This Sesame Crusted Seared Tuna Salad is light, fresh, and colorful with hints of sweet and savory flavors from an Asian-style dressing. It's a quick and easy weeknight salad recipe that requires a one-minute sear for delicately creamy tuna every time.

5 tablespoons of lime juice from 3-4 limes (freshly squeezed)
Zest of 2 limes
2 teaspoons soy sauce
1 teaspoon Sriracha (or any other hot sauce you like (i.e. Tabasco))
2 cloves of garlic (finely minced)
3 tablespoons of olive oil
1 1/2 pounds 2-3 pieces of Yellow Fin Tuna Steak, pat-dried with paper towels
3 tablespoons vegetable oil
1 1/2 teaspoon Kosher salt
1/2 teaspoon freshly ground black pepper (or peppercorn mix)
1 cup of black & white sesame seeds
2 cups of baby arugula (rinsed and dried)
2 ripe avocados (pitted and cut into smaller cubes)
5 stalks of scallions (chopped)
1 jalapeno (seeded and chopped)
For the Bowl: (optional)
4 cups of cooked forbidden (black or brown rice)

Steps:

  • To make the sauce: Mix all the sauce ingredients in a bowl and set it aside.
  • To make the Sesame Crusted Seared Tuna Steaks: Brush both sides of each tuna steak with 1/2 teaspoon (each) vegetable oil. Season them with salt and pepper. Place the sesame seeds on a large plate and gently press both sides of tuna steak in sesame seeds to coat.
  • Heat 1 tablespoon of olive oil over medium-high heat in a large non-stick skillet until it is just beginning to smoke. Add tuna steaks (make sure they are not touching each other) and cook for 1 minute* without moving them. Using tongs flip the steaks and cook for another minute. Place the steaks on a cutting board and slice into cubes. Transfer them in a mixing bowl and pour the reserved sauce over the steaks. Cover with plastic wrap and place in the fridge for 10-15 minutes.
  • To make the salad: Place baby arugula, avocados, scallions, and jalapeno in a salad bowl. Add in the marinated tuna steaks into the salad (with all of its juices) and give it a gentle stir. Taste for seasoning and add if necessary.
  • To serve: When ready to serve, place a cup of forbidden rice at the bottom of a bowl. Spoon some of the salad and its juices on top. Continue with the rest of the bowls. Serve immediately.

1/4 cup fresh grapefruit juice
1 1/2 tablespoons white wine vinegar
1/2 cup extra-virgin olive oil
Sea salt
Freshly ground black pepper
1/4 cup extra-virgin olive oil
Pinch red chili flakes
1 clove garlic, peeled and finely chopped
Zest of 1 lemon, plus juice of 1/2 lemon
1 small bunch fresh parsley, chopped (about 1/3 cup)
Sea salt
1 pound calamari, bodies only, cleaned and sliced into 1/2-inch rings
Freshly ground pepper
4 handfuls baby arugula
1 pink grapefruit, segmented
1/2 bulb fennel, shaved very thinly on a mandolin

Steps:

  • For the vinaigrette: Add the grapefruit juice and vinegar to a medium bowl. Add the olive oil while whisking to combine. Season with a pinch of salt and pepper.
  • For the calamari salad: Mix together the oil, chili flakes, garlic, lemon juice and zest, parsley and some salt in a large bowl. Add the calamari, toss together and let marinate for 20 minutes or up to 1 hour. Preheat a grill to high heat. Remove the calamari from the marinade and skewer them. Skewering the rings of the calamari onto 2 skewers each will help to keep them on the skewer and not fall off into the grill. Sprinkle with salt and pepper, and grill for about 2 minutes per side. They should be slightly charred and opaque. Add the calamari, arugula, grapefruit segments, fennel and vinaigrette to a large bowl and toss. Season with salt and pepper and serve immediately.

1 sprig thyme
1 bay leaf
10 coriander seeds
Juice of 2 lemons
1/2 pound squid, cleaned, washed and drained
2 sweet red peppers, split and seeded
3 tablespoons olive oil
1 small clove garlic, peeled and chopped
2 sprigs fresh coriander, leaves only, chopped
1/2 tablespoon sesame oil
1 tablespoon shallots, peeled and finely chopped
1 sprig fresh mint, leaves only, half of them chopped
2 bunches arugula, leaves only
1 tablespoon chives, minced
1 tablespoon sesame seeds
Coarse salt and freshly ground pepper to taste

Steps:

  • In a large pot over high heat, combine one quart water with one teaspoon salt, thyme, bay leaf, coriander seeds, the juice of half a lemon and freshly ground pepper. Bring to boil and cook for three minutes. Add the squid and boil again for another two to three minutes. Drain the squid and set aside to cool. Discard the cooking liquid with the herbs and condiments. Slice the squid into fourth-inch pieces and set aside.
  • Preheat the broiler. Brush the skin of the sweet red peppers with a half tablespoon of the oil and place on a baking sheet. Cook under the broiler until the skin turns black, about five to seven minutes. Remove from heat, let cool and wash the burned skin off under running water. Pat dry and cut the roasted pepper into thin strips. Set aside.
  • In a bowl, mix the squid, the red pepper strips, the juice of one lemon, one-and-a-half tablespoons of the olive oil, the garlic, half of the chopped coriander leaves, the sesame oil, the shallots, the chopped mint leaves and salt and pepper to taste.
  • In a separate bowl, mix the arugula with half of the chives, half of the sesame seeds, juice from one-half lemon, the remaining tablespoon olive oil and salt and pepper to taste.
  • Toast the remaining sesame seeds in a dry pan over medium heat or under the broiler, tossing often for one to two minutes or until golden, and set aside. Divide the arugula among four plates and spoon even amounts of squid on top of each bed of leaves. Sprinkle with the remaining minced chives, toasted sesame seeds, coriander leaves and mint leaves.

Two (6 to 8 ounce) fresh tuna steaks
1 tablespoon sesame oil mixed with 1 teaspoon or so rice vinegar
1/3 cup white sesame seeds or a combination of white and black seeds seasoned with salt and pepper
4 cups washed arugula mixed with washed Boston lettuce leaves
1/4 cup vinaigrette made with mustard

Steps:

  • Preheat oven to 400 degrees.
  • Brush tuna with sesame oil and rice vinegar and dip sides, bottom and top, into sesame seeds and transfer to a non-stick baking sheet. Bake for 10 minutes for rare or 20 minutes for more well done.
  • Meanwhile wash and dry salad and lightly coat with dressing. Make dipping sauce.
  • To serve, slice tuna steaks on bias and fan out in middle of plate; surround slices with salad and drizzle soy ginger reduction over the top.

4 small squid, cleaned
1 tablespoon roasted chili paste
1 teaspoon sunflower oil
1 teaspoon chopped ginger
1 teaspoon chopped garlic
1 teaspoon honey
1 lime, juiced
1 tablespoon fish sauce
2 tablespoons sunflower oil
1 teaspoon sesame oil
1 cucumber
1 medium pepper, deseeded and sliced lengthwise
4 spring onions
1 red Thai chili
3 cups mixed salad leaves
2 tablespoons chopped fresh mint leaves
2 tablespoons chopped fresh cilantro leaves
Sesame seeds

Steps:

  • Preheat a grill to high.
  • Score the squid on a chopping board. Place in a bowl with the roasted chili paste and oil. Mix well. Place on a griddle or barbecue and grill for a few minutes each side until the squid is golden brown. Be careful not to overcook or the squid will be chewy.
  • In the meantime, pound the ginger and garlic together in a pestle and mortar. Add the honey, lime, and fish sauce and mix well. Whisk in the sunflower and sesame oil.
  • Chop the cucumber, pepper, spring onions and chili peppers and place in a bowl with mixed salad leaves, mint and coriander.
  • Finely slice the grilled squid and add to the salad bowl. Pour over the dressing and sprinkle with sesame seeds.

1 tablespoon extra-virgin olive oil, plus more as needed

Steps:

  • Preheat the oven to 350 degrees. Heat 3 tablespoons of the olive oil in a large ovenproof skillet over medium-high heat. Add the garlic and cook until lightly browned, about 15 seconds. Add the squid and cook for 1 minute. Pour in the wine and season with salt and pepper to taste. Place the skillet in the oven just until the squid curls into cylinders, about 2 to 4 minutes.
  • Immediately remove the squid from the skillet with a slotted spoon. Place over medium heat, add the lemon juice and simmer until the liquid is reduced to about 1/3 cup. Return the squid to the pan. Remove the pan from the heat and toss in the tomato, parsley and arugula. Place on a platter, drizzle with the remaining 1 tablespoon of olive oil and serve immediately.
