Here's another delicious way to use fresh zucchini: Turn it into a spicy soup with mint, cilantro, and jalapeño. Serve it hot or cold!

4 tablespoons extra virgin olive oil
1 onion, finely chopped
1/2 jalapeño chile (or more to taste, depending on how spicy you would like the soup to be), seeds, stems and ribs removed and discarded, chopped
3 chopped garlic cloves
2 pounds chopped zucchini (skin on), about 5-6 cups
1 1/2 cups chopped day-old bread (or 1 cup rice or cooked or uncooked potatoes)
3 cups chicken broth (use vegetable broth for vegetarian or vegan option)
1 cup water
1/2 cup fresh mint leaves (spearmint), loosely packed, chopped
1/2 cup fresh cilantro, loosely packed, chopped (optional)
2 teaspoons lemon juice
Salt, to taste
Pepper, to taste
Lemon wedges (for garnish), optional

Steps:

  • Sauté the onions and jalapeño: Heat the olive oil in a large pot over medium-high heat. Add the onion and the chopped jalapeño, and sauté for 4 to 5 minutes until the onions are translucent, but not browned.
  • Cook the garlic and zucchini: Add the garlic and zucchini to the pan and sauté for another 3 to 4 minutes, stirring often. Sprinkle with salt.
  • Add the bread and liquids: Add the bread, broth, and water, and bring to a simmer. Reduce the heat to low and simmer gently for 20 minutes. (Note: If you're using uncooked potatoes instead, you may need to simmer a little longer, depending on what kind of potatoes you use.)
  • Purée the soup: Remove the soup from the heat. Add the mint and cilantro (if using). Purée in a blender or food processor until smooth, working in batches if necessary. (You can also use an immersion blender.)
  • Add lemon juice, salt, pepper: Return the soup to the pot. Add the lemon juice, along with salt and pepper to taste.
  • Garnish and serve: Garnish with lemon wedges and sprigs of mint or cilantro. Serve hot or chilled. Keeps for up to a week in the fridge.

Salsa, sour cream and pickled jalapeno pepper slices

  • In a large skillet, saute onion and red pepper in 1 teaspoon butter for 3 minutes. Stir in zucchini and taco seasoning; saute 3-4 minutes longer or until vegetables are tender. Remove from the heat., Spread remaining butter over one side of each tortilla. Place tortillas butter side down on a griddle. Sprinkle about 1/4 cup cheese and 1/4 cup zucchini mixture over half of each tortilla; fold over., Cook over low heat for 1-2 minutes on each side or until cheese is melted. 5 cups shredded zucchini
1 cup grated onion
4-1/2 teaspoons salt
1-1/2 teaspoons cornstarch
1-1/2 teaspoons ground mustard
1-1/2 teaspoons ground turmeric
1 teaspoon celery seed
3/4 teaspoon pepper
3/4 cup white vinegar
1/2 cup finely chopped sweet red pepper
4-1/2 teaspoons chopped seeded jalapeno pepper
1-1/4 teaspoons chopped seeded habanero pepper

Steps:

  • In a large resealable plastic bag, combine the zucchini, onion and salt. Seal bag and turn to coat: refrigerate for 8 hours or overnight. Rinse with water; drain. , In a large saucepan, combine the cornstarch, mustard, turmeric, celery seed and pepper. Gradually whisk in vinegar until blended. Stir in peppers and zucchini mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. Cool. Cover and refrigerate for at least 4 hours before serving.

This Spicy Asian Zucchini is a quick, 5 minute side dish that's perfect for using up summer zucchini. You'll love this quick sweet, spicy, and savory sauce.

1 large or two small zucchini, cut into long strips
Sesame oil
1/4 cup soy sauce (Tamari if gluten free)
2 Tablespoons sriracha sauce
1 teaspoon honey
2 Tablespoons sesame seeds
2 green onions, sliced
Salt
Pepper

Steps:

  • Heat 2 teaspoons of sesame oil in a large skillet over medium high heat. Add the zucchini (you may have to saute them in batches depending on the size of your skillet and how much zucchini you have). Sprinkle with salt and pepper and saute until browned and tender. Remove from heat. Repeat with remaining zucchini if needed.
  • Whisk together the soy sauce, sriracha, and honey. Pour the mixture over the sauteed zucchini (again, you may not need to use all the sauce depending on how much zucchini you have. Taste as you go). Toss to combine. To serve, sprinkle the zucchini with sesame seeds and green onions. This side dish is tasty warm or at room temperature.

This was so good last night, I don't want to forget what I did! This was a great side dish for cheese enchiladas. Adjust the seasonings according to your tastes and the age of your kids. I used the lower end for my 6yo (who ate it without protest) and 20mo (who was not so fond of it). If I were to cook this for just the adults at my house, I would use the upper end. I used really small zucchini for this, less than an inch in diameter and about 5-6 inches long.

1 tablespoon olive oil
1/4 onion, thinly sliced
4 small zucchini
1 -3 teaspoon garlic powder
1 -3 teaspoon chili powder
1 teaspoon salt

Steps:

  • Place oil in a large, heavy non-stick skillet and begin heating over medium high heat.
  • Meanwhile, slice onion and cut zucchini into 1/4" rounds.
  • Once oil is nice and hot, saute onion until it is starting to carmelize (about 2 minutes).
  • Add zucchini and seasonings. Turn heat down slightly (to medium), and cook for about 5 minutes, stirring occasionally.
  • Zucchini should be yellow with some brown spots, slightly transparent looking and soft without being mushy. Onions should be thoroughly carmelized and yummy. :).

2 tablespoons tomato paste
3 cups water
3 teaspoons beef bouillon (can substitute 3 cups beef broth in place of water and boullion)
2 stalks celery, chopped
1 (14 1/2 ounce) can black beans, drained and rinsed
1 medium onion, diced
1 (4 ounce) can chopped jalapenos
2 teaspoons italian seasoning
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder

Steps:

  • In a Dutch oven or soup kettle, cook and crumble sausage over medium heat until on longer pink; drain. Add onions and cook until soft.
  • Add rest of ingredients to kettle and bring to a boil. (If you are using a crock pot transfer meat and onion and add the rest of the ingredients to the crock pot. Let cook on low until vegetables are tender or approximately 1 to 1-1/2 hours Can leave it on all day if you need to, it just gets better with time!).

OUTSTANDING! My mother always knew how to season food and she was a great cook! The blend of the vegetables seasoned with chili powder makes this casserole go to the top of the scale!! You can go up or down with the amount of chili powder to suit your own spicy taste. You may like to change the spice to Italian seasoning and try that. I do it both ways.

2 -3 small zucchini
2 tablespoons butter
2/3 cup onion, minced
1/2 cup green pepper, diced
1 (14 ounce) can diced tomatoes, drained
1/4 teaspoon chili powder
1 cup sharp cheddar cheese, shredded
3 tablespoons butter, melted
1 1/4 cups cracker crumbs (Ritz)

Steps:

  • Cut zucchini into 1/2 inch strips. Boil in salted water until tender. Drain.
  • Melt butter and saute onion and green pepper in a sauce pan. Add tomatoes and chili powder. Cook for 5 minutes and add zucchini.
  • Blend melted butter with cracker crumbs. Layer 1/2 of zucchini mixture, 1/2 of cracker crumbs and 1/2 of cheese.
  • Add remaining zucchini mixture, 1/2 of cheese and 1/2 of cracker crumbs.
  • Bake 25 to 30 minutes in a 340 degree oven.
  • Note: Yellow squash may be substituted for zucchini.

  • Season the soup with salt and pepper to taste.
