Steak Bites Recipe With Cheese Sauce image

A perfect appetizer for the meat lovers in a crowd! Top sirloin, sauteed mushrooms and a smooth cheese sauce atop grilled baguette make for one delicious appetizer.

2 5oz top sirloin
2 tsp kosher salt
1 tsp fresh ground black pepper (or to taste)
1 baguette (or bread of choice)
3 tbsp quality olive oil
8 oz cremini mushrooms (sliced)
1 shallot (minced)
1 tbsp butter
1 tbsp olive oil
1 tsp fresh ground black pepper
1/4 tsp kosher salt (to taste (if using salted butter, may not need))
2 tbsp butter
2 tbsp white all-purpose flour
1 1/4 cup milk ((preferably whole, may use 2%) may need extra to thin sauce)
6 ounces Provolone cheese (or your favorite) (add until desired consistency and taste)
1/2 tsp fresh ground pepper (or to taste)
1/4 tsp kosher salt (to taste)
1/3 cup chives or scallions (chopped)

Steps:

  • Preheat grill to high heat or 450°F if grilling. If using skillet, pre-heat skillet over medium high heat.
  • Season sirloin with kosher salt on both sides.
  • Grill top sirloin or cook on skillet until med-rare or desired temperature. Time will depend on size of cut. Remove from heat and rest for at least 3 minutes. May tent with foil while cooking other ingredients

Number Of Ingredients 10

2 pounds rib-eye steaks, cubed into bite-size pieces
2 tablespoons salted butter, melted, plus 2 tablespoons for the sauce
1 tablespoon steak seasoning
2 teaspoons chopped fresh rosemary
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 cup heavy cream
1/4 cup crumbled blue cheese
2 tablespoons prepared horseradish
2 tablespoons chopped chives

Steps:

  • Heat a heavy-bottomed skillet over medium-high heat.
  • Toss together the steak, melted butter and steak seasoning in a bowl. Add to the skillet and cook until nicely seared on all sides, 4 to 5 minutes total. Remove the steak bites to a plate to rest and return the skillet to the heat.
  • Lower the heat to medium and add the remaining 2 tablespoons butter to the skillet. Stir in the rosemary, garlic and a pinch of salt. Cook for 1 minute, until the garlic is heated through and no longer raw. Add the cream and bring it to the boil. Reduce the heat to low and simmer, then stir in the blue cheese, horseradish, 1 tablespoon of the chives and black pepper to taste. Transfer to a serving bowl.
  • Place the steak bites on a platter with toothpicks, with the sauce on the side. Garnish the plater with the remaining chives before serving.

  • Make the Stella® Parmesan Cheese Butter: In a bowl or using a mortar and pestle, start smashing all ingredients together until they blend well. Set the butter mixture aside. Extra butter mixture can be kept in the fridge or freezer. Make sure you wrap it with parchment paper and form it into a log shape so you can slice it as you need. Read the Parmesan Cheese Butter section above for how to use it.
  • For the Steak: Add all the steak bites in one bowl and season with all the spices (except garlic and butter). Toss well.
  • Preheat a cast iron pan or grill pan, and add the butter. Start searing the steak bites by adding just a few at a time without crowding the pan. Once it’s sizzling and has a nice brown crust, flip the steak bite. This takes about 2-3 minutes of cooking per side for medium rare.
  • Remove the ready steak bites onto a plate and continue with the remaining pieces of steak. Add extra butter if needed for searing.
