SWEET POTATO, BACON, AND VEGGIE SKILLET
When you're in the mood for an easy dinner, this one-skillet frittata pretty much cooks itself with minimal attention.

- Preheat the oven to 325 degrees F (165 degrees C).
- Heat oil in a 10-inch, oven-safe skillet over medium heat. Add broccoli and onion. Cook, stirring occasionally, until broccoli is tender and onion is just translucent, about 5 minutes. Add garlic; cook 30 seconds. Stir in sweet potato and spinach; cook until spinach wilts, about 1 minute. Stir in bacon.
- Whisk together eggs, half-and-half, chopped sage, salt, and pepper in a bowl. Pour mixture over vegetables in skillet. Gently mix to evenly distribute egg mixture.
- Transfer the skillet to the preheated oven and bake until eggs are completely set but not overcooked, about 25 minutes.
- Let stand 5 minutes before serving. Garnish with sage leaves.

- Preheat your oven to 350 degrees and spray a sheet pan with vegetable oil spray.
- In a large mixing bowl whisk together butter, cinnamon, salt, and nutmeg.
- Toss the potatoes into the butter mixture.
- Cut the bacon slices in half.
- Wrap each piece of sweet potato in bacon and roll in brown sugar, secure with toothpick.
- Place onto the baking sheet.
- Bake for 35-40 minutes or until the bacon is crispy and the sweet potatoes are tender (this will vary if your cubes are not 1 inch).

- Heat oven to 220C/200C fan/gas 7, oil the sweet potatoes, then put them straight on the oven shelf and roast for 45 mins or until tender all the way through when pierced with a knife.
- Meanwhile, mash the avocado with the lime juice in a small bowl, then stir in the chilli, tomatoes, coriander and onion.
- Cut the potatoes in half and top with the beans and guacamole. Serve with the lime wedges for squeezing over.

- Preheat oven to 400 degrees F. Bake bacon according to these directions. Remove to a paper towel–lined plate and lightly pat dry. Once cool enough to handle, dice and set aside.
- If necessary, move the racks to the upper and lower thirds of the oven. Increase the oven temperature to 425 degrees F. Line two rimmed baking sheets with foil (if reusing one of the bacon sheets, change out the foil for a fresh piece). Brush sheets with 1/2 tablespoon olive oil each. With a mandoline or very sharp knife, slice the sweet potatoes into 1/2- to 1/4-inch slices. Arrange the slices in a single layer on the oiled baking sheets, then brush tops with the remaining 1 tablespoon olive oil. Sprinkle with 1 teaspoon salt and black pepper. - Meanwhile, in a small bowl, combine the avocado, lime juice, remaining 1/4 teaspoon salt, and smoked paprika. Mash lightly with a fork, leaving the mixture slightly chunky. Set aside.
- Transfer the baked sweet potato slices to a serving plate. Top each with a dollop of the avocado mixture, chopped bacon, and cilantro. Serve warm or at room temperature.
