SIMPLY DIVINE MEAT LOAF WITH SPINACH
This meat loaf is moist, delicious, and a real crowd pleaser. It is fabulous with venison or ground turkey, too. It makes great sandwiches. Get creative with additional mix-ins!

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, mix the ground beef, eggs, sour cream, Worcestershire sauce, dry onion soup mix, Parmesan cheese, salad dressing, bread crumbs, and spinach. Transfer to a 5x9 inch pan, and cover with aluminum foil.
- Bake 45 minutes in the preheated oven. Remove foil, and continue baking 15 minutes, to a minimum internal temperature of 160 degrees F (70 degrees C). Let stand 5 minutes before slicing.

SPINACH MEATLOAF
I am always looking for ways to make food a little healthier. This is a good meatloaf with some fiber and a few other things that are good for you thrown in.

- Mix EVERYTHING together.
- EXCEPT STEAK SAUCE.
- Shape into a loaf and bake 45 min at 350, add steak sauce on top the last 10 minutes.

MARSHALL FIELD'S MEATLOAF WITH RED PEPPER SAUCE
Another favorite of mine from Dayton's/Marshall Field's/Macy's. The pine nuts, spinach and red pepper sauce give it a different flair. Good with skin-on mashed potatoes

Steps:
- Meatloaf:.
- Preheat oven to 350 degrees.
- Finely crush croutons and combine with broth in small bowl. Let stand 10 minutes.
- Heat oil in skillet. Add onions and cook over medium heat 8 to 10 minutes or until soft. Set aside.
- In large bowl, beat eggs. Mix in pesto, pine nuts, Worcestershire sauce, seasoned salt and pepper.
- Add meat, spinach, cooked onion and crouton mixture. Mix well.
- Place mixture in bread pan and bake 1 hour and 15 minutes. Let stand 10 minutes before slicing.
- Remove from pan and slice.
- Serve topped with sauce.
- Sauce:.
- Rub saucepan with garlic. Discard clove.
- Melt 4 tablespoons butter over low heat.
- Add flour and stir until blended. Stir in beef broth.
- Stirring constantly, cook sauce until it comes to boil. Add salt, pepper and Worcestershire sauce.
- Remove from heat, stir.
- Melt remaining 2 tablespoons butter in medium skillet.
- Add bell pepper and cook over medium heat 5 minutes or until it begins to soften.
- Add to reserved brown sauce.
- Adjust seasonings as needed and heat through.

SPINACH LOAF

- Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Butter a 9-by-5-inch nonstick loaf pan. Line the bottom of the pan with parchment paper. Set aside.
- Place the eggs and milk in a large bowl. Add the bread and stir to combine.
- Heat the butter in a large, high-sided skillet over medium-high heat. Add the onion, 1 teaspoon of the salt and 1/2 teaspoon of the pepper and cook until soft, about 6 minutes. In batches, add the spinach and cook until wilted, about 15 minutes. Drain in a colander. Press gently on top of the spinach to release excess moisture. Set aside to cool slightly. Transfer the spinach mixture to a food processor and blend until smooth. Pour the spinach into the bowl with the bread mixture. Add 3/4 cup of the Parmesan, the remaining salt and pepper and the nutmeg. Stir until smooth.
- Spread half of the mixture on the bottom of the prepared pan. Lay the hard boiled eggs, end-to-end, in a line along the center of the spinach mixture. Add the remaining spinach mixture on top and press gently. Sprinkle the remaining Parmesan on top and bake for 1 hour. Cool 15 minutes, then run a thin metal spatula around the edges of the pan to release the loaf. Invert the loaf onto a cutting board, remove the parchment paper, and cut into slices.
SPINACH AND PINE NUTS WITH PENNE
Steps:
- Bring a large pot of water to a boil. Add penne and boil for 10 minutes or according to package directions. Meanwhile, in a heavy 12-inch skillet heat butter and olive oil until foamy. Add pine nuts and saute, stirring continuously until they turn golden. Add garlic and saute for a minute to release the aroma. Add spinach in two batches if you must and toss together just until wilted. Season with salt and pepper. Add a tablespoon or so of water to get spinach steaming. Drain pasta and serve in bowl. Toss with wilted spinach and garnish with port soaked currants.
SAUTEED SPINACH WITH TOASTED PINE NUTS
Sautéed spinach gets unexpected earthiness and crunch from toasted pine nuts.

- Heat 1 tablespoon oil and 1 garlic clove in a 12-inch straight-sided skillet over medium-high heat, until garlic is golden, about 3 minutes. Add a quarter of the spinach, and cook just until it wilts, about 2 minutes. Transfer to a colander; drain. Repeat with remaining oil, garlic, and spinach.
- Transfer spinach to a bowl. Season with salt and pepper. Squeeze lemon over spinach, and top with pine nuts.
SPINACH WITH PINE NUTS & GARLIC

- Wash the spinach thoroughly and cram into a large pan. Pour over a little boiling water, cover tightly and cook for 2-3 mins, until the leaves have wilted.
- Tip into a colander and drain well. Use the side of a small plate to press the spinach down to extract the last of the water. If using frozen, defrost in the microwave and drain.
- Meanwhile heat the oil, add the pine nuts and fry until golden. Add the garlic and fry briefly, then stir in the spinach and stir until heated through. Season and serve in a warm side dish.

SPINACH WITH ONIONS & PINE NUTS

- Heat the oil in a large, deep pan. Add the onions, cover, then gently fry for 15 mins until soft and almost transparent. Add the butter and pine nuts, turn up the heat, then fry for 5 mins more or until the onions are dark golden. Stir in the garlic, grate in a little nutmeg, then fry for 1 min. Splash in vinegar.
- Meanwhile, heat the largest pan you have until very hot. Throw in half the spinach, cover for 20 secs, then stir until just wilted. Tip into a colander set over a bowl, then repeat with the second bag of spinach.
- To serve, toss the cooked spinach into onion mix and season generously.
