STUFFED CUCUMBER BITES



Stuffed Cucumber Bites image

This is an easy appetizer which tastes great!

Number Of Ingredients 6

2 cucumbers (, peeled and sliced 3/4 inch thick and hollowed with a melon baller)
8 oz block cream cheese at room temperature
2 tbsp mayonnaise
2 tsp Hidden Valley Ranch dressing mix
1/4 tsp salt
Halved grape tomatoes

Steps:

  • Peel and slice cucumbers to 3/4 thick.
  • With a melon baller, cut out center portion of the cucumber.
  • Mix the cream cheese, mayo, hidden valley ranch mix, and salt in a bowl.
  • Place in a pastry bag with a rosette pipette end.
  • Pipe cucumber slice with cream cheese to 1/2 inch above cucumber.
  • Stand a halved grape tomato in the cream cheese.
  • Sprinkle with chives, fresh dill weed, or parsley to garnish.

I found the original recipe for this on the back of the Stouffer's box and have tinkered a bit with the ingredients and directions. This is an excellent use of their Spinach Souffle.

Number Of Ingredients 9

1 package stouffer frozen spinach souffle, defrosted
2 tablespoons butter or 2 tablespoons margarine
3 tablespoons chopped onions
1 clove garlic, crushed
3/4 cup water or 3/4 cup chicken broth
2 1/3 cups herb stuffing mix (not crouton style)
1/2 lb bulk sausage, thoroughly cooked,drained and crumbled (I use breakfast sausage)
1/4 cup parmesan cheese, plus additional for garnish
2 1/2-3 lbs whole white mushrooms, stems removed and chopped

Steps:

  • Melt butter in medium saucepan; add onion, garlic and mushroom stems, cook until onion is translucent.
  • Add water (or broth); heat to boiling.
  • Remove pan from heat.
  • Add stuffing mix and stir until moistened.
  • Stir in souffle, cooked sausage and 1/4 cup parmesan cheese.
  • Stir well.
  • Arrange mushrooms on baking sheet and fill with spinach mixture, mounding slightly.
  • Sprinkle with additional parmesan cheese.
  • Bake in a preheated 400 degree oven for 10- 15 minutes or until cheese and mushrooms are lightly browned.
  • Enjoy.

1 large cucumber
3 ounces low-fat cream cheese, softened
1 tablespoon blue cheese, crumbled
2 teaspoons fresh parsley, minced
1 teaspoon fresh dill, minced
1 teaspoon onion, grated
20 pimientos, strips
to taste dill sprigs (to garnish)

Steps:

  • Run the tines of a fork lengthwise down the cucumber.
  • Cut a 1" slice from each end.
  • Cut cucumber in half lengthwise; remove and discard seeds.
  • Place cucumber cut side down on paper towel for 10 minutes.
  • Combine cheeses, parsley, dill and onion; spoon into cucumber halves.
  • Put halves back together; wrap in plastic wrap.
  • Refrigerate for 3 to 4 hours.
  • Cut into 1/2" slices; garnish with pimiento and dill.

1 package (12 ounces) jumbo pasta shells
1 tablespoon butter
1 cup sliced mushrooms
1 small onion, finely chopped
4 garlic cloves, minced
2 large eggs, lightly beaten
1 carton (15 ounces) part-skim ricotta cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 tablespoons minced fresh basil or 2 teaspoons dried basil
1/4 teaspoon pepper
1 can (4-1/4 ounces) chopped ripe olives
1-1/2 cups shredded Italian cheese blend, divided
1-1/2 cups shredded part-skim mozzarella cheese, divided
1 jar (24 ounces) marinara sauce
Additional minced fresh basil, optional

Steps:

  • Preheat oven to 375°. Cook pasta shells according to package directions for al dente. Drain; rinse with cold water., Meanwhile, in a small skillet, heat butter over medium-high heat. Add mushrooms and onion; cook and stir until vegetables are tender, 4-6 minutes. Add garlic; cook 1 minute longer. Remove from heat; cool slightly., In a large bowl, mix eggs, ricotta cheese, spinach, basil and pepper. Stir in olives, mushroom mixture and 3/4 cup each cheese blend and mozzarella cheese., Spread 1 cup sauce into a 13x9-in. baking dish coated with cooking spray. Fill pasta shells with cheese mixture; place in baking dish, overlapping ends slightly. Spoon remaining sauce over top., Bake, covered, until heated through, 40-45 minutes. Uncover; sprinkle with remaining cheeses. Bake until cheese is melted, about 5 minutes longer. Let stand 5 minutes before serving. If desired, sprinkle with additional basil.

1 medium cucumber
1/2 teaspoon salt
3 ounces cream cheese, softened
1/4 cup chopped green pepper
2 tablespoons chopped onion
1/2 teaspoon Worcestershire sauce
1/8 teaspoon pepper
Dash paprika
French salad dressing, optional

Steps:

  • Cut cucumber in half lengthwise. Scoop out seeds and pulp, leaving a 1/4-in. shell. Place seeds and pulp in a colander. Sprinkle with salt; drain for 30 minutes. , Meanwhile, combine the cream cheese, green pepper, onion, Worcestershire sauce and pepper; mix well. Stir in 2-3 tablespoons drained pulp. Spoon into cucumber shells; sprinkle with paprika. Refrigerate until serving. Serve with French dressing if desired.

6 large eggs, lightly beaten
1 package (6 ounces) stuffing mix
1/2 cup butter, melted
1 cup grated Parmesan cheese

2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry

Steps:

  • In a bowl, combine eggs, stuffing mix, butter, Parmesan cheese, salt and pepper. Add spinach; mix well. Shape into 1-1/2-in. balls; place in an ungreased 15x10x1-in. baking pan. Bake at 350° for 12-15 minutes or until lightly browned.

Magnificent jumbo pasta shells stuffed to bursting with cheesy spinach filling.

32 jumbo pasta shells
2 cups ricotta cheese
2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 cup grated Parmesan cheese
2 tablespoons fennel seed
2 teaspoons dried basil
4 cloves garlic, minced
salt and pepper to taste
3 ½ cups spaghetti sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to boil, gently place pasta shells in boiling water; bring water back to boil. Cook until noodles are just tender; drain well.
  • Squeeze spinach dry. Combine spinach, ricotta, 1/3 cup Parmesan cheese, fennel, basil and garlic in a large mixing bowl. Season with salt and pepper; mix well.
  • Spread 1/2 cup marinara sauce evenly over the bottom of a 9x13 inch baking dish.
  • Fill each pasta shell with the spinach cheese mixture. Arrange the shells, filling side up in the baking dish. Spoon remaining marinara sauce over the shells. Sprinkle remaining Parmesan cheese on top of the shells.
  • Cover the pan loosely with aluminum foil and bake in preheated oven until heated through; about 30 minutes.
