ROASTED STUFFED DOUBLE LAMB LOIN



Roasted Stuffed Double Lamb Loin image

1/2 cup red onion, chopped, divided
1 tablespoon chopped garlic
2 ounces clarified butter and olive oil
4 ounces baby spinach
Salt and pepper
4 slices fresh bread crumbs
4 ounces feta cheese
2 ounces sun-dried tomatoes
4 1/2 pounds double lamb loin

Steps:

  • Make the spinach stuffing by sauteing 1/4 cup onions and garlic in the oil and butter. Add spinach and saute until wilted. Adjust seasoning with salt and pepper. Cool and combine with breadcrumbs and feta cheese.
  • Make the sun-dried tomato mixture by soaking the tomatoes to soften, drain and chop finely. Saute remaining 1/4 cup onions over medium-high heat until translucent. Add chopped tomatoes, heat thoroughly. Adjust seasoning with salt and pepper.
  • Preheat the oven to 375 degrees F.
  • Lay out loin, meat side up, trim away excess fat and sinew. Lay spinach/feta mixture between the 2 loins. Roll over the right flap and tightly pack it around the left loin. Roll the newly formed double loin over the left flap, cut off excess. Tie the roast tightly. Use a steel or wooden spoon to create a hole down the entire length of the lamb loin on each side of the stuffing. Using a pastry bag, pipe the tomato mixture into each hole. Season with salt and pepper. Brown over medium high heat. Roast for approximately 30 minutes. Check doneness with meat thermometer -- 120 degrees.

Smashed peeled garlic
1 to 2 teaspoons chopped fresh rosemary
Stuffing (see recipe above)
1/4 cup red wine
3/4 cup brown stock or beef broth
1 pound peeled, seeded and chopped tomatoes
1 tablespoon slivered pitted olives
Chopped parsley

Steps:

  • Preheat the oven to 400 degrees. Rub lamb inside and out with garlic clove. Stuff leg of lamb and tie securely; sprinkle meat with rosemary.
  • Put stuffed lamb on a rack and roast for 1 3/4 hours to 2 hours or until meat is 135 to 140 degrees. Remove from oven as you finish sauce.
  • Discard fat in roasting pan. Add wine and broth and reduce. Add tomatoes and olives and season to taste with salt and pepper. Remove from heat add parsley.

Dried plums and currants tossed with salted, roasted almonds, creme de cassis, and mint is the stuffing for my rolled lamb roast. It's a very easy way to dress up a lamb roast during the holidays. The simple herb rub adds just the right amount of seasoning along with fresh garlic inserted into the top of the roast. My balsamic basil fig sauce creation drizzled over the sliced lamb is the perfect finish touch and extremely flavorful thanks to the fresh basil.

½ cup coarsely chopped prunes
¼ cup currants
2 tablespoons creme de cassis liqueur
1 ½ tablespoons minced fresh rosemary
1 ½ tablespoons minced fresh thyme
½ teaspoon ground coriander
1 ¼ teaspoons salt
1 teaspoon freshly ground black pepper
1 (4 pound) boneless leg of lamb, rolled and tied
½ cup chopped roasted and salted almonds
2 tablespoons chopped fresh mint
3 cloves garlic, cut into thirds
2 tablespoons olive oil
½ cup balsamic vinegar
5 tablespoons butter
3 tablespoons honey
⅓ cup thinly sliced, stemmed Calimyrna figs
5 teaspoons chopped fresh basil
6 leaves mint
6 leaves basil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Combine the chopped prunes and currants with the creme de cassis in a small bowl, and set aside. In another small bowl, combine the rosemary, thyme, coriander, salt, and pepper; set aside.
  • Untie and unroll the lamb, lay it out flat on the work surface. Trim off excess fat, and cut any thick parts open so that it is evenly thick and somewhat rectangular in shape. Sprinkle half of the herb mixture over the lamb. Mix the almonds and chopped mint into the prune mixture; spread evenly over the lamb. Roll up starting at one of the short sides, and tie with kitchen twine in 1-inch intervals. Cut 9 slits about 1-inch deep into the top of the lamb, and insert a slice of garlic in each. Rub with olive oil, and sprinkle with the remaining herb mixture.
  • Place lamb seam-side up on a rack set in a roasting pan. Roast in the preheated oven to desired doneness. For medium-rare, a thermometer inserted into the center will read 140 degrees F (60 degrees C). Remove lamb from the oven and cover with foil. Allow to rest for 15 minutes while proceeding with the recipe.
  • While the lamb is resting, bring the balsamic vinegar to a boil in a small saucepan over high heat. Boil until the vinegar has reduced by half, 4 to 5 minutes. Once reduced, stir in the butter, honey, and sliced figs. Stir until the butter has melted, then remove from the heat, stir in the chopped basil and set aside.
  • To serve, remove the twine from the lamb and cut into 1/2 inch thick slices. Arrange on a warm serving platter and drizzle with the fig sauce, garnish with mint and basil leaves.

1 cup Yogurt Cheese, whisked until smooth, or sour cream
1 (8-ounce) package frozen spinach, thawed, with juices reserved
1/2 cup coarsely chopped mixed raw nuts, such as cashews, almonds, and pistachios
1/4 cup raisins
1 cup coarsely chopped fresh cilantro, including soft stems
3 1/2 to 4 pounds boaned leg of lamb (about 6 pounds with bone), all visible fat trimmed, bone removed (but not discarded), and the meat butterflied

1/4 cup fresh lemon juice
2 tablespoons melted ghee or vegetable oil
1 1/2 teaspoons salt, or to taste
1 teaspoon ground paprika
2 tablespoons melted honey

  • 1. Prepare the onion paste, and yogurt cheese. Then, in a food processor, process together the spinach with all the juices, nuts, raisins, and cilantro to make a thick purée.2. Place the lamb in a flat non-reactive baking dish. With a long-pronged barbecue fork or the pointed tip of a thin knife, prick it allover. Then make 2-inch long, deep cuts, each about 2 inches apart, over the entire outside surface of the lamb.3. In a bowl, mix together the lemon juice, ghee, salt, and paprika and rub well over both sides of the meat, making sure you work it into all the cut sections. Spread the pureed spinach on the entire inside surface. Then roll the lamb into a log, and, with cotton kitchen string, tie the roll crosswise and lengthwise to secure it.4. Mix together the yogurt .cheese (or sour cream), onion paste, honey, sesame oil, coriander, .cumin, garam masala, and cayenne pepper and rub well over the outside surface of the meat. Save any leftovers in a covered bowl in the refrigerator. Cover with plastic wrap and marinate in the refrigerator at least 12 and up to 48 hours, turning a few times.5. Preheat the oven to 450°F. Transfer the lamb to an ovenproof dish, along with its marinade, place the reserved bone alongside it, pour the water into the pan, and roast 1 hour.6. Reduce the heat to 300°F, baste with the reserved refrigerated marinade and roast until most, of the juices evaporate, the lamb is well-browned, and becomes soft, about 1 hour.7. Cut off and discard the string from the roast, slice the lamb into 1/2- to 1-inch slices, place on the serving platter, cover with foil, and keep warm.8. Add about 1 cup hot water to the pan and scrape off any browned bits sticking to the pan and on the bone. Transfer the liquid to a small saucepan and bring to a quick boil over high heat. This is a wonderful way to flavour and enjoy a leg of lamb. Sometimes I cook two the old-fashioned way over fire, and of course you're welcome to do the same if you can, but I've written this recipe for roasting in a standard oven. Get some lovely local lamb from your butcher and get them to bone it, too.

150 grams (5 ounces) stale rustic bread
50 mililliters (scant 1/4 cup) Prosecco
Olive oil
1 lemon
4 cloves of garlic
1 dried red chilli
1 bunch of fresh mint (30 grams [1 ounce])
4 anchovy fillets in oil, from sustainable sources
1 tablespoon baby capers in brine
1 large butterflied leg of lamb, boned but shank bone left in (2.5 kilograms [5.5 pounds])

Steps:

  • Preheat the oven to 200 degrees C (400 degrees F). Tear the bread into rough 2-centimeter (3/4-inch) chunks and place in a food processor, then pour over the Prosecco, drizzle with 1 tablespoon of oil, finely grate in the lemon zest and squeeze in the juice. Season generously with sea salt and black pepper, then leave to soak for 10 minutes. Peel the garlic and roughly chop with the chilli, pick the mint leaves, and add to the processor with the anchovies and capers. Pulse into crumbs, then taste and season to perfection, if needed.
  • Lay the lamb leg on a board, skin side down. Massage all over with a pinch of salt and pepper, then spoon over the stuffing in an even layer. Roll up the leg meat to seal the filling inside, then tie at regular intervals with six lengths of string to make sure the stuffing is secure. Place straight on to the bars of the oven, with a tray underneath to catch the juices. Roast for 1 hour 10 minutes, or until the lamb is golden, yet still blushing and pink in the middle (cook for a further 10 to 15 minutes if you prefer your lamb well done). Rest for 5 minutes, while you simmer the tray of drippings on a medium heat with a little water, stirring to pick up any nice sticky bits. Slice the lamb and spoon over the tray juices. Beautiful served with roast potatoes and seasonal veg--or I love it stuffed into a sandwich.

olive oil, or as needed
2 tablespoons chopped fresh oregano
2 tablespoons chopped fresh basil
1 (12 ounce) jar marinated artichoke hearts, drained and chopped
1 (8 ounce) package crumbled feta cheese
1 (6 ounce) jar sun-dried tomatoes packed in oil, drained and chopped
3 cloves garlic, minced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lay out the leg of lamb on cutting board with the inside of the lamb facing you. Drizzle olive oil evenly over the lamb. Sprinkle oregano and basil over the lamb. Top lamb with artichoke hearts, feta cheese, sun-dried tomatoes, and garlic; season with salt and pepper.
  • Roll the lamb around the stuffing. Bundle the lamb with kitchen twine to keep from unrolling. Wrap lamb in aluminum foil and place in a baking dish.
  • Roast in preheated oven to your desired degree of doneness, or an internal temperature of 150 degrees F (70 degrees C) for medium, about 90 minutes. Set aside to rest in a warm area for 10 minutes before slicing. Reserve pan juices for serving.

1 tablespoon olive oil
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 logs (4 ounces each) fresh goat cheese, crumbled
3/4 teaspoon salt, divided

1 boneless butterflied leg of lamb (4 to 5 pounds), trimmed
3 garlic cloves, slivered
3 tablespoons minced fresh rosemary

Steps:

  • In a small skillet, saute minced garlic in oil for 2-3 minutes. Remove from the heat; stir in the spinach, cheese, 1/2 teaspoon salt and 1/8 teaspoon pepper., Untie lamb and open so it lies flat; flatten to 3/4-in. thickness. Spread spinach mixture over meat to within 1 in. of edges. Starting with a short side, roll up lamb and tuck ends in; tie with kitchen string at 2-in. intervals. With a sharp knife, make slits on the outside of meat; insert garlic slivers. Sprinkle with rosemary and remaining salt and pepper., Place seam side down on a rack in a shallow roasting pan. Cover and bake at 425° for 1 hour. Uncover; bake 15-30 minutes longer or until browned and a thermometer reads 160°, basting occasionally with pan juices. Let stand for 10-15 minutes before slicing.

  • Remove the string or netting from the leg of lamb and open it on a cutting board. Butterfly the lamb so that it lays flat in a mostly even layer. To do this, start at the thinner side of the lamb and look at it straight on, so you can see the thicker and thinner parts and how much butterflying needs to be done. Make shallow, horizontal slices into the thicker part of the meat (look for where the thin part starts to increase in thickness), about 3/4" deep, folding the meat open as you make those cuts. Continue in this manner until you've laid the lamb leg open into a fairly even layer.
  • If you have a larger flap that hangs off of the roast, independent from the rest, you can leave it attached, or slice it off to wrap and freeze for stews or kebabs later on. I removed the extra flap, just to make the unrolled lamb leg a long, even piece that would roll up more evenly.
  • Turn the butterflied lamb over so the fat side faces up. Trim the lamb of excess fat, silver skin and sinew. There should be some fat, but not too much. Follow the video to see how I did it.Cover and set aside.
  • Preheat the oven to 350°. Spread the walnuts on a baking sheet and toast for 10 minutes or until browned and fragrant. Transfer to a mini food processor and pulse to chop the nuts finely. Transfer the nuts to a medium bowl.
