Sheet Pan Cookie Bars are the perfect treat to make for a potluck or party! This simple recipe comes together quick and is always a favorite!

1 cup butter, softened ((two sticks))
2 cups brown sugar
4 large eggs
2 teaspoons vanilla
3 cups flour ((430 grams))
1 teaspoon baking powder
1 teaspoon salt
1 12 ounce bag chocolate chips
1 12 ounce bag white chocolate chips

Steps:

  • Preheat oven to 350 degrees. Spray a 18 x 13 half sheet baking pan (standard sized baking pan) with cooking spray; set aside.
  • In a large bowl with a hand mixer or a stand up mixer, cream together the butter and sugar until light and fluffy, about two minutes. Add in the eggs and vanilla and mix until combined. Sift in the flour, baking powder, and salt and mix to combine. Fold in the two bags of chocolate chips, save a few for sprinkling over the top of the bars.
  • Pour the batter into the prepared pan and spread with rubber spatula or damp hands. Sprinkle on the remaining chips. Bake for 20-25 minutes until lightly golden brown. Cool on wire rack completely. Cut into squares.

Simple recipe for a great tasting bar cookie. This recipe came from a woman in my neighborhood who has been making these bar cookies for many years.

Number Of Ingredients 14

1 1/2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup white sugar
1/2 cup margarine
1 egg (beaten)
1/4 teaspoon almond extract
1 cup chocolate chips (may substitute peanut butter or butterscotch chips)
3 ounces cream cheese
2 tablespoons sugar
1 teaspoon sugar
1/3 cup evaporated milk
1/4 teaspoon almond extract
1/2 cup chopped walnuts (optional)

Steps:

  • Prepare crust by cutting margarine into flour, baking powder, salt and sugar until crumbly. Add beaten egg and extract. Take out approximately 1/4 cup crumb mixture and set aside for topping.
  • Press remaining crumbs into a lightly greased 8 inch square pan.
  • Combine second layer ingredients except for extract and nuts in saucepan and melt until smooth. Add nuts and extract. Spread filling over cookie base and spread remaining 1/4 cup of crumb mixture on top.
  • Bake at 375 oven for 25 minutes. Cool. Cut in bars.
  • Flavor is greatly improved if allowed to sit for a day. Store in sealed container.

I love baking cookies, and this is a recipe I've used for many Christmases over the years. Raspberry jam makes these cookies flavorful and colorful.

Number Of Ingredients 8

3/4 cup butter, softened
2/3 cup sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup raspberry jam

Steps:

  • Preheat oven to 350°. Cream butter and sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk together flour, baking powder and salt; gradually beat into creamed mixture. , Divide dough into four portions; shape each into a 12x3/4-in. log. Place 4 in. apart on two greased baking sheets. Make a 1/2-in. depression down center of each log; fill with jam., Bake until lightly browned, 15-20 minutes. Cool 2 minutes. Cut diagonally into 3/4-in. slices. Remove from pans to wire racks to continue cooling.

2/3 cup sugar
1/3 cup baking cocoa
1/4 cup packed brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cold butter
2 large eggs
TOPPING:
1 package (7 ounces) sweetened shredded coconut
1 can (14 ounces) sweetened condensed milk
2 cups semisweet chocolate chips
1/2 cup creamy peanut butter

Steps:

  • In a large bowl, combine the first six ingredients. Cut in butter until crumbly. Beat in eggs. Spread in a greased 13-in. x 9-in. baking pan. , Bake at 350° for 8 minutes. Sprinkle coconut over crust; drizzle with milk. Bake 20-25 minutes longer or until lightly browned. , Meanwhile in a microwave, melt chocolate chips and peanut butter; stir until smooth. Spread over brownies. Cool on wire rack. Cut into bars.

  • Preheat oven to 350°F (177°C). Line a 9-inch square baking pan with parchment paper, leaving enough overhang on the sides. Set aside.
  • In a large bowl using handheld or stand mixer, cream the butter and brown sugar together on medium speed. Beat for about 2 minutes until smooth and combined. Add the vanilla extract and egg, beating until combined. Scrape the sides of the bowl down as needed.
  • Add the flour, graham cracker crumbs, baking powder, and salt. With the mixer running on low, slowly mix until combined, then beat in the butterscotch chips. Press graham cracker dough into the prepared baking pan and bake for 5 minutes. Remove from the oven and layer with chocolate chips, coconut, and pecans. Drizzle sweetened condensed milk evenly on top. (Remember, not the full can. 8 ounces is a little more than 1/2 of a 14 ounce standard can.) I sprinkled a couple more butterscotch chips on top, but that’s optional.
  • Bake the bars until set, about 30 minutes. I loosely covered the pan with aluminum foil halfway through baking to prevent browning. Make sure you rotate the pan a couple times during the bake time as well. Allow to cool for 30 minutes at room temperature and then stick in the refrigerator to cool all the way through. Once the bottom of the pan is cold, you may cut the bars into squares.
