FILET MIGNON WITH CHERRY-BALSAMIC REDUCTION

While visiting Los Angeles, I found this recipe on a card that you can pick up at the local grocers. This particular combination of meat and fruit had me intrigued so I brought it back for use at some later point. Filet mignon is pricey so this is certainly a special occasion food. Planning to serve it with roasted potatoes and maybe some nice asparagus.

2 teaspoons olive oil
2 shallots, chopped finely
1 large garlic clove, minced
1/3 cup dry red wine (shiraz or zinfandel)
1/3 cup balsamic vinegar
2 tablespoons cherry preserves
1 cup frozen dark cherries, thawed
4 (5 ounce) filet mignon
1/8 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat olive oil in a small heavy metal or ceramic saucepan. Add shallots and cook until they are soft and wilted, not browned (about 3 minutes). Add garlic and stir for 30 seconds. Add the wine, preserves, vinegar and cherries. Increase the heat to bring the sauce to a light boil, stirring occasionally. Let the sauce reduce to half the original amount (about 10-12 minutes). It should get thick and syrupy.
  • When the sauce is almost done, preheat broiler. Pat steaks dry and sprinkle salt and pepper on both sides of the steaks. Broil to the desired level of doneness.
  • For rare steaks: cook 2 1/2 minutes per side; for medium rare, cook 3 minutes per side; for medium, cook 3 1/2 minutes per side; for medium well, 4 minutes per side.
  • To serve, serve steaks on a serving platter and sauce on the side. Or you can spoon sauce over each steak served on individual plates.

1 tsp olive oil
¼ cup shallots (sliced)
1¼ cup frozen pitted cherries
1 tbsp balsamic vinegar
⅓ cup sweet red wine
⅛ tsp salt
⅛ tsp black pepper
¼ tsp chipotle pepper ((optional))
1 tbsp butter

Steps:

  • Heat oil in a small pot, and sauté the shallots until caramelized.
  • Add cherries, vinegar, and wine. Simmer the savory cherry sauce for twenty minutes so that it can reduce and thicken.
  • Season the sauce with salt, black pepper, and chipotle pepper (if using). Finally, swirl in the butter.
  • Serve this yummy sauce with lamb, pork, chicken, and more!

1 cup balsamic vinegar
2 tablespoons olive oil
1/2 cup pitted and chopped northwest fresh sweet cherries
1 tablespoon dijon-style mustard
1 tablespoon sugar
2 teaspoons chopped fresh sage
1 teaspoon chopped fresh rosemary
1 teaspoon thyme
1/2 teaspoon salt
1/8 teaspoon ground pepper
1/2 cup pitted and halved northwest fresh sweet cherries

Steps:

  • Mix vinegar and olive oil; reduce mixture to ½ cup.
  • Add chopped cherries, mustard, sugar, herbs, salt, and pepper; simmer 10 minutes. Reserve half of sauce for marinade.
  • Add halved cherries to remaining sauce; return mixture to a boil and simmer about 1 minute.
  • Serve with grilled meat, poultry, or fish. Makes 4 servings sauce (and about 1/3 cup marinade).

2 5-ounce boneless pork chops (each about 1 inch thick)
1/3 cup bottled balsamic vinaigrette
1 tablespoon butter
1 large shallot, thinly sliced
1/3 cup canned low-salt chicken broth
1/4 cup dried Bing (sweet) or tart cherries (about 1 1/2 ounces)

Steps:

  • Place pork and vinaigrette in pie dish; turn to coat. Let stand 10 minutes.
  • Melt butter in heavy medium skillet over medium heat. Using tongs, lift pork from marinade; shake off excess. Transfer pork to skillet, reserving marinade in dish. Sprinkle pork with pepper. Sauté until brown, about 3 minutes per side. Transfer pork to plate. Add shallot to skillet; stir until softened, about 1 minute. Add broth, cherries and reserved marinade; bring to boil, scraping up browned bits. Return pork to skillet. Simmer until pork is cooked through, cherries are tender and sauce is slightly reduced, about 2 minutes per side. Season with salt and pepper. Transfer pork to plates; top with sauce.

This is a truly special dinner entree. A bit labor intensive to start off with, but once you have the glaze and cherry sauce done the rest of the preparation goes together like a dream, and the taste is out of this world. If you really have some special guests you want to impress, then this is the perfect choice. I accompany mine with sea salt roasted baby potatoes and green beans.

2 cups merlot or 2 cups other red wine
2 cups fresh cherries, pitted (I have very successfully substituted bottled morello cherries)
2 cloves garlic, chopped
1 shallot, chopped
4 cups lamb stock or 4 cups chicken stock
1 tablespoon unsalted butter
salt & freshly ground black pepper
1 (750 ml) bottle merlot
1 1/2 cups good quality balsamic vinegar
1 shallot, chopped
1 clove garlic, chopped
4 lamb racks, excess fat trimmed and bones frenched (1 1/2 to 2 lbs. each)
salt & freshly ground black pepper
1 tablespoon extra virgin olive oil
rosemary sprig, for garnish

Steps:

  • To prepare the sauce; combine the wine, cherries, garlic and shallot in a saucepan over high heat and reduce until the mixture is almost dry, about 10 minutes.
  • Add the stock, decrease the heat to medium, and reduce until the sauce is thick and coats the back of a spoon, 10 to 15 minutes.
  • Add the butter and stir until melted.
  • Season to taste with salt and pepper.
  • Keep warm until you are ready to serve.
  • Preheat oven to 300*F.
  • To prepare the glaze, combine the wine, vinegar, shallot and garlic in a saucepan over medium heat and reduce until about 1/2 cup liquid remains, 20 to 25 minutes.
  • Set aside until you are ready to use it.
  • To prepare the lamb, season the racks well with salt and pepper.
  • Heat the oil in a large saute pan over high heat until smoking hot.
  • Add as many of the racks as will fit without overcrowding the pan, meat side down, and sear well, 3 to 4 minutes; transfer to a sheet pan.
  • Continue searing the remaining racks.
  • Baste the racks well with the glaze.
  • Set the pan in the oven and roast, basting every 5 minutes, until the meat reaches an internal temperature of 135*F for medium-rare doneness about 20 minutes.
  • Remove the racks from the oven and let sit for about 5 minutes, then slice.
  • To serve, place the slices on a warm serving platter and drizzle with some of the sauce.
  • Garnish with rosemary sprigs and serve warm, with any extra sauce on the side.

4 boneless skinless duck breast halves
3 teaspoons extra virgin olive oil, divided
salt, to taste
1/2 cup white wine
2/3 cup fresh cherries, pitted and halved (or 1/3 cup dried)
3 tablespoons balsamic vinegar
2 tablespoons honey
1 teaspoon extra virgin olive oil
1/2 cup chicken stock
1 1/2 tablespoons fresh sage, chopped
1 -2 garlic clove, peeled and minced
1/2 teaspoon onion powder
fresh ground pepper, to taste

Steps:

  • To prepare marinade, whisk balsamic vinegar through pepper together until combined.
  • Marinate duck breast halves in a covered dish in the refrigerator for 2-10 hours, turning occasionally.
  • Remove duck from marinade; reserve marinade.
  • Wipe and pat duck breast halves dry with paper towels, rub on all sides with one teaspoon of olive oil, and sprinkle with salt.
  • Heat 2 teaspoons olive oil in a heavy skillet on medium-high until the oil starts to smoke.
  • Add the duck breast halves and cook 3 minutes on each side, or until golden brown.
  • Remove to platter and keep warm.
  • Turn heat to high; add wine to skillet and bring to a boil, scraping the bottom to release browned bits.
  • Add reserved marinade and cherries and cook, stirring frequently, several minutes or until sauce has reduced by about half.
  • Taste and adjust for seasoning if needed.
  • Pour reduction (sauce) over duck and serve at once.
