Time 15m

Number Of Ingredients 7

13.5 oz unsweetened coconut milk (Ours comes in a can)
2 oz Whole milk (or water for dairy free option)
1 tsp vanilla extract
2 tsp coconut extract
5 large egg yolks (room temperature)
3 oz sugar
3 Tbsp cornstarch

Steps:

  • Pour coconut milk into a saucepan and bring to a simmer over medium-high heat, whisking constantly so it doesn't burn.
  • Whisk together the yolks, sugar, milk and cornstarch in a large bowl and set aside.
  • Add 1/3 of your hot milk to the egg mixture and whisk to combine. Don't add all the milk or you could curdle the eggs. Slowly whisk the rest of the warm milk into the egg mixture then return the mixture to the pot over medium heat and bring to a simmer, whisking constantly, until thickened.
  • Scrape the mixture into a bowl and whisk in coconut and vanilla extract. Whisk to combine.
  • Cover with plastic wrap and refrigerate until cold, at least 2 hours.
  • Optional: Fold in 1/4 cup stabilized whipped cream for a lighter texture once mixture is cooled.

Little Steamed Ginger Puddings with Coconut Custard image

Provided by Food Network

Categories     dessert

Time 50m

Yield 4 servings

Number Of Ingredients 11

3 1/2 ounces (7 tablespoons) unsalted butter, softened, plus extra for coating ramekins
3 1/2 ounces caster sugar (superfine)
2 eggs, lightly beaten
4 1/2 ounces crystallized ginger, finely chopped, plus more for garnish
1 cup self-rising flour, sifted
5 ounces milk
Coconut custard, for serving, recipe follows
14 ounces coconut cream
2 egg yolks
2 tablespoons caster sugar (superfine)
1 teaspoon cornstarch

Steps:

  • Lightly butter 4 (8-ounce) pudding basins. In the bowl of a heavy-duty mixer or in a medium bowl using a hand held mixer, cream the butter and sugar together until the mixture is pale and creamy, about 5 minutes. Add the eggs, a little at a time, beating well after each addition. Stir in the crystallized ginger. Fold in a few spoonfuls of the sifted flour into the bowl, alternating with spoonfuls of the milk, until both ingredients are used up and you have a smooth batter. Divide the pudding among the basins.
  • Quarter a sheet of parchment paper and fold a thin pleat down the middle of each mini-sheet. Place a piece over each basin and tie them down with string. Place the puddings in a steamer over a saucepan of gently simmering water and steam for 40 minutes or until the puddings are cooked through. Check the water level in the saucepan from time to time, adding more as needed. Switch off the heat and serve the puddings with the coconut custard and a sprinkling of crystallized ginger.
  • In a small pan, whisk together the coconut cream, egg yolks, sugar, and cornstarch. Stir, without boiling, over low heat for 5 to 10 minutes, or until the custard has thickened enough to coat the back of your wooden spoon.

STEAMED COCONUT CUSTARD

Steamed Coconut Custard image

Palm sugar, or jaggery, is dark, unrefined sugar made from a variety of sources, including the sap of the palm tree. It can be chunky and must be broken up; dark brown sugar is a nearly perfect substitute. This dish is great with slices of ripe fresh mango.

Yield makes 4 servings

Number Of Ingredients 4

4 eggs
1/2 cup palm or brown sugar
1 cup thick coconut milk, preferably homemade (page 584)
3 cups steamed Sticky Rice (page 508)

Steps:

  • Bring 2 inches of water to a steady simmer in the bottom of a large steamer. Whisk the eggs in a large bowl just until beaten. Whisk in the sugar until the mixture is smooth, then add the coconut milk and whisk again until well blended.
  • Pour the mixture into a 9-inch cake pan or similar container, cover with plastic wrap, and place in the steamer. Steam until the custard is barely set, still jiggling slightly, about 20 minutes. Remove and cool to room temperature.
  • To serve, place a portion of sticky rice in a bowl and spoon a bit of the cooled custard over it.

Time 1h15m

Number Of Ingredients 9

175g unsalted butter , softened, plus extra for the basins
6 tbsp raspberry jam
175g caster sugar
3 large eggs
150g self-raising flour
25g desiccated coconut , blitzed in a small food processor until fine
1 tsp vanilla extract
2 tbsp coconut cream , plus 2 tbsp to serve (optional)
500g thick custard , to serve

Steps:

  • Butter six small pudding basins and spoon 1 tbsp jam into the bottom of each one.
  • Put the butter and sugar in a medium bowl and beat with an electric whisk until pale and fluffy. Beat in one of the eggs followed by a spoonful of the flour, then continue until all the eggs have been incorporated. • Warm the custard with the remaining 2 tbsp coconut cream, if using, and pour into shallow bowls. Run a knife around the sides of the basins and carefully turn out the sponges onto the custard.

Number Of Ingredients 7

1/2 cup sweetened shredded coconut
1 1/2 cups whole milk
1/4 cup sugar
1 envelope (1/4 ounce) unflavored gelatin
1 cup half-and-half
1/2 teaspoon vanilla extract
1/8 teaspoon salt

PINEAPPLE & CHERRY SPONGE WITH COCONUT RUM CUSTARD

Pineapple & cherry sponge with coconut rum custard image

Combine the classic flavours of coconut, pineapple and rum in this retro pudding that comes with a fabulous custard. A perfect winter dining centrepiece

Provided by Cassie Best

Categories     Afternoon tea, Dessert, Treat

Time 2h50m

Number Of Ingredients 13

140g coconut oil , plus extra for the pudding basin
432g can pineapple rings in juice
100g glacé cherries , halved
140g self-raising flour , plus 1 tsp
140g white caster sugar
2 large eggs
1 tbsp golden syrup , warmed
400g can coconut milk
1 egg , plus 1 yolk
2 ½ tsp cornflour
50g white caster sugar
2 tsp white rum
1 tsp vanilla extract

Steps:

  • Line the base of a 1-litre pudding basin with a disc of baking parchment, then oil the parchment. Drain the pineapple and save the juice. Pat the rings dry with kitchen paper, then use them to line the base and sides of the basin, cutting the last couple to fill any gaps. Push a halved cherry in each pineapple hole and any other gaps - you should have some left over.
  • Heat oven to 180C/160C fan/gas 4. Boil the kettle. Melt the remaining coconut oil in a pan or the microwave. While it cools, put 140g flour and the sugar into a bowl and stir together. Toss the remaining cherries through 1 tsp flour.
  • Pour the coconut oil into the flour mixture along with the eggs, cherries and 2 tbsp pineapple juice. Fold everything together with a spatula and gently scrape into the pudding basin. Cover the pudding with a sheet of baking parchment, then a sheet of foil, with a folded pleat down the centre. Stand in a deep roasting tin on the middle shelf of the oven and pour the kettle-hot water into the tin, to come about half way up the sides of the basin. Bake for 2 hrs 15 mins. Insert a skewer into the centre of the pudding - it will come out clean if it's cooked, but if not, re-cover and return to the oven for 10 mins, then check again.
  • To make the custard, pour the coconut milk into a small pan and warm it, but don't let it boil. Whisk the egg, yolk, cornflour, sugar and rum in a jug. Whisk in the warm coconut milk, then pour the liquid through a sieve back into the pan. Return to a low-medium heat and stir constantly until thickened. Stir in the vanilla.
  • To serve, carefully turn it out onto a plate, brush the pudding with the warmed golden syrup, then serve hot with the warm coconut custard.
