1 ¼ pounds cubed beef stew meat
1 onion, diced
1 (12 fluid ounce) can pale ale or lager beer
2 cloves garlic, minced
½ teaspoon dried thyme
1 ½ teaspoons chopped fresh parsley
2 tablespoons Worcestershire sauce
salt and pepper to taste
2 cups peeled and cubed potatoes
1 ½ cups quartered fresh mushrooms
1 tablespoon all-purpose flour
1 pastry for double-crust pie

Steps:

  • Place the beef stew meat, onion, and ale in a large saucepan. Simmer over low heat until the meat is tender, about 30 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Season the beef with garlic, thyme, parsley, Worcestershire sauce, salt and pepper. Mix in the potatoes and mushrooms. Cover and simmer over medium heat until potatoes are just tender enough to pierce with a fork, 10 to 15 minutes. Whisk a small amount of the sauce together with the flour in a small bowl, and stir into the beef. Simmer until slightly thickened.
  • Fit one pie crust into the bottom and up the sides of a 9 inch pie plate. Spoon the hot beef mixture into the crust and top with the remaining pie crust. Cut slits in the top crust to vent steam and crimp the edges to seal them together.
  • Bake in preheated oven until the crust is golden brown and gravy is bubbling, 35 to 40 minutes.

This steak and mushroom pies recipe is perfect for a winter's evening meal. You can make your own shortcrust pastry.The key thing for getting the pie filling right is to make sure you cook the meat in batches so that the temperature in the pan stays high and the meat is browned nicely.

1kg Steak ((chuck or blade) cut into 2.5cm pieces)
1 Onion(s) (thickly sliced)
2 tbsp Allinson's Plain White Flour
2 tbsp Worcestershire sauce
570ml Beef stock
0pinch Salt
0pinch Pepper
8 Mushrooms (large, quartered)
450g Shortcrust pastry (or alternatively make your own, using our recipe)
3 tbsp Olive oil
1kg Steak ((chuck or blade) cut into 2.5cm pieces)

Steps:

  • Step 1:Heat the oven to 150°C, (fan 130°C, gas mark 2).Step 2:Heat two tablespoons oil in a frying pan and add the meat in batches, until browned on all sides. Remove the meat from the pan as it browns and put into a large casserole or baking dish.Step 3:Heat the remaining oil in the frying pan and cook the onion for about 5 minutes, until the edges are beginining to brown. Transfer to the casserole dish.Step 4:Stir the flour into the frying pan, scraping up any residue from the pan. Add the Worcestershire sauce and beef stock, stirring all the time, and bring to a boil. Cook for 1 minute, stirring constantly. Season to taste and then pour into the casserole dish.Step 5:Add the mushrooms to the dish and cook in the oven for 2 hours until the meat is tender.Step 6:Place the meat in a pie dish and leave to cool. Heat the oven to 220°C (fan 200°C, gas mark 7).Step 7:Roll out the pastry on a floured surface and cut out a circle large enough for your pie dish.Step 8:Dampen the pastry and place on top of the pie dish and seal carefully. Flute the edges by pinching with your finger and thumb.Step 9:Bake the pies for40-50 minutes until the pastry is golden brown and the filling is piping hot.

1/2 cup diced onions
1/2 cup red wine
1/4 cup roasted garlic

8 ounces crimini mushrooms, quartered
8 ounces portobello mushrooms, sliced 1/2-inch thick
2 tablespoons olive oil
2 pounds beef tenderloin, trimmed and cubed
4 sheets puff pastry

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter in a saucepan and whisk in the flour. Add the onions and cook over low heat until they are tender. Add veal stock, red wine, roasted garlic, garlic powder, salt and pepper. Turn up the heat and whisk until you reach a slow boil and all the lumps are gone. Add the mushrooms, reduce the heat, and simmer for 10 minutes. Heat a skillet, and then add the olive oil. Add the beef and cook until medium rare. Transfer the beef to a baking dish and cover with the mushroom gravy. Cover with the puff pastry sheets and bake until the pastry is golden brown.

375 g fresh ready rolled puff pastry
1 egg, beaten
2 tablespoons olive oil
250 g mixed wild mushrooms, thickly sliced
700 g sirloin steaks, trimed of fat and cut into thin strips
320 g ready made beef gravy
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 200 degrees Celsius Cut out four 4 1/2 inch rounds of puff pastry. Place on a baking tray and score in a lattice pattern across the top. Brush with beaten egg and bake 10-15 minutes until golden.
  • While pastry is cooking, heat 1 Tbsp oil in a skillet. Add mushrooms and stir-fry 2-4 minutes until softened. Season with salt and pepper and transfer to a plate. Add remaining oil to pan and cook half the steak. Stir fry 2-3 minutes and transfer to a plat, then repeat with other half of the steak.
  • Pour the gravy into the pan, stir in mushrooms and simmer 4-5 minutes. Add the meat to the skillet and cook another minute or two. add between 50-75 ml water.
  • Stir parsley into the sauce, divide mixture between four plates, and top each serving with a pastry 'lid'.
  • Delicious with boiled new potatoes and a green salad.

6 ounces organic top sirloin steak, cut into bite-size cubes
1 cup sliced button mushrooms
1/2 cup brown gravy
Salt and freshly ground black pepper
1 precooked potpie shell, top and bottom
Mashed potatoes and vegetables, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the butter in a well-seasoned fry pan. Saute the steak cubes until lightly browned. Add the mushrooms to pan and season salt and pepper;' saute until lightly browned. Add the brown gravy and mix thoroughly. Place into the bottom pot pie shell, and place the top shell over the filling.
  • Bake until heated through, about 15 minutes.
  • Serve with your favorite mashed potatoes and vegetables.

2 1/2 cups chopped onions
3 tablespoons butter
8 cups chopped mushrooms
1 teaspoon dried thyme
1/2 teaspoon salt
lots fresh ground black pepper
8 ounces cream cheese
2 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup butter
1 cup sour cream
flour, for coating the dough and board for rolling
1 egg
1 tablespoon milk

Steps:

  • Saute the onions in butter in a large skillet.
  • When the onions are soft and translucent, add the mushrooms and thyme and suate for a few more minutes, until the mushrooms release their juices.
  • Add the seasonings.
  • Cut the cream cheese into small pieces and stir it into the mushrooms until it melts.
  • Remove from the heat and set aside until crust is ready.
  • Preheat oven to 400°F.
  • For the crust, combine the flour, baking powder and salt in a large mixing bowl.
  • Cut in the butter just enough to achieve a crumbly mix.
  • Stir in the sour cream to form a soft dough.
  • Generously dust the dough with flour and form into a ball.
  • On a heavily floured surface, roll out 2/3 of the dough to fit a 10 inch pie plate.
  • Trim the edges.
  • Fill with the mushroom mixture.
  • Roll out the remaining dough about 1/4 inch thick (Thicker than normal pie crust) and cut into strips 1 inch wide.
  • Weave the strips into a lattice over the filling.
  • Fold the ends of the lattice strips under the bottom crust, pinch the edges together, and flute.
  • For the glaze, beat the egg and milk.
  • With a pastry brush, thoroughly coat the pie crust. (You will have more glaze than you will need).
  • Bake the pie for 25-35 minutes, until the crust is puffy and golden.

AUSSIE STEAK & PORTOBELLO MUSHROOM PIE

This is a hearty gourmet version of Australia's very own meat pie, and it goes down well with a cold lager. I like to use chuck steak for this. Adapted from a recipe by Bill Granger, one of my favorite chefs.

2 tablespoons plain flour
2 teaspoons sweet paprika
3 lbs best quality stewing beef, cut into 3/4 inch chunks
2 tablespoons olive oil
1 (15 ounce) can chopped tomatoes
4 cloves garlic, peeled and sliced
2 white onions, sliced in rings
1 stalk celery, finely chopped
2 cups portabella mushrooms or 2 cups field mushrooms, cut into chunks
1 cup Guinness stout
1 1/2 cups beef stock
1 teaspoon chopped fresh thyme leave
butter, to grease ovenproof pie dishes
4 sheets frozen puff pastry, thawed
1 egg yolk, lightly beaten
tomato ketchup, to serve

Steps:

  • Preheat oven to 300F (150C).
  • In a large bowl, combine flour, paprika, and salt and pepper to taste.
  • Toss the cubed meat in the flour mixture.
  • Heat the oil in a large skillet, and brown the beef in batches over high heat, adding a touch more oil if necessary.
  • Place beef in an ovenproof casserole dish, together with the can of chopped tomatoes, garlic, onion, celery, mushrooms, stout, stock, thyme, 1 teaspoon salt and freshly ground black pepper.
  • Cover casserole dish tightly, and cook in the oven at 300F (150C) for 2 to 2 1/2 hours, until tender, stirring every 30 minutes.
  • Cool completely and proceed with the recipe, or refrigerate for up to three days in advance.
  • To make the pies, preheat oven to 400F (200C).
  • Butter the rims of 8 individual pie dishes or ramekins.
  • From each sheet of puff pastry, cut two thin strips of pastry along the vertical edge, 1/3" wide and 4" long, plus 2 circles to fit the tops of the pie dishes (8 strips and 8 circles in total).
  • Spoon the meat filling into the dishes, then press a strip of pastry around the rim of each.
  • Brush the rims with some beaten egg, then place the pastry lids on top and press all around each edge to seal.
  • Brush each pastry top with the remaining egg yolk.
  • With a sharp knife make 3 piercings in the top of each pie.
  • Bake in the oven for 35 minutes, or until golden brown and heated through, and serve the Australian way, with tomato ketchup.

The original recipe used homemade puff pastry (another recipe in the same book, Recipe #284127), but it's simpler to buy frozen puff pastry. Just remember that puff pastry is not the same thing as filo/phyllo dough. Times are estimates.

1 1/2 lbs lean beef sirloin or 1 1/2 lbs top round steaks, cut into 1-inch cubes
1 lb veal kidney, peeled, trimmed of fat, and cut into 1-inch cubes (or any beef or lamb kidneys or substitute more mushrooms)
2 teaspoons salt
1 teaspoon fresh ground black pepper
1/4 cup flour
1/4 cup rendered beef suet (or use 3 T butter and 1 T vegetable oil) or 1/4 cup lard (or use 3 T butter and 1 T vegetable oil)
1 cup thinly sliced fresh mushrooms (about 1/4 lb)
1/2 cup chopped onion
1 1/2 cups water (or use beef broth, if preferred)
1/4 cup dry sherry or 1/4 cup dry red wine
1 tablespoon finely chopped fresh parsley
1/4 teaspoon dried thyme
1/4 teaspoon Worcestershire sauce
1 (17 1/4 ounce) package frozen puff pastry (take frozen pastry out of freezer 1-2 hours before use to thaw) or 1 (17 1/4 ounce) package homemade puff pastry (take frozen pastry out of freezer 1-2 hours before use to thaw)
1 egg yolk
1 tablespoon half-and-half or 1 tablespoon milk

Steps:

  • Preheat oven to 425°F.
  • Pat cubed meat with paper toweling until dry. Sprinkle with 1 tsp salt and 1/2 tsp pepper. Combine meat and flour in a ziplock bag and shake around to coat.
  • In a large heavy skillet, heat suet until it is spluttering (but not smoking or scorching). Brown a few (10-12) cubes of meat at a time, turning often, until browned, about 2-3 minutes. Reduce heat if needed to prevent scorching. Remove from pan to a heavy 2-quart deep casserole (about 4 inches deep) when browned.
  • Repeat until all the meat is cooked. Add more suet as needed.
  • Reduce heat to medium and add mushrooms and onions. Saute 2-3 minutes or until tender. Transfer mushrooms and onions to casserole.
  • Add water to skillet and bring to boil over high heat, scraping skillet with spoon to remove and browned bits. Pour over meat mixture in casserole.
  • Add sherry, parsley, thyme, Worcestershire sauce, and remaining salt and pepper (or to taste) to mixture in casserole. Stir gently to combine.
  • On a lightly floured board, roll puff pastry out into a rough rectangle about 1/4 inch thick. Cut 2 12x1/2 inch strips from ends of pastry. Lay strips end-to-end around rim of casserole and firmly press into place. Moisten slightly with cold water.
  • Drape remaining pastry over the rolling pin and transfer to casserole. With a small, sharp knife, trim off excess pastry. Crimp edges.
  • Reroll excess pastry and cut into decorative shapes (leaves, flowers, or whatever). Moisten back sides of pastry cutouts with a mixture of the egg yolk and cream and place arrange attractively on top of the pie.
  • Slash 2 parallel cuts about 1 inch long in the center of the pie. Brush crust with the egg yolk and cream mixture.
  • Bake in center of oven at 425°F for 30 minutes. Reduce heat to 350°F and bake an additional 30 minutes or until crust is golden brown.
  • Serve immediately, while fresh and hot.

1 tbsp oil
1 red onion , chopped
2 garlic cloves , chopped
1 tsp paprika
1 green pepper , chopped
200g mushrooms , sliced
2 tbsp red wine vinegar
150ml beef stock
200g lean rump steak , sliced and all fat removed
150ml fat-free fromage frais

Steps:

  • Heat the oil in a pan and fry the onion for a few mins, until soft. Add the garlic and paprika, and cook for 1-2 mins until fragrant. Add the pepper and mushrooms, and fry for 5-8 mins until softened.
  • Add the vinegar, boil to reduce until almost evaporated, then pour over the stock and bubble for a few mins until thickened slightly. Add the beef and cook for 2-3 mins depending on how rare you like it, then stir in the fromage frais and season. Serve with rice or tagliatelle.

1 1/4 cups unbleached all-purpose flour
1/2 teaspoon salt
10 tablespoons unsalted butter, chilled, cut into pieces
4 1/2 tablespoons ice water (about)
3/4 ounce dried porcini mushroom (about 3/4 cup)
2 tablespoons unsalted butter
1/2 cup shallot, finely chopped
2 1/2 teaspoons garlic, minced
10 ounces fresh mushrooms (such as crimini, chanterelles and/or stemmed Shiitake, thickly)
3 large eggs
1/3 cup half-and-half
1/2 teaspoon dried basil, crumbled
1/4 teaspoon dried thyme, crumbled
2 cups Swedish Fontina cheese (about 8 oz) or 2 cups Danish Fontina cheese, grated (about 8 oz)
to taste fresh parsley sprig

Steps:

  • FOR CRUST:
  • Mix flour and salt in medium bowl.
  • Add butter and rub with fingertips until mixture forms coarse meal.
  • Mix in enough water by Tbsp to form moist clumps.
  • Gather dough into ball; flatten into disk.
  • Wrap in plastic and chill until firm, about 45 minutes.
  • (Can be prepared 2 days ahead; keep refrigerated.) Roll out dough on lightly floured surface to 13-inch round.
  • Transfer to 9-inch glass pie plate; crimp edges.
  • Refrigerate 30 minutes.
  • Preheat oven to 375 F.
  • Line pie crust with foil.
  • Fill with dried beans or pie weights.
  • Bake 10 minutes.
  • Remove foil and beans.
  • Bake until crust is set and begins to color, piercing bottom with fork if puffy, about 15 minutes more. Transfer to rack and cool.
  • FOR FILLING: Place porcini in small bowl.
  • Add enough hot water to cover.
  • Let soak 30 minutes.
  • Drain mushrooms.
  • Melt butter in heavy large skillet over high heat. Add shallots and garlic and saute 1 minute. Add fresh mushrooms and saute until tender and liquids evaporate, about 5 minutes.
  • Add porcini and saute 2 minutes.
  • Season to taste with salt and pepper.
  • Set aside. Whisk eggs, half and half, basil and thyme in medium bowl until blended.
  • Season with salt and pepper.
  • Sprinkle half of cheese on crust. Top with mushroom mixture and remaining cheese. Carefully pour egg mixture over mushrooms.
  • Bake until center is set, about 40 minutes.
  • Transfer to rack and cool slightly.
  • Garnish with parsley.
  • Cut into wedges and serve. NOTE: such as crimini, chanterelles and/or stemmed Shiitake, thickly sliced
