1 cup vodka
1/2 teaspoon red pepper flakes
2 tablespoons olive oil
1 large garlic clove, minced
2 tablespoons fresh parsley, chopped
2 tablespoons fresh basil, chopped
salt and pepper
1 (28 ounce) can roma tomatoes, with juice
2 (8 ounce) cans tomato sauce
1 cup heavy cream

Steps:

  • In a small bowl, combine vodka and red pepper flakes. Set aside for 1 hour. (prep time does not include the standing time for vodka and pepper flakes).
  • Heat olive oil in a large skillet over medium heat. Saute garlic, for about a minute, until fragrant, and just starting to colour. Watch it doesn't get too brown.
  • Pour in vodka mixture, and simmer 10 minutes.
  • Add the parsley, basil, salt and pepper.
  • Crush tomatoes, and stir in with 2 cans of tomato sauce, and 1 (8 ounce) can water. Simmer 15 minutes. Stir in 1 cup heavy cream, and cook 2 minutes.

A nice change from your typical tomato sauce! If you're worried about the alcohol, don't be! It cooks off and cannot be tasted. It simply helps to enhance the flavors.

1 pound uncooked penne pasta
¼ cup extra virgin olive oil
4 cloves garlic, minced
½ teaspoon crushed red pepper flakes
1 (28 ounce) can crushed tomatoes
¾ teaspoon salt
2 tablespoons vodka
½ cup heavy whipping cream
¼ cup chopped fresh parsley
2 (3.5 ounce) links sweet Italian sausage

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In large skillet, heat oil over moderate heat. Remove casing from sausage and add to skillet. Cook, breaking up the meat, until brown. Add garlic and red pepper and cook, stirring until garlic is golden brown.
  • Add tomatoes and salt; bring to boil. Reduce heat and simmer 15 minutes.
  • Add vodka and cream and bring to boil. Reduce heat to low and add pasta, toss for 1 minute. Stir in fresh parsley and serve!

The flavors in this are just right. There's a hint of cayenne, but the heat is not at all overwhelming. It's a wonderfully flavorful sauce fit for a special meal.

1 medium onion, chopped
2 medium celery stalks, chopped
3 clove(s) garlic, minced
1/4 cup(s) olive oil, extra virgin
1/4 pound(s) prosciutto or cooked bacon (very finely chopped)
3/4 cup(s) vodka (of a quality you would drink)
28 ounce(s) canned, crushed tomatoes
1/4 teaspoon(s) oregano, dried flakes
2 tablespoon(s) parsley, freshly chopped
1 tablespoon(s) basil, dried (you can use fresh as well)
1/2 teaspoon(s) cayenne pepper
1 cup(s) half and half

Steps:

  • In a large skillet, heat oil over medium heat. Cook onion, celery, and garlic in oil; stir until soft. Add prosciutto (or cooked bacon) and vodka. Simmer until almost all liquid is gone.
  • Add tomatoes, cayenne, and herbs. Simmer for 10 minutes.
  • Stir in half and half, and heat for 3 minutes.
  • Meanwhile, cook pasta (of your choice--I used Penne) in boiling salted water until done. Drain. Serve sauce over noodles.
