STUFFED SPINACH BREAD RECIPE

Steps:
- Preheat the oven to 350°F. In a large skillet, brown the sausage until cooked through. Squeeze the spinach to remove excess moisture. Add to the skillet with sausage and sauté until heated through. Set aside. Roll out dough into a 14x6 rectangle, or about 1/3-inch thick. Sprinkle with half the cheese, then top with spinach mixture and remaining cheese. Roll up dough like a cinnamon roll, starting with the long end. Pinch seam to seal. Pinch the ends to seal completely and place on cookie sheet, seam side down. Bake for 30 minutes or until golden brown. Let stand 5-10 minutes before slicing.

My mom made this recipe years ago and I always remembered how good it tasted! So I made it myself from memory, and it was a success, even with folks who thought they didn't like spinach. Try it for a tasty surprise.

- In a large skillet, cook sausage over medium heat until no longer pink; drain. Sprinkle with salt and basil. Roll out bread dough to a 13x10-in. rectangle. Sprinkle with meat mixture. Top with spinach; sprinkle with cheese. Roll up jelly-roll style, starting with a long side; pinch seams to seal and tuck ends under. , Place seam side down on a greased baking sheet. Bake at 350° until crust is golden brown, 25-30 minutes. Serve warm. Refrigerate leftovers.

Steps:
- Combine feta and next 10 ingredients in a bowl.
- Roll dough into a 16 x 10-inch rectangle on a lightly floured surface.
- Spread spinach mixture over dough, leaving a 1/2-inch border.
- Beginning with a long side, roll up jelly-roll fashion; pinch seam and ends to seal.
- Place roll, seam side down, on a baking sheet coated with cooking spray.
- Cut diagonal slits into top of the roll using a sharp knife.
- Cover and let rise in a warm place 1 hour or until doubled in size.
- Preheat oven to 350°.
- Sprinkle Parmesan cheese over the top of the roll.
- Bake at 350° for 45 minutes or until golden.

- Preheat oven to 425°F.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add onion and sauté until tender, about 3 minutes. Add garlic and stir 30 seconds. Remove from heat and stir in spinach, peppers, olives, crushed pepper, 3 tablespoons Parmesan cheese, salt and pepper.
- Roll out pizza dough into a 12-inch round using just enough flour on the work surface and dough to keep it from sticking. Brush off excess flour and transfer dough to a baking sheet. Sprinkle remaining Parmesan cheese over the center and mound the spinach mixture on one side of the dough leaving a 1/2-inch border of exposed dough at the edge. Brush the exposed edge with water, and fold the other side of the dough over top, stretching it so that it completely encases the filling. Firmly pinch the edges together sealing the filling inside. Cut 4 slits in the top and brush with remaining olive oil. Bake until crisp and brown, about 20 minutes; cool 10 minutes before serving. Cut in 6 wedges.

QUICK AND EASY SPINACH BREAD

- Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with non-stick cooking spray.
- Heat olive oil in a skillet or frying pan over medium heat. Add garlic and saute until soft, about two minutes. Add spinach and cook until liquid has evaporated. Stir in salt, pepper, Parmesan and garlic powder. Remove from heat and let cool.
- On a lightly floured surface, roll out pizza crust into a 10x14 inch rectangle. Spread spinach mixture and mozzarella cheese on top of dough. Starting from on end, roll up the crust to make one large loaf. Pinch seam to seal. Place loaf onto prepared baking sheet.
- Bake in preheated oven for 20 to 25 minutes, until golden brown.

SPINACH AND FETA STUFFED BREAD
This is my version of an old Cooking Light recipe (August 2004)...I discovered it while running at the gym at 6 am, and I'm SO glad I asked for a pen and paper to write it down LOL! This is absolutely a weekly standby for DH and I, and even satisfies his carnivorous appetite. The original recipe calls for golden raisins (I'm not a fan) and 2 T lemon juice.

- Preheat oven to 450.
- Unroll pizza crust on a greased baking sheet and shape into a rectangle. Set aside.
- Heat oil in a large pan over med-high heat. Add onion and garlic and saute 2-3 minutes.
- Add spinach in stages, stirring until wilted. Remove pan from heat and stir in remaining ingredients.
- Using a slotted spoon, place filling onto lower half of crust. Pull upper half over filling and crimp edges to seal. With a sharp knife, cut 3 or so small slits in the top for steam.
- Bake 15 minutes.
- The original recipe calls for brushing with milk and sprinkling parmesan cheese. Sometimes I skip the milk and just sprinkle parmesan and garlic powder on top.

Steps:
- Heat oven to 375ºF.
- Heat oil in large skillet on medium heat. Add garlic, crushed red pepper and spinach; cook 2 to 3 min. or just until spinach is wilted, stirring constantly. Remove from heat.
- Mix cream cheese, roasted peppers, 1-1/2 cups mozzarella and 1/2 cup Parmesan in medium bowl until blended. Add spinach mixture; mix well.
- Cut ciabatta loaf lengthwise in half. Remove bread from insides of both bread halves, leaving 1-inch-thick shells. Reserve removed bread for another use. (See tip.)
- Fill bread shells with spinach mixture; place on parchment-covered baking sheet. Top with remaining mozzarella and Parmesan cheeses.
- Bake 25 to 30 min. or until cream cheese mixture is heated through and tops are golden brown. Cool 5 min.
- Cut each bread shell crosswise into 6 slices. Cut each bread slice crosswise in half, then diagonally in half to serve.
