MEATBALL & PASTA SOUP

- In a 6-qt. stockpot, bring stock, garlic and 3/4 teaspoon salt to a boil. Meanwhile, in a large bowl, mix egg, bread crumbs, milk, ketchup, Worcestershire sauce, onion powder, pepper and remaining salt. Add beef; mix lightly but thoroughly. Shape into 1-in. balls., Add carrots, pasta and meatballs to boiling stock. Reduce heat; simmer, uncovered, 10-12 minutes or until meatballs are cooked through and pasta is tender, stirring occasionally. Stir in spinach until wilted. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

SPINACH AND MEATBALL SOUP WITH OUTER SPACE PASTA
Passata, a simple tomato purée, gives the broth a subtle sweet tomato flavour without being too overwhelming for picky eaters. If you can't find it, purée one cup of no-salt-added diced tomatoes in a blender or food processor instead. Serve with a side salad for a balanced meal your kids will ask for again and again.

- 1. Heat oil in large saucepan over medium heat. Add leek, carrot, celery and zucchini. Cook while stirring occasionally until beginning to soften, about 5 minutes.
- 2. Add broth and passata; bring to a boil. Add pasta; stir occasionally until liquid returns to a boil. Reduce heat to a simmer; cook 5 minutes.
- 3. Stir in frozen meatballs; return to a simmer. Cook, stirring occasionally, until meatballs are heated through and pasta is tender but firm; about 7 to 9 minutes.
- 4. Stir in spinach, salt and pepper; cook until spinach is wilted, about one minute.
- Chef's tip: Substitute a quarter cup frozen chopped spinach for fresh spinach, if that's what you have on hand.

COMFORT SOUP (SPINACH & MEATBALLS)
This simple soup is a savory dish passed on to me by a childhood friend's mother. She raised 6 kids and knew how to please a hungry crowd (the boys are all over 6'5") on a tight budget in a hurry! Soup is comforting but I have found this one to be especially soothing to body and soul. UPDATE: the meat juices are what make the flavor of the broth, so if the beef is too lean (or not enough is used), there won't be an oily sheen to the soup, which is what gives it the wonderful taste.

Steps:
- Heat chicken broth to boiling.
- Meanwhile, combine beef, cheese and pepper.
- Knead lightly to mix but don't overdo it.
- Roll into 1 inch meatballs.
- Drop meatballs into boiling broth and reduce heat to simmering (medium low usually).
- Cook for 10 minutes.
- Add spinach and cook for 10 more minutes.
- Serve with french bread if you have it.

- Brown sausage in a large deep fry pan.
- Add onion & garlic; cook for a few minutes.
- Add grape tomatoes; cook for 3 minutes longer.
- Add chicken broth with butter; stir till melted.
- Add spinach (ripped in pieces if fresh); bring to boil.
- Stir in parmesan & then pasta; bring to boil, then turn off.
- Serve immediately adding addition additional Parmesan cheese to each individual bowl as desired.

My DIL found this recipe online and made it when I was there. It is relatively quick to make and so good. Note: In the directions it refers to the trinity mix; that is the carrot, celery, and onion listed in the ingredients; 2 part onion, one part carrot and one part celery

Steps:
- Chop garlic.
- Combine ground beef, bread crumbs, egg, tomato pesto, 1/4 teaspoon salt, and 1/4 teaspoon pepper until blended.
- Shape into 1-inch meatballs (about 25-30); wash hands.
- Preheat large stockpot on medium-high 2-3 minutes.
- Place oil in pan; add meatballs (in batches).
- Cook and turn 6 to 8 minutes or until browned.
- Remove meatballs from pan and set aside.
- Add trinity mix (onion, celery, carrots) and garlic to pan; cook and stir 2 to 3 minutes or until onions soften.
- Add spinach; cook 2 to 3 minutes or until spinach begins to wilt.
- Reduce heat to medium-low; stir in cannellini beans, chicken stock, meatballs and remaining 1/4 teaspoon each salt and pepper.
- Simmer 5 to 7 minutes or until meatballs are 160 degrees Fahrenheit and soup is hot.
- Top with Parmesan cheese and serve.
