CEYLON CURRY OF OYSTERS

This recipe appeared in The Times in an article by Charlotte Hughes. In Hughes's original recipe, she called for three bay leaves; I used only one. And since chilies are now commonly available, I used a serrano rather than the sweet green pepper that Hughes suggested.

2 tablespoons butter or coconut oil
4 small shallots, finely chopped
1 clove garlic, minced
1/2 serrano or Thai chili, seeded and minced
1 tablespoon curry powder
1 large pinch turmeric
1 cinnamon stick
3 cloves
1 bay leaf
1 cup coconut milk
Salt
12 oysters, shucked, liquor reserved
Juice of 1/2 lemon

Steps:

  • In a medium saucepan over medium heat, melt the butter. Add the shallots, garlic and chili, and sauté until softened and starting to brown, 2 to 3 minutes. Stir in the curry powder, turmeric, cinnamon stick, cloves and bay leaf and cook for 1 minute.
  • Reduce heat to low and add the coconut milk and 1/2 teaspoon salt. Simmer for 3 minutes. Add the oysters and their liquor; simmer until the oysters are just firm, 3 to 4 minutes. Take the pan off the heat and add lemon juice and salt to taste. Serve over rice -- the rice in the fish recipe that follows would go well -- or on hoppers (see the recipe at nytimes.com/magazine).

I have baked, grilled, steamed on the stovetop, and even air fried oysters, but steaming in the Instant Pot® is hands down the best method. They are easy to open up and tender without any rubbery texture whatsoever.

1 cup water
20 fresh oysters in shells, rinsed and scrubbed clean
2 teaspoons Mexican-style hot sauce (such as Valentina®)
½ teaspoon dried parsley flakes
4 tablespoons unsalted butter, melted

Steps:

  • Pour water into a multi-functional pressure cooker (such as Instant Pot®) and set trivet inside. Place oysters on the trivet. Close and lock the lid. Select Steam function according to manufacturer's instructions; set timer for 2 minutes. Allow 15 minutes for pressure to build.
  • Meanwhile, stir hot sauce and parsley into the melted butter until well combined.
  • Release pressure using quick release according to manufacture's directions, 3 to 5 minutes.
  • Carefully open the oysters using a spoon; set on a serving plate. Spoon butter over the top.

12 shot glasses
1/2 English cucumber, peeled and fine brunoise
1 dozen kumamotos, shucked, save liquor in the shell
12 tablespoons top quality, chilled sake
1 lemon, zested

Steps:

  • Fill each shot glass with 1/2 tablespoon cucumber. Top with oyster and its liquor. Top that with 1 tablespoon chilled sake and garnish with zest. Serve in a bed of crushed ice.

WHOLE STEAMED FISH

1 (5 to 6 pound) black cod, gutted, head and tail on
1/4 cup ginger, julienne
1/4 cup scallions, julienne
Cabbage for lining steamer
2 tablespoons soy sauce
Peanut oil, heated to simmer

Steps:

  • Score the skin on the fish. Place some ginger and scallions inside the cavity, the rest on the skin. Put fish in a steamer lined with cabbage leaves. Steam for 10 minutes, or until the fish is fully cooked. Pour 1 to 2 tablespoons of soy sauce over fish, followed by hot peanut oil.
  • OTHER STUFF: Warm Shaoxing to drink Mao Tai to drink Red and white wine Jasmine tea

SHIITAKE STUFFED STEAMED STRIPED BASS FLASHED WITH CURRY OIL



Shiitake Stuffed Steamed Striped Bass Flashed with Curry Oil image

1/4 cup ginger julienned
1/4 cup scallion julienned
2 cups Sauteed shiitake mushrooms (in 1/2 tablespoon minced garlic)
Salt and white pepper to taste
4 large napa cabbage leaves for steamers

Steps:

  • Score both sides of the bass with a sharp knife. Open bass and lay out skin down. Season well. Spread on a thin layer of shiitakes followed by some ginger and scallions. Fold bass back together and place in steamer lined with napa cabbage leaves. Steam for 10 minutes until fish is fully cooked. Drizzle a little soy syrup and flash with hot curry oil.
  • Combine all and reduce at a simmer until a syrup consistency is achieved, about a 60 to 70 percent reduction. Let cool.
  • Make paste and slowly add oil. Let stand for 1 hour to settle. Use top, yellow oil for garnish.

SAUTEED LETTUCE AND OYSTERS



Sauteed Lettuce and Oysters image

Canola oil to cook
2 tablespoons ginger, julienne
2 heads iceberg lettuce, torn into large pieces
2 tablespoons oyster sauce
1 pint shucked oysters
1 teaspoon white pepper
2 teaspoons salt
1 tablespoon butter

Steps:

  • In a hot wok coated with oil, add the ginger and fry until golden brown. Add the lettuce and stir-fry until soft. Add the oyster sauce, oysters and season with salt and pepper. Stir-fry for 30 seconds then add the butter. Check for seasoning.

FLASHED-STEAMED OYSTERS ON TRUFFLED LETTUCE FONDUE



Flashed-Steamed Oysters on Truffled Lettuce Fondue image

1 dozen wild oysters (large Rhode Island)
1 tablespoon butter
2 minced shallots
3 cups iceberg lettuce, fine julienne
1 cup heavy cream
1/2 tablespoon light soy sauce
1 small fresh black truffle, minced
2 tablespoons scallions, superfine slivers
1 tablespoon ginger, superfine julienne
1/2 cup canola oil
1 tablespoon white truffle oil
Salt and black pepper, to taste

Steps:

  • Preheat a steamer. Shuck the oysters and loosen from bottom shell. In a saucepan on medium heat, melt the butter and saute the shallots. Add the lettuce and stir until 'melted'. Add the cream and simmer. Reduce by 50 percent. Add the soy and truffles. Check for seasoning. Set aside to cool. When cool, lift each oyster and place 1/2 tablespoon of lettuce mix under each oyster. Top each oyster with scallions and ginger. Place oysters in the steamer and steam hard for 5 to 7 minutes. Meanwhile, in a small saucepan, heat the canola and truffle oils until very hot. Remove oysters from the steamer and place on a large platter lined with coarse salt. Spoon hot oil on each oyster and serve immediately.
  • Suggested Wines: Veuve Royale Brut, French Sparkling Wine; Tablas Hills, Paso Robles Red Wine; Cuvee Rouge, 1995 (Grenache, Syrah, Mourvedre blend)

1/2 cup boiling water
Butter or margarine, melted, if desired

Steps:

  • Discard any broken-shell or open (dead) oysters. Scrub remaining oysters in cold water, removing any barnacles with a dull paring knife.
  • Place half of the oysters in a steamer with boiling water. Cover and steam 5 to 8 minutes, removing oysters as they open. Discard any unopened oysters. Repeat with remaining oysters.
  • Serve hot oysters in shells with butter.
