SPICY BAKED MARINATED TOFU
Marinate tofu in a mix of rice vinegar, peanut butter, ketchup, garlic, and soy sauce, and discover that tofu really can be tasty! I've tried this recipe by first freezing and defrosting the tofu; it creates a nice texture.

SPICY TOFU MARINADE
This is inspired by a recipe by Andrea Chesman, who has some wonderful grilling ideas for tofu in her book "The Vegetarian Grill." It makes enough marinade or dipping sauce for a pound of tofu.

SPICY BAKED TOFU
This healthy, protein-packed tofu dish is filled with flavor. This is a spicy dish. I don't find it overly spicy but I like heat in my faux-meat! I served this with wilted garlic spinach and a fresh salad on the side. Remember that tofu is a concentrated protein, so you don't need as much tofu as you would meat. This dish is great reheated! If you want to be really creative, try grilling your tofu for an even more delicious result!

- Remove tofu from the marinade, shake to remove excess moisture, and arrange onto the prepared baking sheet. Discard the remaining marinade.

Steps:
- Press as much water as possible out of the tofu. Slice the tofu crosswise into 1/2" to 3/4" pieces or about 8 pieces.
- Combine all remaining ingredients in an 8 inch square baking dish and stir well.
- Place the tofu slices in the marinade. If the liquid does not completely cover the tofu, turn the pieces carefully at least once to make sure it is thoroughly coated.
- Refrigerate for 30 minutes to 1 hour.
- TO GRILL: Remove the tofu from the marinade and cook on a medium-hot grill, basting occasionally with the marinade. The tofu is done when it is golden brown, about 6-8 minutes per side. Rotate the tofu 45 degrees every 3 minutes to create crosshatch grill marks.
- TO BROIL: Remove the tofu from the marinade and place in a lightly oiled dish. Broil until the top is golden, about 5 to 7 minutes per side.

Steps:
- Remove the tofu from the package and drain any excess liquid. Place the tofu on 3-4 paper towels. Then add another 3-4 paper towels on top. You can also wrap the tofu in a clean dish towel for this process.
- Place a clean heavy frying pan or pot on top of the tofu for 30 minutes. This will "press the tofu" and squeeze out any excess moisture. If your pan isn't too heavy you can add canned beans on top to create more weight.Replace the paper towels halfway through if they become too wet.
- Once tofu is pressed, use a knife to cut it into 1-inch cubes. Place in a ziploc bag or glass container.
- In a bowl or jar, combine the marinade ingredients and mix together.
- Pour the marinade into a bag with chopped tofu. Place in the fridge for a minimum of 30 minutes or longer.Note: These marinades create the best flavor when tofu can be soaked for at least 2-4 hours - I prefer to marinate overnight.
- Heat a frying pan with a bit of cooking oil over medium-high heat. Pan should be hot before adding in the tofu and sauce. Cook until the tofu is browned on each side, about 8-10 minutes. The sauce will reduce during this time and the tofu will get crispy.
- Lightly coat the inside of the air fryer tray or basket with avocado oil spray or other cooking spray. Add the chopped tofu to the tray. Cook at 400°F for 16-20 minutes, tossing them halfway through. Tofu will be done when brown and crispy on the sides.
- Preheat oven to 400°F. Line a baking sheet with parchment paper. Place tofu in a single layer on the baking sheet. Bake for 16-20 minutes or until tofu is crispy on the edges. Toss and flip the tofu with a spatula halfway through.
- Store leftovers in the fridge in an airtight glass container. You can reheat the tofu leftovers in the frying pan or microwave.

HOT AND SPICY TOFU
Firm tofu, bell pepper, and red onion, all quickly stir fried in a sweet and sour sauce. A word of caution - this is VERY spicy! If you like milder dishes, decrease the amount of pepper flakes or omit them altogether.
