MUSSELS WITH ANGEL HAIR PASTA
Steps:
- Put olive oil into a hot pan. Add mussels and garlic. Saute all together until garlic is roasted. Add green onions and season with salt and pepper. Add tomato juice, wine and basil. Cover and let cook until all the mussels have opened, about 5 minutes.
- In a separate pan cook the pasta in boiling water until al dente, then remove and strain out all the water. Add the pasta to the mussels and mix a couple times by flipping and stirring. Transfer to a bowl and serve.
STEAMED MUSSELS WITH TOMATOES OVER ANGEL HAIR PASTA

- 1. Wash the mussels and remove the "beard." Place the mussels, with just the water that clings to them, in a covered pot over high heat until they just open, about 2 to 3 minutes. Remove from the heat and set aside. 2. Meanwhile, bring a gallon of well-salted water to a boil. 3. Remove the mussels from their shells. Discard the shells, reserve the mussels in a bowl and reserve the juice in the pot. 4. Heat the juices over medium-high heat and reduce the quantity by half. 5. Add the pasta to the boiling water. 6. Add the tomatoes to the mussel juice and simmer. Season with salt and pepper. Add the parsley. 7. Cook the pasta until it is al dente, about 6 to 8 minutes. 8. In a large bowl, toss the pasta with the tomato mixture and the mussels. Serve immediately.

This is a recipe from Cooking Light. I haven't tried it yet but the ingredients sound wonderful. Add some crusty bread and a glass of vino and you're all set!

Steps:
- Cook pasta per directions, omitting salt and fat. Drain and keep warm.
- Heat oil in a large nonstick skilled over medium-high heat.
- Add tomato, garlic, and pepper to pan; saute 1 minute.
- Stir in wine and juice; bring to a boil.
- Add clams. Cover and cook 7 minutes or until shells open. Discard any unopened shells.
- Remove clams from pan with slotted spoon; add butter to pan, stirring until butter melts.
- Place 1 cup pasta in each of 4 shallow bowls; top each serving with 6 clams, 1/2 cup broth, and 1 teaspoon parsley.
