COCONUT RICE WITH FRESH GINGER



Coconut Rice With Fresh Ginger image

An easy, slightly tropical rice dish that tastes like vacation feels.

2 cups white jasmine rice
1 13-ounce can coconut milk, well shaken
1 tablespoon grated fresh ginger, or 1 teaspoon powdered ginger ((peel the fresh ginger before grating))
1 teaspoon kosher salt
2 tablespoons coconut sugar or plain white sugar
1 1/2 cups cold water
Garnishes, optional: thinly-sliced scallions, cilantro leaves, sliced hot peppers, large flaked coconut

Steps:

  • Rinse the rice under cold water for several minutes in a colander, or by swishing it around in a pot of cold water, then replacing the water and repeating several times, until the water runs more clearly and looks less starchy.PRO TIP: Rinsing the rice removes some of the excess starch. This will make your finished rice fluffier and not gummy.
  • In a medium-sized sauce pot, stir together the rinsed rice, coconut milk, water, grated ginger, sugar, and salt.
  • Bring to a boil, then immediately lower the heat to low. Simmer, covered, until cooked, about 20 minutes, stirring once about three-quarters of the way through, scraping the bottom.
  • Fluff the coconut rice with a fork. Serve hot with any garnishes.

  • Saute 2 tablespoons minced ginger in a saucepan with butter. Add 1 cup rinsed basmati rice, 1 cup coconut milk, 1 cup water and a pinch of salt. Bring to a boil, then reduce heat; cover and simmer until the liquid is absorbed, 15 minutes. Let stand 10 minutes off the heat; fluff with a fork. Garnish with cilantro and cashews.

1 1/2 cups coconut milk
1 cup chicken broth
1 teaspoon kosher salt, more to taste
3 scallions, thinly sliced
2 tablespoons finely chopped ginger
Fresh red chile, sliced, for garnish (optional)

Steps:

  • Place rice in a fine strainer, and rinse with cold water until water runs clear. Transfer to a medium saucepan. Add 1 cup water, coconut milk, chicken broth and salt. Cover, and place over medium-high heat. Bring liquid to a boil, then reduce and simmer until liquid has been absorbed and rice is tender, about 15 minutes.
  • Remove from heat, and stir in scallions and ginger. Add a little more coconut milk if rice is too dry. Season to taste with salt. Serve.

1 (14 ounce) can coconut milk (can use reduced-fat)
2 3/4 cups chicken stock or 2 3/4 cups water
4 teaspoons gingerroot, minced
1 teaspoon salt
1 pinch pepper

Steps:

  • In a pot with a tight-fitting lid combine all ingredients.
  • Bring to a boil over medium-high heat, cooking uncovered; stir occasionally.
  • When rice boils, cover pot and reduce heat to low.
  • Cook for 45 minutes (do NOT uncover or stir).
  • Remove from heat and let sit with lid on for 10 minutes.
  • Microwave Directions: In a casserole dish with a lid combine all ingredients. Microwave, covered, for 5 minutes on HIGH. Microwave for 30 minutes at 50% power. Let sit with lid on for 10 minutes.

2 cups brown rice
4 1/4 cups water
1 teaspoon salt
1 teaspoon pepper
1 bay leaf
1/2 teaspoon thyme

Steps:

  • Heat oil in a large pot over medium-high heat.
  • Add rice and stir until it begins to crackle, about two minutes.
  • Add water and seasonings.
  • Cover pot, bring to a boil and reduce heat to a low simmer.
  • Cook for 45-55 minutes until rice is fluffy and has absorbed all the water.

This rice bowl dinner is inspired by the Island Bowls that Chef Rawlston Williams serves at The Food Sermon in Crown Heights, Brooklyn. Originally from the Caribbean island nation of St. Vincent and the Grenadines, Rawlston takes inspiration from West Indian flavors and techniques to build his modern fast-casual bowls. We love how he pours coconut broth around the outside of a rice bowl, and borrowed that technique (but not his recipe), then simplified and streamlined a home cook-friendly version. Spreading mayonnaise on top of the salmon fillets helps the spiced panko stay put and keeps the fish moist while it roasts.

3 Tbsp. virgin coconut oil
1/2 cup panko (Japanese breadcrumbs)
1/2 tsp. freshly ground black pepper
1/2 tsp. smoked paprika
1/4 tsp. cayenne pepper
1 1/4 tsp. kosher salt, divided
4 (4-6-oz.) salmon fillets
2 Tbsp. mayonnaise
For the Broth, Beans and Greens, and Assembly:
1 (14.5-oz.) can coconut milk
2 Tbsp. finely grated ginger (from one 3" piece)
1 tsp. sugar
1 1/2 tsp. kosher salt, divided
1 Tbsp. fresh lime juice
2 Tbsp. virgin coconut oil
1 (14.5-oz.) can chickpeas, kidney beans, or black beans, drained, rinsed
1 bunch curly kale, stems removed, torn into small pieces
4 cups steamed rice
Lime wedges (for serving)

Steps:

  • Cook the Salmon:
  • Preheat oven to 400°F. Heat oil in a large skillet over medium until melted. Add panko, pepper, paprika, cayenne, and 1/2 tsp. salt. Cook, stirring constantly, until panko is golden brown, 2-3 minutes. Transfer to a paper-towel-lined plate. Wipe skillet clean; reserve for beans and greens.
  • Line a quarter sheet pan or other small rimmed baking dish with parchment paper, then arrange salmon fillets skin side down; season with remaining 3/4 tsp. salt. Using a small spoon or offset spatula, spread mayonnaise across salmon, then sprinkle spiced panko over, pressing lightly to adhere. Roast until salmon is opaque, 8-10 minutes.
  • Make the Broth and Beans and Greens and Assemble:
  • Heat coconut milk, ginger, sugar, 1 tsp. salt, and 1/4 cup water in a small pot over medium and bring to a boil. Immediately remove from heat and stir in lime juice.
  • Heat oil in reserved skillet over medium until melted. Add beans and kale, then cover pan and cook, stirring once halfway through, until kale is wilted, 2-3 minutes. Season with remaining 1/2 tsp. salt and stir to combine.
  • Divide rice among bowls, then top with beans and greens mixture. Using a fish spatula, lift each fillet up off its skin-the skin will stick to the paper-and arrange in each bowl. Pour in coconut broth. Serve with lime wedges alongside.
