2 pound stewing beef
2 tablespoon olive oil
¼ cup all-purpose flour
1 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)
1 large onion (chopped)
4 cloves garlic (minced)
2 stalks celery (chopped)
2 large carrots (cut into 1 inch cubes)
2 tablespoon all-purpose flour
1 cup red wine (or Guinness)
2 cup beef broth
2 sprigs fresh thyme
2 bay leaves
6 slices bacon (chopped)
1 pound mushrooms (sliced)
1 sheet puff pastry
1 egg yolk (for brushing pie)

Steps:

  • Season beef with salt and pepper then toss with the 1/4 cup of flour. Sear in an Instant Pot with 1 tbsp of olive oil until fully browned on all sides. You will have to do this in a couple batches. Transfer to a plate.
  • Saute the sauteables and cook the beef: Add the remaining tbsp of olive oil and heat. Add the onion, garlic, celery, carrots to the pot and saute for 5 minutes until the onion softens. Sprinkle the 2 tbsp of flour over the veggies and stir. Add the wine or beer and beef broth and stir until the flour dissolves. Add the thyme, bay leaves, and cooked beef back to the instant pot. Close the lid (follow the manufacturer's guide for instructions on how to close the instant pot lid). Cook on high pressure for 35 minutes until the beef is fork tender. After the pressure cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Careful of any remaining steam, unlock and remove the lid.
  • Fry the bacon and mushrooms: In another skillet, fry the bacon, drain some of the fat then add the mushrooms and saute for 5 minutes. Add the bacon and mushrooms to the instant pot. Stir everything together. Remove the bay leaves and thyme. Season with salt and pepper as needed. Switch the instant pot to the saute setting again (do not put the lid on) and simmer for 10 minutes until mushrooms are tender.
  • Preheat oven to 400 F degrees.
  • Finish the dish: Pour the stew into a 9x13-inch casserole dish, then top with a sheet puff pastry. You might need 2 sheets, depends on how big they are. Brush with egg yolk. Bake for 30 to 35 minutes until golden brown. Rest for 5 minutes before serving.

900g Beef inside round, medium dice
75ml Olive oil
200g Celery, medium dice
400g Onion, medium dice
200g Mushroom, quartered
200g Carrot, medium dice
750ml Water
250ml Luckett Vineyard Old Bill red wine
1 Tbsp Thyme, fresh
2 Tsp Rosemary, fresh
175g All purpose white flour
150g Unsalted butter
250ml Beef stock
Kosher salt and freshly ground black pepper
1 egg yolk, beaten

Steps:

  • Preheat oven to 375F. Mix together olive oil, diced beef, salt and pepper. Spread flat on sheet pan and cook in oven at 375 degrees until browning occurs. Remove from oven and turn heat to 350F. In a large sauce pan over medium heat, sauté celery, carrots and onions until tender, add mushrooms, thyme and rosemary and continue to cook until mushrooms have softened. Deglaze with red wine, by pouring wine into pan and using spatula to dig up the bits on the pan. Add cooked beef to vegetables. Add water and bring to a boil. While this is happening make roux: Over medium low heat melt butter in pot on stove and add flour. Stir to combine Cook roux for approximate 3-4 minutes. Add some beef stock slowly to the roux and whisk vigorously to avoid lumping. Mix everything together and let cool. Add beef filling to pastry lined pie plate, brush edges with egg yolk. Top with pie crust and brush with egg yolk. Make 2-3 cuts in centre to allow air to vent. Cook at 350F until golden brown. If you're using packaged crust check the time on the box. Puffed pastry can be as quick as 20 minutes, other pie pastry takes longer.

1 ¼ pounds cubed beef stew meat
1 onion, diced
1 (12 fluid ounce) can pale ale or lager beer
2 cloves garlic, minced
½ teaspoon dried thyme
1 ½ teaspoons chopped fresh parsley
2 tablespoons Worcestershire sauce
salt and pepper to taste
2 cups peeled and cubed potatoes
1 ½ cups quartered fresh mushrooms
1 tablespoon all-purpose flour
1 pastry for double-crust pie

Steps:

  • Place the beef stew meat, onion, and ale in a large saucepan. Simmer over low heat until the meat is tender, about 30 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Season the beef with garlic, thyme, parsley, Worcestershire sauce, salt and pepper. Mix in the potatoes and mushrooms. Cover and simmer over medium heat until potatoes are just tender enough to pierce with a fork, 10 to 15 minutes. Whisk a small amount of the sauce together with the flour in a small bowl, and stir into the beef. Simmer until slightly thickened.
  • Fit one pie crust into the bottom and up the sides of a 9 inch pie plate. Spoon the hot beef mixture into the crust and top with the remaining pie crust. Cut slits in the top crust to vent steam and crimp the edges to seal them together.
  • Bake in preheated oven until the crust is golden brown and gravy is bubbling, 35 to 40 minutes.

  • Step 1:Heat the oven to 150°C, (fan 130°C, gas mark 2).Step 2:Heat two tablespoons oil in a frying pan and add the meat in batches, until browned on all sides. Remove the meat from the pan as it browns and put into a large casserole or baking dish.Step 3:Heat the remaining oil in the frying pan and cook the onion for about 5 minutes, until the edges are beginining to brown. Transfer to the casserole dish.Step 4:Stir the flour into the frying pan, scraping up any residue from the pan. Add the Worcestershire sauce and beef stock, stirring all the time, and bring to a boil. Cook for 1 minute, stirring constantly. Season to taste and then pour into the casserole dish.Step 5:Add the mushrooms to the dish and cook in the oven for 2 hours until the meat is tender.Step 6:Place the meat in a pie dish and leave to cool. 8 ounces portobello mushrooms, sliced 1/2-inch thick

  • Melt the butter in a saucepan and whisk in the flour. Add the onions and cook over low heat until they are tender. Add veal stock, red wine, roasted garlic, garlic powder, salt and pepper. small handful dried porcini mushrooms (about 10g) - not essential but very tasty
2 tbsp vegetable oil
1kg braising steak (buy this as a whole piece and cut it yourself into large chunks)
2 large onions, roughly chopped
4 large carrots, chopped into large chunks
2 tsp golden caster sugar
4 tbsp plain flour
300ml dark ale
2 beef stock cubes mixed with 400ml boiling water
small bunch each thyme, bay leaf and parsley, tied together
200g smoked bacon lardons, or chopped rashers
200g chestnut mushrooms, halved
650g plain flour, plus extra for dusting
250g lard or cold butter (or half of each), diced, plus extra for greasing
1 egg yolk, beaten, to glaze

Steps:

  • If you're using the porcini mushrooms, cover 10g of mushrooms in boiling water for 20 mins, then squeeze out but keep the soaking water.
  • Heat oven to 160C/140C fan/gas 3. Heat 1 tbsp vegetable oil in a large casserole dish, brown 1kg large chunks of braising steak really well in batches, then set aside.
  • Add 2 large onions, roughly chopped, and 4 large carrots, chopped into large chunks, to the pan. Add a drizzle more vegetable oil, then cook on a low heat for 5 mins until coloured.
  • Add the soaked porcini mushrooms, sizzle for 1 min more, then scatter over 2 tsp golden caster sugar and 4 tbsp plain flour, stirring until the flour turns brown.
  • Tip the braising steak and any juices back into the pan and give it all a good stir.
  • Pour over 300ml dark ale, 2 beef stock cubes mixed with 400ml boiling water and the porcini mushroom soaking liquid, discarding the last few drops.
  • Season the stew, tuck in a small tied-together bunch of thyme, bay leaf and parsley, and bring everything to a simmer.
  • Cover with a lid and place in the oven for about 2 hrs, until the braising steak is really tender.
  • While the stew is cooking, heat a drop more vegetable oil in a frying pan and sizzle 200g smoked bacon lardons for 3 mins until crisp.
  • Turn up the heat, add 200g halved chestnut mushrooms and cook for 4 mins until golden. Remove from the heat and, when the stew is cooked, stir them through.
  • Leave everything to cool completely - better still, make this up to 2 days in advance and keep it in the fridge as the pie will be better if the filling is fridge-cold when added. Can also be frozen for up to 3 months and defrosted when needed.
  • Make the pastry up to 2 days before you want to assemble the pie. Crumble 650g plain flour and 250g cold diced lard or butter, together with a generous pinch of sea salt until completely combined, then add up to 200ml ice-cold water to make a soft dough. This can be done in a food processor if you want.
  • Knead the pastry, then wrap in cling film and leave to rest in the fridge for at least 1 hr. The pastry can be made up to 2 days ahead and kept in the fridge or frozen for up to a month.
  • When you want to make the pie, heat oven to 220C/200C fan/gas 7 and place a flat baking tray in the oven. Heavily grease a 24-28cm pie dish and dust well with flour.
  • Cut a third off the pastry and set aside. Roll out the pastry to a thickish round that will easily line the pie dish with an overhang, then line the tin.
  • Add the braising steak to the dish using a slotted spoon so some gravy is left in the container, as you don't want too much sauce in the pie. You want the filling to be slightly higher than the rim of the dish. If you have a bit too much, set it aside.
  • Roll out the remaining pastry to a thick round big enough to cover the dish. Brush the edges of the pastry in the dish with 1 beaten egg yolk, then cover with the pastry lid.
  • Trim the edges, crimp the pastry, then re-roll your trimmings to make a decoration, for example, pastry leaves. Brush the top heavily with egg. Make a few little slits in the centre of the pie, place on the hot baking tray.
  • Bake for 40 mins until golden. Leave the pie to rest for 10 mins while you heat up the gravy left in the container. Serve the pie at the table with a jug of gravy and a big pile of greens.

The original recipe used homemade puff pastry (another recipe in the same book, Recipe #284127), but it's simpler to buy frozen puff pastry. Just remember that puff pastry is not the same thing as filo/phyllo dough. Times are estimates.

1 1/2 lbs lean beef sirloin or 1 1/2 lbs top round steaks, cut into 1-inch cubes
1 lb veal kidney, peeled, trimmed of fat, and cut into 1-inch cubes (or any beef or lamb kidneys or substitute more mushrooms)
2 teaspoons salt
1 teaspoon fresh ground black pepper
1/4 cup flour
1/4 cup rendered beef suet (or use 3 T butter and 1 T vegetable oil) or 1/4 cup lard (or use 3 T butter and 1 T vegetable oil)
1 cup thinly sliced fresh mushrooms (about 1/4 lb)
1/2 cup chopped onion
1 1/2 cups water (or use beef broth, if preferred)
1/4 cup dry sherry or 1/4 cup dry red wine
1 tablespoon finely chopped fresh parsley
1/4 teaspoon dried thyme
1/4 teaspoon Worcestershire sauce
1 (17 1/4 ounce) package frozen puff pastry (take frozen pastry out of freezer 1-2 hours before use to thaw) or 1 (17 1/4 ounce) package homemade puff pastry (take frozen pastry out of freezer 1-2 hours before use to thaw)
1 egg yolk
1 tablespoon half-and-half or 1 tablespoon milk

Steps:

  • Preheat oven to 425°F.
  • Pat cubed meat with paper toweling until dry. Sprinkle with 1 tsp salt and 1/2 tsp pepper. Combine meat and flour in a ziplock bag and shake around to coat.
  • In a large heavy skillet, heat suet until it is spluttering (but not smoking or scorching). Brown a few (10-12) cubes of meat at a time, turning often, until browned, about 2-3 minutes. Reduce heat if needed to prevent scorching. Remove from pan to a heavy 2-quart deep casserole (about 4 inches deep) when browned.
  • Repeat until all the meat is cooked. Add more suet as needed.
  • Reduce heat to medium and add mushrooms and onions. Saute 2-3 minutes or until tender. Transfer mushrooms and onions to casserole.
  • Add water to skillet and bring to boil over high heat, scraping skillet with spoon to remove and browned bits. Pour over meat mixture in casserole.
  • Add sherry, parsley, thyme, Worcestershire sauce, and remaining salt and pepper (or to taste) to mixture in casserole. Stir gently to combine.
  • On a lightly floured board, roll puff pastry out into a rough rectangle about 1/4 inch thick. Cut 2 12x1/2 inch strips from ends of pastry. Lay strips end-to-end around rim of casserole and firmly press into place. Moisten slightly with cold water.
  • Drape remaining pastry over the rolling pin and transfer to casserole. With a small, sharp knife, trim off excess pastry. Crimp edges.
  • Reroll excess pastry and cut into decorative shapes (leaves, flowers, or whatever). Moisten back sides of pastry cutouts with a mixture of the egg yolk and cream and place arrange attractively on top of the pie.
  • Slash 2 parallel cuts about 1 inch long in the center of the pie. Brush crust with the egg yolk and cream mixture.
  • Bake in center of oven at 425°F for 30 minutes. Reduce heat to 350°F and bake an additional 30 minutes or until crust is golden brown.
  • Serve immediately, while fresh and hot.

This recipe is made in a casserole dish, but you may make it in a 10-inch *very* deep-dish pie plate, it's made easy using packaged gravy mix, stewing beef may be used in place of the sirloin, throw in some frozen diced peas and carrots and a splash of red wine also if desired --- because of the high soduim content in the gravy mix I suggest not to add in any extra salt.

3 tablespoons vegetable oil (more as needed)
1 lb sirloin steak (cubed)
1 -2 teaspoon fresh ground black pepper
7 large fresh button mushrooms, sliced (or use as much as desired)
1 large onion, chopped
1 -2 tablespoon fresh minced garlic (or to taste)
1 teaspoon dried thyme (can use a pinch more)
1 (1 ounce) package dry mushroom gravy mix
1 cup water
2 -4 teaspoons Worcestershire sauce
1 sheet frozen puff pastry (thawed according to package directions)
1 egg
1 tablespoon cold water

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Season the steak cubes with black pepper then add to the skillet then cook until browned on the outside; remove to a bowl.
  • Add in mushrooms and cook until browned.
  • Add in onion and thyme; saute for about 5 minutes (adding in the garlic the last 2 minutes of cooking).
  • Return the beef to the skillet.
  • Stir in the mushroom gravy, 1 cup water and Worcestershire sauce (start with 2 teaspoons and add in more to taste); bring to a simmer over low heat and cook for 30-35 minutes.
  • Season with salt and black pepper to taste.
  • Set oven to 400 degrees F.
  • Transfer the beef mixture to a greased casserole dish.
  • Roll out the puff pastry to cover the top of the dish; press edges onto the rim of the dish to seal.
  • In a small cup whisk together 1 tablespoons water with the egg, then brush over the top of the pastry.
  • Bake for 20 minutes or until the pastry is fuffed and golden brown.

Steps:

  • Cut steak into 3cm cubes and season. Heat 2tbsp of oil in frying pan and over a high heat fry meat till well browned all over. Do this in 2 batches to avoid 'steaming' meat add extra tbsp of oil if pan is dry. Place beef in casserole dish and toss it in flour.
  • Heat oven to Gas 2 150C/130C fan. add 1 tbsp oil to pan and cook the onions and garlic over a medium heat for 5-10 mins until golden and soft then mix with beef in casserole dish. Deglaze pan with red wine (or water) and Worcestershire sauce and bring to boil whilst stirring and lifting any residue from the pan.
  • Pour sauce over the beef add stock and bay leaf. Bring to boil on top of stove then cover with lid and cook in oven for 1.5 hours.
  • Meanwhile, melt butter in frying pan and cook mushrooms for 5 mins until lightly browned, then add to beef and return casserole for another 30 mins (2-hr total). Remove from oven and cool.
  • To make the pastry rub the butter into the flour with a generous pinch of salt and mix with fingertips until mixture resembles fine breadcrumbs. Stir in egg and water mixture, bring together to form a dough and knead very lightly. Divide the dough into 2/3'ds for base and 1/3'ds for the top. Roll into balls, flatten slightly, wrap each ball in cling film and chill for 20 mins. If preparing dish early in day (or day before) you can prepare to this point and store filling and dough in fridge until next day or when ready to assemble. Remember to bring dough to room temperature before rolling.
  • Heat oven to gas 6 200C/180C fan. Roll out larger ball of pastry and use to line a greased 23cm (9") pie dish. HANDY TIP!! To avoid a soggy base, sprinkle the pastry base with a spoonful of semolina then spoon in beef, onions and mushrooms using a slotted spoon, adding just enough of the liquid to be "saucy." Save remaining sauce and gently reheat and serve with finished pie. Brush the pastry rim with a little beaten egg. Roll out the smaller ball of dough for the pie top and gently lay it over the filling. Use a sharp knife to trim any overhanging pastry (you can use surplus to decorate top of pie). Crimp edges with fingers or fork, brush with beaten egg to glaze. Bake in oven for 30 mins until pie is golden brown and filling is piping hot. Serve with heated gravy.
