SPINACH, SAUSAGE AND CHEESE BAKE
If you love the rich flavors of cheese and sausage, this recipe is for you. This is a wonderful quick dinner idea. Perfect for families on the run and a wonderful party dish. Even people who hate Spinach love this awesome dish!!!

Steps:
- Brown sausage in skillet over medium high heat. Drain fat from skillet and stir in tomato sauce. Set mixture aside.
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the spinach, cottage cheese, Parmesan cheese and egg. Mix well and spread mixture in the bottom of a 9x13 inch baking dish. Spoon sausage mixture over spinach mixture and top with mozzarella cheese.
- Bake in preheated oven for 40 minutes.

SPINACH APPETIZERS
Instead of sausage balls, try these savory spinach treats -- they're great! The recipe was given to me while shopping by a lady at the grocery store. The formed balls may be stored frozen in airtight containers until ready for use.

Steps:
- In a large bowl, mix together chopped spinach, dry bread stuffing mix, eggs, Parmesan cheese, onion, butter and Cheddar cheese. Cover and chill in the refrigerator approximately 30 minutes.
- Drop the mixture by rounded spoonfuls onto a lightly greased large baking sheet. Place baking sheet in the freezer approximately 1 hour.
- When ready to bake, allow the balls to partially thaw, about 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking sheet.
- Bake the balls in the preheated oven 20 to 25 minutes, or until lightly browned.

- Preheat oven to 325 degrees.
- Cook and drain chopped spinach. Squeeze spinach until dry with paper towel.
- Combine other ingredients and mix well.
- Shape into 1 inch balls.
- Place on ungreased baking sheet and bake in 325 degree oven for 15 minutes.

- cook sausage thorougly, drain and set in large bowl. Add ricotta cheese, mix well. Add spinach, mix well. Add cheddar cheese, mix well. Remove one can of dough from fridge, separate triangles. Spread flat and add 1 TBSP of mixture to each triangle. Can either roll them up, or can fold up (like a diaper) I use the diaper method myself. Repeat with each can. Can cut triangles in half and use 1 tsp for smaller puffs (will double recipe)

- Cook spinach according to instructions, drain in a sieve, use back of a wooden spoon to press the spinach against the sieve to get as much moisture as possible out In a bowl combine the spinach, stuffing mix,cheese, eggs, butter, salt& pepper Mix thoroughly& roll into small balls 3/4 to 1" size.
- Place on a cookie sheet& freeze.
- When frozen place in a plastic zip lock bag.
- To serve place frozen balls on a cookie sheet and bake at 350F 10-15 minutes or until lightly browned If you are doing them fresh or thawed only bake for 7-10 minutes.
- Serve hot.

- In a large skillet over medium heat on stovetop, brown sausage; drain.
- Add spinach, cream cheese, and sour cream.
- Cook over medium heat until bubbly, stirring occasionally to keep from burning on bottom.

- When cheese is melted, add garlic.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Add sausage to a large skillet over medium-high heat. Cook and stir with a spatula, breaking apart the sausage until cooked, 5 to 7 minutes. Reduce heat to medium. Add spinach, green onions, and red pepper flakes. Continue cooking until the spinach is thawed, 3 to 5 minutes.
- Remove from heat and stir in ricotta cheese and feta cheese. Season with salt and pepper.
- Unwrap the phyllo dough and cover with a towel to keep it from drying out.
- Working with one sheet at a time, brush 1/2 of the sheet with melted butter. Fold it in half lengthwise. Place a 1/4 to 1/2 cup of filling in the top-left corner. Fold the bottom-left corner over into a triangle shape. Continue folding edge over edge until you reach the end of the dough and a triangle shape is formed. Place the triangle on the baking sheet. Repeat with the remaining ingredients.
- Brush all the triangles with melted butter.
- Bake in the preheated oven until golden brown, about 25 minutes.
