FUDGY CHOCOLATE-SPINACH BROWNIES
Steps:
- Preheat the oven to 350 degrees F. Butter an 8-inch square baking pan and dust it with the cocoa powder, tapping out the excess.
- Fill a medium saucepan 1/3 full of water and bring it to a boil over medium-high heat. Put the butter, chocolate and espresso powder in a heatproof bowl, set it on the saucepan and turn off the heat. Let the bowl stand for about 5 minutes until the chocolate mixture is melted. Stir together until very smooth. Stir in the sugar until dissolved. Remove the bowl from the saucepan; let cool to room temperature.
- Squeeze any excess moisture from the spinach and put it in a food processor. Add the vanilla and 1 tablespoon of water and puree until very smooth. Add the spinach puree and eggs to the cooled chocolate mixture and whisk until well combined.
- Whisk together the flour, cocoa powder, baking powder and salt in a medium bowl until combined. Add the wet ingredients to the dry and fold with a rubber spatula until combined. Add the chocolate chips and stir to combine. Pour the batter into the prepared pan; use an offset spatula to spread the batter evenly. Bake until set and a toothpick inserted in the center still has a few moist crumbs stuck to it, about 25 minutes.
- Cool the brownies completely in the pan before cutting.
SPINACH & BLACK BEAN BROWNIES
the brownies will not be firm until after they are baked and chilled completely. In other words, you would ideally make these one day and serve them the next. When they come out of the oven, they are more of a pudding texture which is certainly delicious, but you can't slice them like a traditional brownie until they are 100% cold from the fridge. Just letting you know, m'kay? :) From: http://www.carrieonvegan.com/2012/10/12/healthy-vegan-friday-spinach-black-bean-brownies/

Steps:
- Preheat oven to 375 degrees.
- Lightly spray a large baking dish (I recommend 13″x 9″) with non-stick cooking spray and set aside.
- Combine all ingredients in a high-speed blender and process until smooth, adding a small amount of non-dairy milk if necessary to blend.
- Pour batter into baking dish and bake for at least 45 minutes. If the top of the brownies begins to burn during the last 10-15 minutes of baking, drop the temperature to 350 degrees.
- Let brownies chill completely before serving, preferably overnight in the refrigerator.
- Alternatively, you can bake the brownies at 300 degrees for 1 hour and then an additional hour at 225 degrees.
- Frosting: Combine ingredients in a high-speed blender and process until smooth. Note: it is not necessary to soak the dates for the frosting recipe.

SPINACH-CARROT BROWNIES
No one will be able to guess what healthy ingredient these brownies have in them! This recipe is from Parents magazine. I've made them a few times and my kids love them. I'd like to experiment and replace the vegetable oil with applesauce and see if it still turns out good. If you liked these, try my Spinach Brownie Bites Recipe #223677!

SPINACH " BROWNIES"
I found this recipe in Rockwell Springs Trout Club Centennial Cookbook. I have made this recipe and it was received very well. It would make a good appetizer.
