STEAK FRIES RECIPE
An easy, homemade steak fries recipe featuring simple instructions for how to cut and roast steak fries to crispy perfection!

- Preheat the oven to 425° and have ready one (or two) large rimmed sheet pans lined with either nonstick aluminum foil or parchment paper. Quarter the potatoes lengthwise. Cut each quarter into thirds.
- Transfer the potatoes to the sheet pan, drizzle with canola oil and sprinkle with salt and pepper. Toss until evenly coated. Transfer half of the potatoes to a second sheet pan to prevent overcrowding, if necessary. The potatoes will not properly roast/brown if there is no space between them.
- Place in the oven and bake 18 minutes. Remove from the oven and carefully turn wedges over, using tongs or a fork if necessary to keep from burning your fingers. If the potatoes stick to the foil, allow them to sit for 1-2 minutes, and then turn.
- Return to the oven and bake for an additional 16-18 minutes, or until the potatoes are golden-brown and crisp. Serve and enjoy.

STEAK-FRY FRICOS

- Toss half a 28-ounce bag frozen steak-cut fries with 2 teaspoons olive oil and 1 teaspoon each coarsely ground pepper and chopped rosemary. Spread on a baking sheet and bake at 425˚ until crisp, 30 minutes. Grate 4 ounces havarti on the large holes of a box grater. Divide the cheese into eight 3-inch rounds on a parchment-lined baking sheet; season with pepper and chopped rosemary. Top with the fries. Bake until the cheese is browned around the edges, 12 to 15 minutes. Remove with a thin spatula.

- Heat a large heavy-bottomed skillet (preferably cast iron) over high 5 minutes. Generously season steaks with salt and pepper. Add 1/2 teaspoon butter to pan, then immediately top with one steak. Repeat with remaining 1/2 teaspoon butter and steak. Cook without moving steaks until a golden brown crust forms, 3 to 4 minutes. Turn and cook 2 minutes more for rare, or 3 to 4 minutes more for medium-rare. Transfer to a cutting board and let rest 5 minutes. Slice steaks against the grain; serve with sauce, if desired.
- Heat a 10- or 12-inch cast-iron skillet over high heat. Season the steaks liberally with salt and pepper. Seconds before adding a steak, drop 1/2 teaspoon of the butter into the pan and immediately top with the steak. Repeat with the remaining steak. Sear for 3 minutes without moving the steak (to form a crust). Turn and cook for 2 minutes for rare or 3 to 4 for medium rare. Remove the steaks from the pan and let them rest on a board or platter for a few minutes before serving.
STEAK STIR-FRY

- Dissolve bouillon in water. Combine the cornstarch and soy sauce until smooth; add to bouillon. Set aside. Toss beef with garlic, ginger and pepper. In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until meat is no longer pink; remove and keep warm. , Heat remaining 1 tablespoon oil; stir-fry vegetables until crisp-tender. Stir soy sauce mixture and add to the skillet; bring to a boil. Cook and stir for 2 minutes. Return meat to pan and heat through. Serve with rice.

FRICO CRISPS
Steps:
- In a medium non-stick skillet melt enough butter to just coat the bottom of the pan over medium heat. Sprinkle a fine layer of grated cheese in a circular pattern over the bottom of the pan and shake the pan to evenly distribute, as though making an omelet. Cook over medium heat until it has melted and formed a light crust, 3 to 4 minutes. Continue to cook until the edges set and a golden crust develops, 30 seconds to 1 minute. Gently lift and turn with a spatula or fork and cook until lightly golden on the second side, 2 to 3 minutes, being careful not to let it burn.
- Remove the frico from the pan and either set it flat on a paper towel, shape it over an inverted custard cup, or drape over a rolling pin or dowel. Continue with the remaining cheese.
