SQUASH, EGG, AND CHEESE CASSEROLE



Squash, Egg, and Cheese Casserole image

A friend cooked us a similar dish and I was never able to get the original recipe. After a few years of trying, we've come up with this version and we like it even better than the first! A great way to get non-veggie lovers to indulge!

2 tablespoons vegetable oil
3 summer squash, sliced
1 small onion, diced
4 eggs, beaten
2 tablespoons milk
3 cups shredded Cheddar cheese, divided
2 tablespoons white sugar
2 tablespoons all-purpose flour
¼ teaspoon salt
¼ teaspoon ground black pepper
6 tablespoons butter, melted

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat vegetable oil in a large skillet over medium heat, and cook the summer squash and onion until tender, about 10 minutes. Stir occasionally.
  • While the squash are cooking, mix together the eggs, milk, 1 cup of Cheddar cheese, sugar, flour, salt, and black pepper in a large bowl. Stir in the squash mixture and melted butter; turn into a 2-quart casserole dish. Top with the remaining 2 cups of Cheddar cheese.
  • Bake in the preheated oven until the casserole is set and the cheese topping is crisp and starting to brown, 35 to 45 minutes. Allow to stand for 15 minutes before serving.

1 lb yellow squash, sliced
2 eggs, beaten
1/4 cup onion, finely chopped
1/2 teaspoon sage
1 cup cheddar cheese, grated
1/2 teaspoon salt
paprika, to taste

Steps:

  • Steam the squash until tender and drain it. In a large bowl blend together thoroughly the squash, eggs, onion, sage, 1/2 cup of the cheese, and salt.
  • Pour the mixture into a greased casserole.Sprinkle the mixture with the paprika and the remaining cheese.
  • Bake the casserole at 350 degrees F. for 20 to 25 minutes or until brown.

2 pounds winter squash, peeled, seeded and cut into 1-inch cubes
1 tablespoon butter
1/2 cup chopped onion
2 cups shredded cheddar cheese, divided
2 large eggs
3/4 cup whole milk
Salt and pepper to taste
1/2 cup soft bread crumbs
Ground nutmeg to taste

Steps:

  • In a saucepan, cook squash in enough water to cover until tender. Drain. in a skillet, melt butter over medium-high heat. Saute onion until tender. Place squash in a greased 2-qt. casserole. Top with the onion and half the cheese. Beat the eggs, milk and seasonings together. Pour over the squash. Top with remaining cheese; sprinkle with bread crumbs and nutmeg. Bake at 325° for 30 minutes or until set and lightly browned. Serve immediately.

Baked Butternut Squash with Garlic and Cheese image

Garlic complements the sweetness of the butternut squash very well. This is a great side or vegetarian main dish from the oven. If you cut the squash into small pieces, it will cut down on the cooking time as well.

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine olive oil, parsley, herbes de Provence, garlic, salt, and pepper in a large bowl. Add butternut squash pieces and toss to coat. Place in a single layer on an ungreased baking sheet.
  • Bake in the preheated oven until squash is soft, about 15 minutes. Turn squash pieces and bake 10 more minutes. Sprinkle with Parmesan cheese. Bake until golden brown, 15 to 25 minutes more.

The squash retains its fresh taste and cooks to a perfect tender crispness. You can give this cheesy treatment to other fresh veggies, too. It's so quick that I make some variation of it a few times a week. Everyone loves it!

1 small zucchini
1 small yellow summer squash
Salt and pepper to taste
1 cup shredded part-skim mozzarella cheese

4 cups sliced yellow squash
½ cup chopped onion
35 buttery round crackers, crushed
1 cup shredded Cheddar cheese
2 eggs, beaten
¾ cup milk
¼ cup butter, melted
1 teaspoon salt
ground black pepper to taste
2 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
  • In a medium bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9x13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.
  • Bake in preheated oven for 25 minutes, or until lightly browned.

¼ cup butter
4 yellow summer squash, thinly sliced
1 small yellow onion, thinly sliced
1 cup sour cream
1 egg, lightly beaten
1 cup shredded sharp Cheddar cheese
1 sleeve buttery round crackers (such as Ritz®), crushed and divided
¼ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 1-quart baking dish.
  • Melt 1/4 cup butter in a saucepan over medium heat. Cook and stir squash and onion in hot butter until tender, 10 to 15 minutes. Drain and cool vegetables.
  • Whisk sour cream and egg together in a large bowl. Add squash mixture, Cheddar cheese, and 1/2 of the crushed buttery round crackers; stir to combine and pour into prepared baking dish.
  • Stir remaining buttery round crackers and melted butter together in a bowl; spread over the top of squash mixture and gently pat down.
  • Bake in the preheated oven until crackers are lightly browned, about 20 minutes.

A delicious summer side dish filled with zucchini, squash and cheese.

3 medium zucchini (sliced)
3 medium yellow squash (sliced)
4 green onions (diced)
1 teaspoon Italian seasoning
3/4 teaspoon garlic powder
1 cup shredded cheddar cheese
Salt and pepper, to taste
1/2 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F.
  • Spray an 8x10-inch baking dish sprayed with nonstick cooking spray.
  • Combine zucchini, squash, onion, Italian seasoning, garlic powder and cheddar cheese in a large bowl until well combined.
  • Season with salt and pepper, to taste.
  • Spread the zucchini and squash mixture in prepared baking dish and bake, uncovered, for 25-30 minutes or until zucchini is tender.
  • Remove baking dish from the oven, sprinkle on Parmesan cheese and return to the oven.
  • Bake for an additional 10-15 minutes, or until the cheese is melted and golden brown.
