Baked Feta Pasta - the viral TikTok pasta trend! Proudly present my version with feta cheese, cherry tomatoes, and some extra spinach!

3.5 oz feta cheese
7 oz cherry tomatoes
1 ⅓ cup frozen spinach
¼ cup olive oil
½ mild red chili (optional, seeded & thinly sliced)
salt & pepper
7 oz tagliatelle (or pasta of choice)

Steps:

  • Preheat the oven to 390°F/200°C.
  • Place cherry tomatoes and frozen spinach in a baking dish. Place the feta in the middle and top it with chili. Drizzle with olive oil and season with a good pinch of salt and pepper. Bake for 30 minutes in the preheated oven.
  • In the meantime, cook the tagliatelle according to the package instructions al dente. Drain and set aside.
  • Toss tagliatelle with the cooked feta & serve!

This satisfying dish takes a traditional breakfast favorite and turns it into a savory version with an almost risotto-like texture. It's great served warm or at room temperature.

2 teaspoons fresh lemon juice
Kosher salt and freshly ground black pepper
1/8 teaspoon crushed red pepper, optional
2 cups old-fashioned rolled oats
One 5-ounce package fresh baby spinach
1 cup grape tomatoes, halved
3/4 cup crumbled feta
2 tablespoons extra-virgin olive oil
2 teaspoons finely chopped fresh dill
2 scallions, thinly sliced
Kalamata olives, sliced, optional

Steps:

  • Bring 4 cups water, lemon juice, 1 1/4 teaspoons salt, 1/2 teaspoon pepper and crushed red pepper if using to a boil in a large saucepan.
  • Stir in the oats, spinach and tomatoes, reduce the heat to medium and cook, stirring frequently, until the oats are just softened and the mixture is slightly thickened, about 7 minutes. Remove the saucepan from the heat and stir in the feta, oil and dill.
  • Transfer the oatmeal to individual bowls and garnish with scallions and olives if using.

3 packages (6 ounces each) fresh baby spinach, chopped
1 teaspoon water
1/2 cup crumbled feta cheese
1 plum tomatoes, seeded and chopped
1/4 cup finely chopped red onion
3 tablespoons fat-free mayonnaise
3 tablespoons fat-free sour cream
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon dill weed
20 slices French baguette (1/2 inch thick)

Steps:

  • In a large microwave-safe bowl, combine spinach and water. Cover and microwave on high for 1-1/2 to 2 minutes or until spinach is wilted, stirring twice; drain and squeeze dry. Add the feta cheese, tomato, onion, mayonnaise, sour cream, garlic, salt and dill weed; set aside., Arrange bread on a baking sheet. Broil 4 in. from the heat for 1-2 minutes or until lightly toasted. Spread each with about 1 tablespoonful spinach mixture. Broil 3-4 minutes longer or until heated through.
