at least 30 minutes before serving.
TUNA PASTA SALAD
I love this salad for a light lunch or as one of the salads when I have a buffet-type meal. Any kind of tuna works well, but I usually use light tuna in oil for this recipe. Light mayonnaise can be used for this recipe. It tastes best when made ahead.
