Wow, this is another really different recipe choice for St. Pat's Day. I really look forward to trying this recipe, as I love popcorn! This would even be a great treat to give everyone on St. Pat's Day to take home after the dinner. I found this recipe on Taste of Home. com. Enjoy.

Steps:
- 1. Place popcorn in a large roasting pan; keep warm in a 250° oven. Meanwhile, in a large heavy saucepan, combine the sugars, water, corn syrup, vinegar and salt. Cook and stir over medium heat until mixture comes to a boil. Cook, stirring occasionally, until a candy thermometer reads 260° (hard-ball stage).
- 2. Remove from the heat; stir in butter until melted. Stir in food coloring. Drizzle over warm popcorn and toss to coat. Cool. Break into pieces. Store in an airtight container.
- 3. Prep time is 15 minutes plus cooling time

- Microwave the green candy for 40 seconds then stir, repeat in 20 second intervals until melted and smooth. (takes 1-2 minutes dependent on melt brand and your microwave).
- Drizzle the melted green chocolate candy over of the bowl of popcorn and toss to coat (use a silicone spatula to ensure you get it all out.) Toss the popcorn with your hands until nicely coated. - Cream together sugar and butter. Add egg, sour cream and pudding mix. In a small bowl, combine flour, salt & baking soda. Incorporate flour mixture into the pudding mixture and mix until well combined. Add mint extract and food coloring until desired color is achieved.
- Add in chocolate chips. *I used 3/4 cup chocolate chunks, 3/4 cup regular chocolate chips and 1/2 cup Andes baking bits. Any combination is wonderful, but note that while the Andes mint baking pieces add an incredible flavor, they kind of disappear in the cookies. So add them in addition to the 1 1/2 cups chocolate chips, if you opt to put them in!
