"I came up with this recipe after trying a similar appetizer pizza at a restaurant," says Cheryl Taylor of Ortonville, Michigan. "It's a great way to use up leftover grilled or baked chicken. And it's a breeze to vary based on everyone's tastes."

1 prebaked 12-inch pizza crust
1 tablespoon olive oil
4 ounces ready-to-serve roasted chicken breast strips
2 to 3 large fresh mushrooms, thinly sliced
1/4 cup plus 2 tablespoons Thai peanut sauce, divided
2 cups shredded part-skim mozzarella cheese, divided
1/4 cup thinly sliced red onion
1/2 cup fresh snow peas, halved
1/4 cup chopped sweet red pepper
1/4 cup julienned carrot
2 green onions, sliced
1/2 cup salted peanuts

Steps:

  • Place crust on an ungreased 12-in. pizza pan; brush with oil. In a small bowl, combine the chicken, mushrooms and 1/4 cup peanut sauce; spread over crust. Sprinkle with 1 cup cheese. , Layer with the red onion, snow peas, red pepper and carrot. Sprinkle with remaining cheese. Top with green onions and peanuts. Drizzle with remaining peanut sauce. , Bake at 450° for 10-12 minutes or until cheese is melted.

1 thin pizza crust (Boboli or other pre-baked crust)
2 garlic cloves, minced
1 teaspoon gingerroot, minced
5 tablespoons peanut butter
2 tablespoons honey
2 tablespoons rice wine vinegar or 2 tablespoons apple cider vinegar
1 tablespoon soy sauce
1 teaspoon red pepper flakes
1 cup mozzarella cheese, shredded
1/2 orange bell peppers or 1/2 red bell pepper, sliced
1 cup pre cooked chicken breast, chopped
2 green onions, chopped
1/2 carrot, finely chopped
1 cup bean sprouts, roughly chopped
1/4 cup peanuts, chopped
1/2 cup cilantro, chopped

Steps:

  • Preheat oven to 425°F; do not bake the Boboli yet.
  • In a microwave safe bowl, add garlic, gingerroot, peanut butter, honey, vinegar, soy sauce and pepper flakes. Microwave until peanut butter is melted (about 1 minute). Mix well with a whisk.
  • Take pre-baked pizza crust out of the package and top with peanut sauce, cheese, bell pepper and cooked chicken. Bake for 5 minutes or until cheese is melted.
  • Meanwhile, prepare other vegetables.
  • Remove crust from oven and top with remaining vegetables, peanuts and cilantro.
  • Cut and serve immediately while the crust is still hot! Enjoy!

I love making a double batch of this sauce and keeping it in the door of the fridge for a day when I need something tasty in a pinch. Don't like spice? Simply omit the hot sauce and the red pepper flakes. You can also sub thinly sliced lean beef for the chicken or just make it a stir-fry with all vegetables...

1/2 cup smooth peanut butter
1/4 cup low-sodium soy sauce
1/4 cup apple cider vinegar
1 tablespoon honey
1 tablespoon hot sauce
1 tablespoon sesame oil
1 knob ginger, grated (to equal about 1 tablespoon)
5 large cloves garlic, grated
1 pound boneless, skinless chicken breasts, cut into 1/4-inch-thick strips
Kosher salt
1/4 teaspoon red pepper flakes
3 tablespoons canola oil
12 to 15 small red radishes, quartered, plus 1 loose cup radish greens, coarsely chopped
1 large red bell pepper, cored, seeded and cut into 1/2-inch-thick strips
1 cup frozen peas
Zest and juice from 1 small lime

Steps:

  • In a large bowl, whisk the peanut butter with the soy sauce, vinegar, honey, hot sauce, sesame oil, ginger, two-thirds of the garlic and 2 tablespoons warm water until smooth. (If the sauce is too thick, thin with a little more warm water.) Set aside.
  • Arrange the pieces of chicken on a baking sheet in a single layer. Sprinkle on one side with salt and the red pepper flakes. Turn the pieces on their other side and sprinkle again with salt.
  • Heat a large heavy-bottomed skillet over high heat. Add half of the oil and heat until it begins to smoke. Remove the skillet from the heat and quickly add half of the chicken pieces in a single layer. Return the pan to high heat and cook, stirring from time to time, until the chicken is fully cooked, 3 to 5 minutes. Drain and repeat with the remaining oil and chicken.
  • In the same skillet, stir in the remaining garlic, radishes, radish greens and peppers and season with salt. Mix so the radish greens wilt. Stir in the peanut sauce and simmer for an additional minute. Taste for seasoning. Stir in the peas and the chicken. Turn off the heat and let rest a couple of minutes on the stove. Top with a few grates of lime zest and the juice.

2 tablespoons chopped fresh cilantro
1/2 cup peanut butter
1/2 cup hoisin sauce
1 tablespoon honey
2 teaspoons red wine vinegar
2 teaspoons minced ginger
2 tablespoons roasted sesame oil
1 teaspoon Vietnamese chili sauce (or dried chili flakes)
1 tablespoon oyster sauce
2 tablespoons water
1 tablespoon olive oil
10 ounces boneless/skinless chicken breast, cut into 3/4-inch cubes
1 store-bought pizza dough
cornmeal, semolina or flour for handling
2 cups shredded mozzarella cheese
4 scallions, slivered diagonally oriental style
1/2 cup white bean sprouts
1/4 cup shredded carrot
2 tablespoons chopped, roasted peanuts

Steps:

  • To make Spicy Peanut Sauce: Combine sauce ingredients in a small pan over medium heat. Bring the sauce to a boil. Boil gently for one minute. Divide into 2 portions for use on chicken and pizza. Set aside.
  • To make Thai Chicken: Cook the chicken in olive oil over medium-high heat, stirring, until just cooked, 5 to 6 minutes. Do not overcook. Set aside in the refrigerator until chilled through. Once chilled, coat the chicken with 1/4 cup Spicy Peanut Sauce. Set aside in the refrigerator.
  • To make the pizza: Place the pizza stone in the center of the oven and preheat to 500 degrees for 1 hour before cooking the pizzas. Use a large spoon to spread 1/4 cup spicy peanut sauce evenly over the surface of the prepared dough within the rim. Cover the sauce with 3/4 cup shredded mozzarella. Distribute half the chicken pieces evenly over the cheese followed by half the green onions, bean sprouts, and carrots, respectively. Sprinkle an additional 1/4 cup mozzarella over the other toppings and top the pizza with 1 tablespoon chopped roasted peanuts. Transfer the pizza to the oven. Bake until the crust is crisp and golden and the cheese at the center is bubbly, 9 to 10 minutes. When cooked through, carefully remove the pizza from the oven. Sprinkle 1 tablespoon chopped fresh cilantro over the hot, cheesy surface. Slice and serve. Repeat with remaining ingredients for a second pizza. (The 2 pizzas may be prepared simultaneously if you are careful in placing the pizzas at opposite corners of your pizza stone.)

4 cups water
3 tablespoons soy sauce
2 tablespoons creamy peanut butter
2 teaspoons white wine vinegar

4 skinless, boneless chicken breast halves - cut into thin strips
3 tablespoons chopped garlic
1 ½ tablespoons chopped fresh ginger root
¾ cup chopped green onions
2 ½ cups broccoli florets
⅓ cup unsalted dry-roasted peanuts

Steps:

  • Combine the rice and water in a saucepan over medium-high heat. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender. In a small bowl, stir together the soy sauce, peanut butter, vinegar, and cayenne pepper. Set aside.
  • Heat oil in a skillet or wok over high heat. Add chicken, garlic and ginger, and cook, stirring constantly, until chicken is golden on the outside, about 5 minutes.
  • Reduce heat to medium, and add green onion, broccoli, peanuts, and the peanut butter mixture. Cook, stirring frequently, for 5 minutes, or until broccoli is tender, and chicken is cooked through. Serve over rice.

3 pounds boneless skinless chicken thighs
3/4 cup sugar
3/4 cup reduced-sodium soy sauce
1/3 cup cider vinegar
1 garlic clove, minced
3/4 teaspoon ground ginger
1/4 teaspoon pepper
1 cup Thai peanut sauce
2 prebaked 12-inch pizza crusts
2 cups coleslaw mix
2 cups shredded part-skim mozzarella cheese
4 green onions, thinly sliced
1/2 cup chopped salted peanuts
1/4 cup minced fresh cilantro

Steps:

  • Place chicken in a 4- or 5-qt. slow cooker. In a small bowl, mix sugar, soy sauce, vinegar, garlic, ginger and pepper; pour over chicken. Cook, covered, on low 4-5 hours or until chicken is tender., Preheat oven to 450°. Remove chicken from slow cooker; discard cooking juices. Shred chicken with 2 forks; transfer to large bowl. Add peanut sauce; toss to coat., Place crusts on 2 ungreased 12-in. pizza pans or baking sheets. Spoon chicken mixture over crusts; top with coleslaw mix and cheese.
