BACON STEAK WITH CARAMELIZED BUTTER



Bacon Steak with Caramelized Butter image

Number Of Ingredients 6

2 slices bacon
2 (6 -ounce) eye-of-round steaks
2 tablespoons vegetable oil
2 tablespoons firmly packed brown sugar
2 tablespoons butter, softened
2 tablespoons chipotle mustard (Recommended: Silver Spring)

Steps:

  • Wrap 1 slice of bacon around the edge of each steak, and secure with a wooden pick.
  • In a medium skillet, heat oil over medium-high heat. Cook steaks for 4 to 6 minutes per side, or until steaks reach desired degree of doneness.
  • In a small bowl, combine brown sugar, butter, and chipotle mustard. Spread on steaks, and cook briefly to melt sauce. Serve immediately.
  • Note: Remove wooden picks from steaks before serving.

BACON STEAK WITH CORIANDER, SMOKED OYSTER MUSHROOMS AND THYME BROWN BUTTER



Bacon Steak with Coriander, Smoked Oyster Mushrooms and Thyme Brown Butter image

Number Of Ingredients 10

2 teaspoons ground star anise
1 teaspoon ground clove
1 teaspoon freshly ground black pepper
4 pieces slab bacon (about 4-ounces each)
1 cup coriander seeds
2 cups oyster mushrooms
1 stick (4 ounces) plus 1 tablespoon unsalted butter
Kosher salt and freshly ground black pepper

2 teaspoons fresh thyme leaves, minced

Steps:

  • Preheat the oven to 300 degrees F.
  • In a small bowl, combine the star anise, clove, and black pepper. Dust each piece of bacon with the spices.
  • Heat a large, oven-safe saute pan over low heat until hot. Add the seasoned bacon and cook for 10 minutes. Transfer the pan to the preheated oven and cook for another 10 minutes.
  • Place a large saute pan on the stovetop. Add the coriander to the pan and then place the metal cooling rack on top of the pan. Scatter the mushrooms in the steamer basket and place the basket on top of the cooling rack. Cover the saute pan, cooling rack, and steamer basket with aluminum foil. Turn the burner on low heat and allow the mushrooms to smoke for 10 minutes. Carefully remove the steamer basket and metal rack from the pan. Dump out the coriander. Place the pan over medium heat, add 1 tablespoon butter and the smoked mushrooms. Saute the mushrooms until crispy, about 6 to 8 minutes. Add salt, and pepper, to taste.
  • Remove the mushrooms from the pan, and in the same pan add 1 stick butter. Melt the butter over medium heat until the foam subsides and butter just begins to turn brown. Stir in the thyme and cook, stirring, until the butter is golden brown. Season with salt and pepper.
  • Remove the bacon steaks from the oven. Pour the browned butter over the steaks and serve each with mushrooms on the side.

TOMATO STEAK WITH BAKED GOAT CHEESE AND HERB SALAD



Tomato Steak with Baked Goat Cheese and Herb Salad image

1/4 cup fine dried bread crumbs
Gray salt
Freshly ground black pepper
1 large egg
4 rounds fresh goat cheese, about 2 ounces each
4 thick, ripe beefsteak tomato slices
2 tablespoons extra-virgin olive oil, plus more for the salad
2 cups lightly packed mixed tender fresh herb leaves such as basil, chervil, tarragon, Italian flat-leaf parsley, chives (1-inch lengths), or young cress
Red wine vinegar

Steps:

  • In a small, shallow bowl, mix the bread crumbs with salt and pepper, to taste. In another small, shallow bowl, beat the egg just until blended. Dip each goat cheese round in the egg, and then in bread crumbs, patting the crumbs in place. Cover and refrigerate the coated cheese rounds for about 15 minutes.
  • Center the tomato slices on 4 salad plates and season with salt and pepper.
  • Heat a large nonstick skillet over moderately high heat and pour in 2 tablespoons olive oil. When the oil is almost smoking, add the cheese rounds. Cook until lightly browned, about 45 seconds. Turn them over and cook on the other side until the cheese just feels quivery, about 45 seconds longer, depending on the thickness of the rounds. Place a cheese round on each tomato slice.
  • In a bowl, toss the herbs with a light drizzle of olive oil, a splash of red wine vinegar, and salt and pepper, to taste. Mound the herbs on top of the cheese, dividing them evenly. Serve immediately.
  • Michael's Notes: This salad looks best when the tomato slice and the goat cheese slice are about the same size. So if you can only find goat cheese in small logs, you may want to serve 2 goat cheese rounds to each diner and perch them on slices of smaller tomatoes.
  • Be sure you take all the stems off the herbs carefully so your guests can enjoy just the soft leaves.

1 beef top sirloin steak (1-1/4 inches thick and 1-1/2 pounds)
1 tablespoon olive oil
3 teaspoons Creole seasoning
2 large tomatoes, chopped
1 can (15 ounces) cannellini beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
3 green onions, chopped
1/4 cup minced fresh cilantro
2 teaspoons grated lemon zest
2 tablespoons lemon juice
1/4 teaspoon salt
1 medium ripe avocado, peeled and cubed (1/2 inch)

Steps:

  • Rub both sides of steak with oil; sprinkle with Creole seasoning. Grill, covered, over medium heat or broil 4 in. from heat 5-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand 5 minutes., In a large bowl, combine tomatoes, beans, green onions, cilantro, lemon zest, lemon juice and salt; gently stir in avocado. Cut steak into slices; serve with bean mixture.
