This recipe for Thai Fish Curry with Coconut Milk is brimming with seasonal veggies and bursting with delicious Thai flavors. A quick and easy dinner, perfect for both weeknights and special occasions.

1 - 1 1/2 pounds firm white fish- Halibut, Alaskan Cod, haddock, Black Cod, Sea Bass (thicker cuts are best)
½ teaspoon salt
one lime- zest and juice
2-3 tablespoons coconut or olive oil
2 large shallots or 1 small onion- finely diced ( red, white or yellow)
4-6 garlic cloves
1- 2 fresh hot chilies- finely diced ( jalapeno, serrano, red chili)
3 tablespoons lemongrass, very finely chopped
2 teaspoons turmeric root, grated (or sub 1 teaspoon ground)
1 teaspoon fresh ginger, grated
1-3 tablespoons Thai Curry Paste (optional) red, green, or yellow
2 cups chicken or fish stock
8 kaffir lime leaves
1/2 teaspoon salt
2 cups carrots, diced (or sub potatoes)
1 red bell pepper, diced
1 14-ounce can coconut milk ( liquid and solids)
1 tablespoon fish sauce
squeeze of lime
2 cups green beans, or asparagus, snap peas or snow peas
½ cup chopped basil, (Thai basil is great!) cilantro, scallions

Steps:

  • Cut the fish into large 2-inch chunks, pat dry and place in a bowl. Season with salt, lime zest from one lime and 1 tablespoon lime juice, and massage lightly to coat. Set aside.
  • In an extra-large saute pan, heat the coconut oil over medium heat. Add the shallots and saute until golden, about 4 minutes. Add the garlic, lemongrass and fresh chilies. Saute 3-4 more minutes, until fragrant. Turn heat to low. Grate the ginger and turmeric and add the Thai Curry paste if using, saute 1 minute. Add the chicken stock, kaffir lime leaves , salt, carrots and bell pepper. Cover, bring to a simmer and simmer gently for 5 minutes until the carrots are tender.
  • Once tender, stir in the coconut milk and fish sauce, and a generous squeeze of lime juice- start with half a lime, add more to taste.
  • Taste it- coconut broth should be salty, lime-y and a little spicy- and adjust to your taste. Add more fish sauce, Thai Curry paste, garlic chili paste, be bold here -keeping in mind all the flavors will mellow out with the addition of the fish, veggies and with it being served over rice.
  • Nestle in the fish, and quick cooking veggies. Simmer gently over medium low heat, spooning the coconut broth over the top, or turning the fish over after the bottom half is cooked and becomes opaque, about 3 -4 minutes. You can also place this in a warm 350F oven to fish cooking.
  • Garnish with basil or Thai basil, or cilantro and lime wedges.
  • Serve over rice or cauliflower rice.

Steamed Fish Curry with Coconut, Turmeric, Lemongrass and Kaffir Lime Leaves (Amok trey) image

Amok trey is a steamed fish curry recipe infused with coconut, turmeric, lemongrass and kaffir lime leaves. Inspired by Rick Stein's travels in Cambodia.

  • For the amok curry paste, put the lemongrass, garlic, shallots, turmeric, crushed dried chillies, galangal or ginger, kaffir lime leaves, peanuts and 6 tablespoons of the coconut milk into a mini food processor and blend into a very smooth paste. Cut the fish across into 2.5cm-wide strips and set aside. Heat the oil in a wok or frying pan over a medium heat, add the curry paste and fry gently, stirring, for 2 minutes until it starts to smell aromatic. Add the sugar, fish sauce, l teaspoon salt, star anise, kaffir lime leaves and the rest of the coconut milk. Remove from the heat and leave to cool and then stir in the beaten eggs, the fish and the herb of your choice. Spoon the amok into 4 x 350ml heatproof bowls or one shallow heatproof dish that will fit into a steamer, making sure, if using individual dishes, that a piece of star anise goes into each. Bring 2.5cm water to the boil in a large shallow pan and then place some sort of trivet in the base: a petal steamer, a criss-cross mat of wooden chopsticks or a stackable steamer. Put the dishes into the steamer, cover the pan with a lid and cook over a low heat for 15 minutes until the custard is just set and the fish is cooked. Pierce one piece with a skewer: if you meet no resistance, it's done.

THAI STEAMED SEA BASS WITH LIME AND GARLIC SAUCE



Thai Steamed Sea Bass With Lime and Garlic Sauce image

This simple steamed sea bass is delicious served with the sweet, sour, spicy and savoury sauce!

2 x 700g (1 ½ lb) sea bass
20 kaffir lime leaves
250ml (1 cup) chicken stock
2 tbsp palm sugar
20 cloves garlic - finely chopped
6 red bird's eye chillies (more or less to taste) finely chopped
150ml (about 8 tbsp) freshly squeezed lime juice
6 tbsp Thai fish sauce
3 tbsp coriander - finely chopped

Steps:

  • Make three or four shallow slits on each side of the sea bass. Place the kaffir lime leave in the cavity and place on a steaming tray. If you have a fish steamer as shown, that is the best option but any steamer that will hold the fish is fine.
  • Place the steamer over high heat and steam the fish for about 12 minutes or until cooked through.
  • While the fish is cooking, heat the chicken stock in a sauce pan over medium high heat and bring to a rolling simmer. Add the palm sugar and stir it into the stock until it dissolves. Turn off the heat and then add the chopped garlic. The sharp flavour of the garlic will mellow in the hot stock and become softer.
  • Stir in the chopped chilies followed by the fish sauce and lime juice and coriander and give it a good stir. Set aside
  • Check the fish to see if it is cooked through. When checking sea bass for doneness, the meat should easily come off the bone. If it is sticking, steam it for about another minute or so.
  • Place the cooked fish on a heated platter and spoon some of the solid ingredients of the sauce, like the garlic, chillies and coriander over it. Then pour the remaining sauce over the fish. It is not necessary that the sauce be piping hot. This is more of a salsa than a sauce but I do lime mine to be warm.
  • Serve immediately and enjoy.

This is simple, perfect and low fat as well. I use orange roughy but any firm white fish is suitable. My friend Maureen gave me this recipe. If kaffir leaves are not available lime or lemon slices would work.

Mild flavored, flaky fish fillets. Any number of different types of fish will work, and you can increase the recipe easily. Try halibut, cod, salmon, red snapper, trout, etc. Serve with a white and wild rice blend.

6 (6 ounce) halibut fillets
1 tablespoon dried dill weed
1 tablespoon onion powder
2 teaspoons dried parsley
¼ teaspoon paprika
1 pinch seasoned salt, or more to taste
1 pinch lemon pepper
1 pinch garlic powder
2 tablespoons lemon juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cut 6 foil squares large enough for each fillet.
  • Center fillets on the foil squares and sprinkle each with dill weed, onion powder, parsley, paprika, seasoned salt, lemon pepper, and garlic powder. Sprinkle lemon juice over each fillet. Fold foil over fillets to make a pocket and fold the edges to seal. Place sealed packets on a baking sheet.
  • Bake in the preheated oven until fish flakes easily with a fork, about 30 minutes.
