ASPARAGUS ORZO SOUP

1 lb asparagus spear
1/2 cup chopped onion
3 cloves garlic, minced
1 tablespoon olive oil
6 cups reduced-sodium chicken broth
1/2 cup dried orzo pasta or 1/2 cup other tiny pasta
3 cups snow pea pods, ends and strings removed
6 cups torn fresh spinach
1/4 teaspoon pepper
1/4 cup pesto sauce (optional)
1/4 cup finely shredded parmesan cheese

Steps:

  • Snap off and discard woody bases from asparagus.
  • Bias-slice asparagus into 1-inch-long pieces.
  • Set aside.
  • In a 4-quart Dutch oven cook onion and garlic in hot oil until tender.
  • Add chicken broth and bring to a boil.
  • Stir in pasta; reduce heat and boil gently for 5 minutes.
  • Stir in asparagus and snow peas.
  • Return soup to boiling and cook 3 minutes more.
  • Stir in spinach and pepper; cook 1 minute more.
  • Remove soup from heat.
  • Ladle soup into bowls.
  • If desired, swirl 1 to 2 teaspoons pesto into each bowl of soup.
  • Sprinkle Parmesan cheese on top of each serving.

I wanted to get the kids to eat yummy spring vegetables. This soup worked - they loved it. Saving it here for future reference

Number Of Ingredients 16

1 cup orzo pasta
2 tablespoons olive oil
2 garlic cloves, minced
1/2 white onion, chopped
2 green onions, chopped
4 -6 red potatoes
2 carrots, chopped
1/2 teaspoon herbes de provence
1/4 teaspoon oregano
4 ounces cremini mushrooms, sliced (or other)
6 cups vegetable broth (6 cups)
1/2 cup frozen peas
1 big handful fresh spinach
parmesan cheese
salt
pepper

Steps:

  • Cook orzo per package directions. Cook al dente.
  • Heat oil in large saucepan over medium heat.
  • Add garlic and onions to oil and saute until soft, about five minutes.
  • Add mushrooms, red potatoes and herbs to saucepan and saute for a few minutes.
  • Add 6 cups broth to the saucepan and bring to a boil. Reduce to simmer and cook until vegetables are tender, about 15 minutes.
  • Add frozen peas, orzo and spinach and cook for about five minutes.
  • Add salt and pepper to taste. Top with Parmesan cheese to taste - I like to heap it on!
